INSTANT POT® MULLED APPLE CIDER
On a cool evening, when you want to wrap your hands around a warm cup, or if you want to soothe a scratchy, dry throat, try this comforting cider. Brightened with lemon zest and sweetened with honey, it's ready in a flash, when you use your Instant Pot®. Makes about 8 1/2 cup servings.

- Combine apple cider, cinnamon sticks, lemon zest, cloves, nutmeg, and allspice in the inner pot of a multi-functional pressure cooker (such as Instant Pot®). Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 1 minute. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions, about 15 minutes. Unlock and remove the lid.
- Ladle mulled cider into cups and sweeten with honey. Garnish with lemon slices and additional cinnamon sticks.

- Place the cinnamon stick, cloves, allspice and bay leaf on a double thickness of cheesecloth; bring up corners of cloth and tie with kitchen string to form a bag. , In a large saucepan, combine the apple cider, juices, orange zest, brown sugar, salt and spice bag. Bring to a boil. Reduce heat to medium-low and simmer mixture for 30 minutes to blend flavors. Discard spice bag. Strain cider mixture and stir in brandy if desired. Serve immediately.

Steps:
- Tie small spices in a small cheesecloth and drop into the cider; allow cinnamon to just go on its own.
- Heat mixture on the stove and simmer for at least 30 minutes before serving, stirring occasionally to agitate the spices.
- Float orange slices on top of the cider.
- Pour into mugs and serve, with a cinnamon stick, if desired.
- Makes 1 gallon.

EASY MICROWAVE MULLED "APPLE CIDER"
Adapted from a stovetop recipe in an old Pleasant Company (Yes, as in American Girl) cookbook called "Great Girl Food". Simple to make, and good for when you want a quick, warming drink! I should note that the sugar HAS to be brown. The molasses in brown sugar adds an extra needed touch of spice. The spice mixture will also leave a bit of grit behind in the mug if you don't stir it around every once in a while as you're drinking it. I wish I could come up with a way to fix that, but so far I haven't thought of one yet.

- Combine all ingredients in a microwave safe mug.
- Place mug in microwave and cook on HIGH for 1-2 minutes, depending on the wattage of your microwave. You may have to wait for a minute or so before you drink it, because it will be hot.
- Enjoy your "cider"! TIP: this tastes even better with a little caramel sauce stirred into it!
