Easy Mediterranean Orzo Salad image

This salad is an incorporation of a variety of Mediterranean ingredients with a light lemon sauce to bind it all together. Feel free to substitute ingredients for a more customized salad. Due to many ingredients I've listed having a naturally salty flavor, I've refrained from the addition of salt.

½ cup uncooked orzo pasta
1 ½ teaspoons lemon-infused olive oil
¼ cup sliced black olives
¼ cup marinated artichoke hearts, drained and chopped
¼ cup canned chickpeas
¼ cup roasted red peppers, drained and chopped
2 tablespoons toasted pine nuts
2 tablespoons ricotta salata cheese, crumbled or shaved

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook orzo in the boiling water, stirring occasionally until tender yet firm to the bite, about 11 minutes. Drain well.
  • Toss orzo with lemon-infused olive oil. Add olives, artichoke hearts, chickpeas, roasted red peppers, pine nuts, and ricotta salata. Toss to combine. Refrigerate to chill and allow flavors to build.

This is great for any picnic, potluck or barbecue. You can make the dressing up to 3 days before and put the salad together the day before you intend to serve it. Add chicken, steak, lamb or seafood for a whole meal salad! Prep time includes minimum refrigeration

1 lb shell pasta, cooked al dente, drained well, and tossed with 2 tbs olive oil
1/2 cup red onion, chopped
1 cup cucumber, chopped
1 medium yellow bell pepper, seeded and chopped
1 medium red bell pepper, seeded and chopped
1/2 cup celery, chopped
1 cup pitted kalamata olive, chopped
1 (4 ounce) jar marinated artichoke hearts, drained and cut into quarters
1/2 cup vegetable oil
1/2 cup olive oil
1/3 cup red wine vinegar
1 (1 1/2 ounce) envelope tomato basil soup mix
1 teaspoon fresh ground black pepper
2 tablespoons fresh basil, chopped
2 tablespoons fresh Italian parsley, chopped
1 cup crumbled feta cheese

Steps:

  • In a large serving bowl, toss together the pasta, onion, cucumber, bell peppers, celery, olives, and artichoke hearts.
  • Refrigerate the salad up to 24 hours In a medium glass mixing bowl, whisk together the oils, vinegar, soup mix, black pepper, basil, parsley, and feta until well blended.
  • Pour 1 cup of the dressing over the salad and toss Refrigerate the salad for at least 6 hours.
  • When ready to serve, toss the salad with the remaining dressing.

2 (5 oz) bags of Spring Mix Salad Blend (or greens of choice)
1 lb. pre-cooked and shelled shrimp
1/4 lb. Feta cheese or goat cheese, crumbled
1/8 cup fresh cilantro, chopped
2 tablespoons capers (optional)
balsamic vinagrette, purchased
salt & pepper to taste
1 lemon cut into wedges

Steps:

  • Place all ingredients except vinagrette into serving bowl. Place a wedge of lemon at side of four individual bowls or plates. Toss salad in large bowl and pass along with dressing to each guest. Season with salt and pepper to taste.
