SPANISH RICE WITH GROUND BEEF



Spanish Rice with Ground Beef image

This easy one-pot Spanish Rice with Ground Beef is an excellent side dish choice or add your favorite toppings for an economical, family-friendly meal.

½ pound lean ground beef
¾ cup diced green bell pepper (from one bell pepper)
¾ cup diced white or yellow onion
1 teaspoon minced garlic
1 cup uncooked long grain white rice
10 ounces Rotel Diced Tomatoes and Green Chilies (Original or Hot)
8 ounces tomato sauce
1 tablespoon Homemade Taco Seasoning Mix
2 cups low sodium beef broth
½ cup frozen corn (don't thaw)
chopped cilantro (optional)
shredded cheese, chopped tomatoes, chopped avocados, sliced green onions, sour cream, salsa

Steps:

  • Place a deep 12-inch skillet over MEDIUM-HIGH heat. Add ground beef and cook, stirring to break it up, until browned and crumbly, about 5 minutes. Drain or blot excess grease if necessary. Add the bell pepper, onion, and garlic. Cook, stirring occasionally for 3 to 4 minutes, until the onion and bell pepper have softened slightly. Add the uncooked rice, Rotel tomatoes, tomato sauce, and taco seasoning mix and stir to combine well. Stir in the broth and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 25 minutes.
  • Remove the cover and stir the mixture well. Stir in the frozen corn, cover the skillet and continue to cook for another 5 minutes until the liquid has been absorbed and the rice is tender.
  • Stir well and garnish with cilantro, if desired. Serve with any Mexican entrée, rolled in tortillas, or just add toppings and make it a meal!

Cook a pot of rice using chicken broth, tomato sauce, and a few seasonings to make this quick and easy Spanish Rice. It's the perfect base for rice bowls or a delicious side dish to your favorite Mexican entrees!

1 tablespoon extra-virgin olive oil
1 tablespoon butter
1 cup white rice
1 cup (APPROXIMATELY) chicken broth or stock (see NOTES below)
1 cup (APPROXIMATELY) tomato sauce or puree (see NOTES below)
1 1/2 teaspoons chili powder
1 teaspoon cumin
1/2 teaspoon garlic salt
1/2 teaspoon dried oregano
1/4 cup diced fresh tomatoes (seeded & drained (optional))

Steps:

  • In a medium saucepan set over medium heat, melt together olive oil and butter. Add rice and stir to coat with oil/butter. Cook, stirring frequently, for about 2 to 3 minutes, until rice is toasted.
  • Stir in chicken broth, tomato sauce, chili powder, cumin, garlic salt, oregano, and diced tomatoes (if using). Increase heat to high and bring to a boil, stirring occasionally. Stir well, reduce heat to low, place lid on pot, and cook at a gentle simmer for 20 minutes (or whatever amount of time is directed on your bag of rice; see NOTES below). If rice is not quite tender or liquid is not absorbed after 20 minutes, replace lid and cook for 2 to 4 minutes longer. Remove from heat, leave covered, and allow to rest for a few minutes. Fluff rice with a fork and serve.

My family loves a variety of ethnic foods, but this is one of their favorites. My niece, who is of Spanish descent, lives with us and has tweaked my old Spanish rice recipe to make it just like her grandma's. My mother-in-law has also added this recipe to her school meals menu (minus the jalapeno), and it is a hit with the students and faculty.

6 tablespoons butter
2 onions, chopped
2 jalapeno peppers, chopped
2 (14.5 ounce) cans Mexican-style diced tomatoes, undrained
1 cup uncooked white rice
salt and ground black pepper to taste
½ cup sour cream, or as desired
½ cup shredded Cheddar cheese, or as desired

Steps:

  • Melt butter in a large skillet over medium-high heat; cook and stir onions and jalapeno peppers in the butter until softened, 3 to 5 minutes. Stir Mexican-style tomatoes into onion mixture; add rice, salt, and black pepper. Bring rice mixture to a boil, reduce heat, cover, and simmer until rice is cooked, 40 to 45 minutes. Garnish with sour cream and Cheddar cheese to serve.

2 tablespoons olive oil
1 ½ cups long-grain rice
3 cups water
2 roma (plum) tomatoes, chopped
1 cup chopped onion
¾ cup chopped fresh cilantro, or more to taste
1 tablespoon tomato bouillon with chicken flavoring (such as Knorr®), or more to taste

Steps:

  • Place a pot over medium-heat heat; add oil and heat until oil shimmers slightly. Pour rice into the hot oil, stirring constantly, until rice is golden to dark brown, about 5 minutes.
  • Mix water, tomatoes, onion, cilantro, and bouillon into rice. Bring to a boil. Turn off heat and cover pot tightly with a lid. Leave pot covered on hot burner until rice has absorbed all the liquid, about 20 minutes. Adjust seasonings as needed.
