1 tablespoon vegetable oil
1 cup chopped yellow onions
1 teaspoon minced garlic
2 teaspoons curry powder
1/2 teaspoon salt
Pinch cayenne
2 pounds zucchini, trimmed and chopped
3 1/2 cups vegetable stock
1/2 cup heavy cream
Chopped cilantro, garnish
Fried pappadums, or toasted pita triangles, accompaniment

Steps:

  • In a medium pot, heat the oil over medium-high heat. Add the onions and garlic and cook, stirring, until soft, about 3 minutes. Add the curry powder, salt, and cayenne, stir, and cook until fragrant, about 30 seconds. Add the zucchini, reduce to medium heat, and cook, stirring occasionally, until soft, 5 to 6 minutes. Add the stock and bring to a boil. Reduce the heat and simmer until the zucchini is very tender, about 20 minutes.
  • Remove from the heat. With a hand-held immersion blender, or in batches in a food processor, puree the soup. Return to medium heat and stir in the cream. Simmer for 3 minutes. Adjust the seasoning, to taste.
  • Pour into a clean container and let cool slightly. Refrigerate until well chilled, 4 to 6 hours.
  • To serve, ladle into large cups, garnish with cilantro, and serve with hot pappadums or pita toast. This soup may be served hot or cold.

2 teaspoons olive oil
1 medium onion, chopped
Coarse salt
2 garlic cloves, minced
2 teaspoons curry powder
1 1/2 pounds zucchini (about 3 medium), sliced 1 inch thick
1 baking potato, peeled and cut into 1-inch chunks
2 tablespoons sliced almonds, toasted, for garnish (optional)

Steps:

  • Heat oil in a large saucepan or soup pot over medium heat. Add onion and 1 tablespoon salt; cook, stirring occasionally, until the onion is soft, 4 to 5 minutes.
  • Add the garlic and curry powder and continue to cook, stirring constantly, until fragrant, about 1 minute.
  • Add zucchini, potato, and 4 cups water to the pot. Bring to a boil and then reduce the heat, and simmer until the vegetables are tender, 10 to 15 minutes.
  • In batches, puree soup in a blender (do not fill more than halfway) until smooth.
  • Taste and add more salt if needed; serve immediately, or let cool, and refrigerate in an airtight container until chilled.
  • Garnish with toasted almonds.

I found this recipe years ago in a kitchen gadget catalog. It sounded good, with simple instructions, requiring only a handful of ingredients, and easy to clean up after. As per a review, I added a potato to the soup, it was an improvement, more creamy.

1 large onion, peeled, halved lengthwise and cut into thin half moons
2 tablespoons extra virgin olive oil
1 tablespoon curry powder, to taste
fine sea salt, to taste
1 potato, peeled, chopped (optional)
4 small zucchini, trim ends, half lengthwise, cut crosswise into 1 inch pieces (12 oz total)
4 cups chicken stock (vegetarian, substitute with vegetable stock)
sour cream (optional)

Steps:

  • In 6-qt saucepan, combine first 4 ingredients and cook, stirring over medium heat to soften onion (4 min).
  • Add potato, if using, and cook to soften (about 2 minutes).
  • Add zucchini and cook until soft (4 min).
  • Add stock and stir to blend.
  • Bring to a boil over medium heat, then cover and simmer on low heat for 20 minutes.
  • Remove saucepan from heat and puree with a stick blender until vegetables are undistinguishable.
  • Season to taste.
  • Serve with a dollop of sour cream.

Last week I got my monthly Swedish cookery magazine. When I saw this soup among the recipes I had to try it. Although it says creamy, there is no actual cream involved, it's completely non-dairy.

2 onions, chopped
1 leek, cut thinly
2 teaspoons curry powder
1 tablespoon olive oil
5 potatoes, peeled and cut in chunks
2 zucchini, cut in chunks (total weight about 1 lb)
4 cups vegetable broth
1 teaspoon salt, to taste

Steps:

  • Fry onions, leak and curry in the oil, about 3 minutes.
  • In another pan, cook potatoes and zucchini in 2 cups of the vegetable broth for 15-20 minutes.
  • Add onionmix and cook another 5 minutes.
  • Puree the soup either by hand or in a blender.
  • Add the rest of the vegetable broth (2 cups) and heat the soup to boiling point.
  • Add salt to taste.

This is a lovely, spicy soup, which is sure to warm you through on a chilly day. I luv its hot flavour, which does not overpower the zucchini. My sis and me came up with this recipe when I could only eat soup due to having my wisdom teeth pulled. I hope youll enjoy it as much as we did! Feel free to sub any other squash for the zucchini and adjust the spices to your liking.

2 -3 tablespoons olive oil (I used a garlic infused one)
2 garlic cloves, crushed
6 teaspoons curry powder
3 -4 medium zucchini, diced
2 medium potatoes, diced
4 scallions, white and green parts, chopped
1 liter vegetable broth, warm
1 teaspoon chili powder
salt and pepper, to taste

Steps:

  • Heat the oil in a big cast-iron pot.
  • Add curry powder and garlic. Saute until fragrant, but not too brown.
  • Add vegetables and sautee for 2 minutes.
  • Add broth (veggies should be just covered) and let simmer with lid on until veggies are tender (15-20 minutes).
  • Season with chili powder and salt and pepper.
  • Using a hand-held blender puree to your liking adding more broth if you find it too thick.
  • Serve with a nice crusty loaf of bread or any other item of your choice. ;).

From Moosewood Restaurant Daily Special (1999). One of my favorite soups for any time of year but would be a great way to use up too much zucchini during the summer. I use a good curry powder from Penzey's and sometimes replace up to 1/2 teaspoon with a hot curry blend for more heat. I also sometimes replace half the potatoes with sweet potatoes. Could use chicken stock for a non-veggie option. Serve hot or chilled.

2 cups diced onions
1 tablespoon canola oil
3 garlic cloves, minced
1 teaspoon fresh ginger, minced
2 teaspoons curry powder
2 1/2 cups water (or stock)
2 cups potatoes, peeled and cubed
5 cups zucchini, cubed
1 -1 1/2 teaspoon salt (less if using stock)
2 tablespoons fresh cilantro, chopped
1 cup milk
3/4 cup plain yogurt
1 tablespoon cider vinegar
plain yogurt
scallions or chives, minced

Steps:

  • In a covered soup pot on medium heat, saute onions in oil until translucent, about 10 minutes.
  • Add garlic, ginger and curry powder. Saute for 1 minute, stirring constantly to avoid burning the garlic and spice.
  • Add water or stock, potatoes, zucchini and salt. It will look like not enough liquid, don't worry. Bring to a boil, reduce to a simmer and cover. Simmer covered for 10 minutes.
  • Add cilantro. Simmer until vegetables are very tender, 5-10 minutes more.
  • Remove from heat. Stir in milk, yogurt and vinegar.
  • Puree until very smooth using an immersion blender, regular blender (in batches) or food processor (in batches).
  • Reheat gently or refrigerate for 30 minutes for a chilled soup.
  • Garnish with a dollop of yogurt and sprinkled fresh herbs.

  • Heat the oil in a large pot. Stir in the onion, and season with curry powder and salt. Cook and stir until onion is tender. Stir in zucchini, and cook until tender. Pour in the chicken stock. Bring to a boil. Cover, reduce heat to low, and simmer 20 minutes.
  • Remove soup from heat. Use a hand blender, or transfer in batches to a blender, and blend until almost smooth.

An incredibly simple summertime soup for all that extra zucchini from the garden. This soup is delicately spicy, full of flavor, yet low in fat and calories. Butter or oil can be omitted if using a non-stick pan. This is also a great soup to use for canning or freezing so you can enjoy the tastes of summer during the winter months!

1 ½ pounds zucchini, sliced
1 tablespoon butter
1 large onion, finely chopped
1 (1 inch) piece fresh ginger, grated
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon mustard seeds
½ teaspoon ground cinnamon
½ teaspoon ground turmeric
¼ teaspoon ground cardamom
¼ teaspoon cayenne pepper
sea salt to taste
freshly ground black pepper to taste
1 cup vegetable stock
¼ cup chopped fresh cilantro
4 cinnamon sticks

Steps:

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add zucchini, cover, and steam until slightly tender, 5 to 6 minutes.
  • Heat butter in a saucepan over medium heat; cook and stir onion in the melted butter until tender and translucent, 5 to 10 minutes.
  • Mix grated ginger, cumin, coriander, mustard seeds, ground cinnamon, turmeric, cardamom, cayenne pepper, sea salt, and black pepper in a small bowl. Mix spice mixture into onions until coated.
  • Mix zucchini into onion mixture; cook and stir until heated through, 2 to 3 minutes. Pour vegetable stock over zucchini mixture; stir well. Simmer until vegetables are tender, 8 to 10 minutes.
  • Pour zucchini mixture into a blender no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend. Puree in batches until smooth.
  • Pour soup into 4 serving bowls; garnish each bowl with 1 tablespoon cilantro and 1 cinnamon stick.
