Light, sweet, tangy, and easy-to-make is how to describe this Lemonade Pie. It's the perfect summer dessert!

3 (8-ounce) containers frozen whipped topping, thawed ((like Cool Whip))
2 (14-ounce) cans sweetened condensed milk
1 (12-ounce) can frozen lemonade concentrate
2 (6-ounce) prepared graham crackers crusts

Steps:

  • In a very large bowl, stir sweetened condensed milk into thawed whipped topping. (Do this by hand, DO NOT use a mixer - an electric mixer can cause the whipped topping to fall which will result in a dense or even runny pie.)
  • Next, fold in lemonade concentrate.
  • Divide the filling between the two pie crusts and chill for at least 3 hours, but preferably overnight. (Trust me, it's going to be A LOT of pie filling, but keep piling it on there. If it's impossible to fit it all in there, just be excited that you've made yourself a little snack with what's leftover!)

1 graham cracker crust (I buy this all ready made)

Steps:

  • Use mixer and mix the first three ingredients until fluffy.
  • Pour into ready made crust.
  • Refrigerate until firm. I let it set overnight.
  • This can also be made with limeade and/or chocolate cookie crusts.

1/3 cup country time lemonade mix or 1/3 cup country time lem'n berry sippers powdered drink mix, any flavor
1/2 cup water
1 pint vanilla ice cream, softened
1 (8 ounce) container Cool Whip Topping, thawed
1 (6 ounce) honey maid graham cracker pie crust

Steps:

  • Stir drink mix and water in large bowl until dissolved.
  • Add ice cream.
  • Beat with electric mixer on low speed until well blended.
  • Gently stir in whipped topping until smooth.
  • Freeze, if necessary, until mixture will mound.
  • Spoon into crust.
  • Freeze 4 hours or overnight until firm.
  • Let stand at room temperature 15 minutes or until pie can be cut easily.
  • Garnish with lemon slices.
  • Store leftover pie in freezer.

1 pint vanilla ice cream, softened
1 (8 ounce) container Cool Whip Topping, thawed
1 (9 inch) prepared graham cracker crumb crust

  • Beat lemonade concentrate in large bowl with electric mixer on low speed about 30 seconds.
  • Spoon in ice cream, beat until well blended.
  • Gently stir in whipped topping till smooth.
  • Freeze, if necessary, until mixture will mound. spoon into crust.
  • Freeze 4 hours or overnight,
  • Let stand at room temperature.15 minutes or until pie can be cut easily.

Wouldn't it be delicious to have a lemonade pie tucked in your freezer, ready and waiting for a rewarding treat?!

1 1/2 cups finely crushed graham crackers (20 squares)
1/3 cup margarine or butter, melted
3 tablespoons sugar
1 quart (4 cups) vanilla ice cream, softened
1 can (6 ounces) frozen lemonade concentrate, thawed
Few drops yellow food color, if desired
Grated lemon or lime peel, if desired

Steps:

  • Heat oven to 375°F. In medium bowl, mix all Graham Cracker Crust ingredients. Press mixture firmly against bottom and side of pie plate, 9x1 1/4 inches. Bake about 10 minutes or until light brown. Cool 30 minutes.
  • In large bowl, mix ice cream, lemonade concentrate and food color. Mound ice-cream mixture in crust.
  • Freeze about 4 hours or until firm. Let stand at room temperature a few minutes before cutting. Garnish with grated lemon peel. Store covered in freezer.
