Number Of Ingredients 11

1 cup plus 2 tablespoons all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
3 large eggs, lightly beaten
1-1/2 cups ricotta cheese
1/2 cup milk
1/2 cup canola oil
3 tablespoons lemon juice
2 teaspoons grated lemon zest
Confectioners' sugar and maple syrup

Steps:

  • In a small bowl, combine the flour, baking powder, salt and nutmeg. In another bowl, combine the eggs, ricotta cheese, milk, oil, lemon juice and peel. Stir into the dry ingredients just until combined., Pour batter by 1/4 cupful onto a hot griddle; turn when bubbles form on top. Cook until the second side is golden brown. Sprinkle with confectioners' sugar; serve with syrup.

These truly came out soo light and fluffy...melt in your mouth, you can top with fruit if desired.

2 c flour
2 eggs
1 1/2 c milk
2 lemons
1 c ricotta cheese
1 pinch salt
1 tsp baking soda

Steps:

  • 1. Zest and juice the 2 lemons....add to a bowl along with the flour, eggs, ricotta cheese, baking soda and salt/
  • 2. whisk in milk, until combined well and the consistency of a smooth batter.
  • 3. let sit for a few minutes, while you heat up a non-stick pan, add a touch of butter and pour about a half cup of batter...cook about a minute, until bubbles start to form, then turn over with spatula and cook another minute or 2.
