- 1. Blend Pineapple chunks until juicy with pulp.
- 2. Place Pineapple juice (with pulp), sweetened condensed milk,frozen limeade concentrate, and heavy whipping cream in to a bowl of an electric mixer. Make sure you have the whisk attachment connected.
- 3. Mix until contents are mixed and fluffy.
- 4. Pour filling into the graham cracker crust. Smooth out the top.
- 5. Refrigerate at LEAST 4 hours. I generally keep it in the refrigerator over night.

- Place the graham crackers in a Ziploc bag, and with a rolling pin or sturdy glass, crush 'em to smithereens.
- In a medium bowl, mix the graham cracker crumbs with the sugar. Add the melted butter, and mix. Press into the bottom of a pie plate (and about up the sides), and chill in the fridge for at least 30 minutes.
- Heat oven to 350 degrees Farenheit.
- In a medium bowl, whisk the sweetened condensed milk, egg yolks, and lime juice. Zest the lime over the mixture, and mix well.
- Pour the filling into the chilled graham cracker crust.
- Bake for 15 minutes. Remove from oven and transfer pan to cooling rack for 10 minutes, then chill pie in the fridge for at least an hour. Best eaten cold!
- Garnish with whipped cream before serving.
EASY KEY LIME PIE
I got this recipe from the lady I babysit for, who got it from Paula Deen's show on Food Network. I have made a few alterations (her version has almonds in the crust and a meringue on top, but I prefer this less complicated version). It is really simple and has turned out GREAT for me everytime. Put a little homemade whipped cream on top and you're good to go! I usually double the recipe and give one of the pies away.
