2 teaspoons olive oil
2 boneless skinless chicken breasts, cut into bite-size pieces
8 ounces kielbasa, diced
1 onion, diced
1 green bell pepper, diced
½ cup diced celery
2 tablespoons chopped garlic
¼ teaspoon cayenne pepper
½ teaspoon onion powder
salt and ground black pepper to taste
2 cups uncooked white rice
4 cups chicken stock
3 bay leaves
2 teaspoons Worcestershire sauce
1 teaspoon hot pepper sauce

Steps:

  • Heat oil in a large pot over medium high heat. Saute chicken and kielbasa until lightly browned, about 5 minutes. Stir in onion, bell pepper, celery and garlic. Season with cayenne, onion powder, salt and pepper. Cook 5 minutes, or until onion is tender and translucent. Add rice, then stir in chicken stock and bay leaves. Bring to a boil, then reduce heat, cover, and simmer 20 minutes, or until rice is tender. Stir in the Worcestershire sauce and hot pepper sauce.

2 tablespoons olive oil
2 chicken breasts, diced
1 lb andouille sausage, sliced
4 cloves garlic
1 jalapeño pepper, diced
1 white onion, diced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 green bell pepper, diced
2 ribs celery, diced
3 cups chicken stock
14 oz tomato, crushed
1 ½ cups rice
2 tablespoons cajun seasoning
1 bay leaf
1 teaspoon dried thyme
½ teaspoon cayenne pepper
1 lb shrimp
salt, to taste
pepper, to taste

Steps:

  • Heat olive oil in a large pot over medium high heat. Add diced chicken breasts and Andouille sausage. Add salt and pepper to taste, and cook thoroughly.
  • Add crushed garlic and a diced jalapeño pepper.
  • NOTE: Leave the jalapeño seeds in for extra spice
  • Stir in diced onion, peppers, celery until they're soft.
  • Add chicken stock, tomatoes, rice, cajun seasoning, bay leaf, dried thyme, cayenne pepper and stir.
  • Cover and simmer stew for 30 minutes.
  • NOTE: Stir occasionally to make sure the rice doesn't burn at the bottom of the pan.
  • Once the rice is cooked, add in shrimp, season with salt and pepper, then continue simmering until the shrimp are cooked through.

1 tablespoon canola oil
1 celery stalk, diced

Even though I'm a born-and-raised Arizonan, both of my grandparents are from southern Louisiana. As a result, I grew up eating a lot of good, homecooked Cajun food!! This isn't a family recipe, but it rivals any I've had. (It's a combination of several recipes I found online.) I find myself craving it once every couple of weeks...luckily my boyfriend loves it too! :-) This can be made with 2 pounds of chicken, or 1 lb chicken + 1 lb smoked sausage. The chicken / shrimp is our favorite way to make it, and the chicken / smoked sausage is a close second.

2 teaspoons vegetable oil
1 1/2 cups chopped green bell peppers

1 lb smoked sausage, sliced
2 lbs chicken breasts
1 tablespoon cumin

1 dash red pepper flakes

1 pinch cornstarch
1 1/2 cups shredded sharp cheddar cheese

Steps:

  • start cooking two cups of rice with 4 cups of water in a small pot over medium heat. For extra flavor cook with chicken broth instead.
  • preheat a large stock pot on medium heat with two teaspoons of vegetable oil.
  • Slice sausage and dice chicken into 1/2 inch size pieces.
  • Brown meat until it is golden brown.
  • Meanwhile, mince garlic. chop all the green pepper, onions, celery and mushrooms into 1/2 inch size pieces.
  • When meat is browned add in all the chopped vegetables and stir to combine.
  • Wait three minutes and pour can of diced tomatoes and juices over veggies. Add chicken broth and seasonings.
  • Stir to combine and let simmer on stove for 20 minutes checking occasionally until done.
  • Add cheese and pinch of corn starch and cook 10 more minutes.
  • Remove from heat and serve over rice and top with shredded chesse.

1 large onion, diced
2 medium green peppers, chopped
2 Tbsp vegetable oil
3 chicken breats, cooked and chopped
2 16 oz packages hillshire farm or louis rich sausage (kielbasa, turkey, or chicken)
2 can(s) campbells french onion soup
1 can(s) chicken broth
1 can(s) beef broth
3 c uncooked long grain white rice
4-5 tsp creole seasoning
1-2 c frozen or fresh shrimp (optional)
1/2 c fresh cilantro (optional)

Steps:

  • 1. In a large dutch oven, saute onion and green pepper in oil over medium heat until limp.
  • 2. slice or dice sausage and add to onion and green pepper. Cook for 1 minute. Add the creole seasoning, soups, chicken, and uncooked rice. Cover and simmer until rice is cooked and liquid is evaporated, about 20 minutes.
  • 3. If desired add shrimp and heat through until pink in color. May garnish with cilantro

This is my own modified version of the jambalaya recipe at crockpot.com. The ingredient list is long, but it's simple. I have always used instant/minute rice, and it has always cooked just fine. Some reviewers have needed more liquid, perhaps it varies by what type of rice is used.

1/2 teaspoon dried thyme
2 tablespoons olive oil

3 cups water
1 lb smoked sausage, cut into 1/4-inch think coins (I used Johnsonville jalapeno cheese)
1 (14 1/2 ounce) can diced tomatoes with onion and garlic, undrained
2 tablespoons onion salt or 1 medium chopped onion
1 -4 teaspoon creole seasoning (to taste)
1 medium green bell pepper, chopped
1 lb uncooked deveined peeled large shrimp, tails removed

1 box (8 oz.) zatarain's new orleans style jambalaya mix
2 c water
1 can(s) (8 oz.) tomato sauce
1 can(s) (12 oz.) swanson or tyson white chicken, drained and flaked
1 lb smoked beef sausage, cut in bite-size pieces

Steps:

  • 1. Mix the water and tomato sauce in a 3-qt. saucepan; bring to a boil. Add the jambalaya mix and mix well.
  • 2. Add the chicken and sausage, mixing well. Return to boil; reduce heat to low. Simmer, covered, 25 or 30 minutes until liquid is absorbed and rice is tender.
  • 3. Remove from heat; let sit 5 minutes. Serve with crusty French bread, New Orleans style.

Ingredients
2-3 14oz. cans chicken broth[I prefer Health Valley low fat - great flavor and 6gm protein per
serving]
2 16oz can/jar medium salsa[or hot, depending on taste]
1 medium onion
2 celery stalks optional
2# shrimp 31-40 count fresh/frozen unpeeled [adds more flavor than pre cooked]
1# Andouille Sausage [I use Aidells - the sausage is made from chunks of meat instead
of ground, which provides a more complex texture]
12-16oz long grain/wild rice
2-4 tbsp Olive Oil
optionals: cayenne pepper, Worchestershire sauce, Tabasco sauce

Steps:

  • Put shrimp into warm water to thaw Dump chicken broth and salsa into crock pot, high heat Cut Andouille sausage in half lengthwise, then slice in 1/4 inch pieces so shrimp & sausage about the same size Chop onion and celery In skillet, medium high heat, add olive oil, brown Andouille sausage, then dump into crock pot, saving oil Lightly saute onion and celery, then dump into crock pot. Turn crock pot to low, will take about 2 hours to be simmering throughout. In the meantime peel shrimp, divide in half, and dump into crock pot once pot has been simmering as above; let simmer for additional 15 minutes RICE You can add rice directly to crock pot - makes thicker jambalaya, may need to add additional chicken broth. I prefer the following: When shrimp have turned white, take 2 cups of broth from crock pot, put in pot on stove, add can of chicken broth, and add rice. Heat at medium until simmering, then turn down, cover, and simmer for about 3/4 hour or until done.

1/2 teaspoon lemon-pepper seasoning
1/2 teaspoon garlic powder
1 1/4 lb boneless skinless chicken breasts, cut into 1/2-inch cubes
3 tablespoons vegetable oil
1 cup chopped onions
1 package (12 oz) smoked Polish or kielbasa sausage, cut into 1/2-inch slices
1 jar (16 oz) Old El Paso™ Thick 'n Chunky picante sauce (any variety)
1 can (14.5 oz) Italian-stewed tomatoes, undrained
1 1/4 cups frozen sweet peas
2 2/3 cups hot cooked instant rice

Steps:

  • Sprinkle lemon-pepper seasoning and garlic powder over chicken cubes. In 12-inch skillet or 3-quart saucepan, heat oil over medium-high heat. Add chicken; cook 5 minutes, stirring frequently, until no longer pink in center.
  • Stir in onions and sausage; cook 5 minutes, stirring occasionally. Stir in picante sauce and tomatoes. Reduce heat to medium; cook 12 minutes, stirring occasionally.
  • Stir in peas; cook 5 to 7 minutes, stirring occasionally, until peas are tender. Serve over hot cooked rice.

2-4 cans, chicken broth [go for one with high protein - you'll discover some of the 'famous' brands have ~1gm protein/serving - while others will have 4-6gm/serving.]
1-2 cups, white wine, [optional - adds some flavor]
1 16oz can, chopped tomatoes [or second can/jar of salsa]
1 16oz can/jar, medium salsa [ - or hot, depending on taste]
2 medium onions
2 celery stalks
1# shrimp, 40-60count fresh/frozen unpeeled [adds more flavor than pre-cooked]
1# Andouille Sausage [one brand has chunks of meat instead of ground- the taste is so much better!]
12-16oz long grain/wild rice
2-4 tbsp, Olive Oil
optionals: cayenne pepper, Worchestershire sauce, Tabasco sauce

Steps:

As alternative, when shrimp have turned white, [about 1/2=>1 hour], take 2 cups of broth from crock pot, put in pot on stove, add can of chicken broth if needed, and add rice. Heat at medium until simmering, then turn down, cover, and simmer for about 3/4 hour. [***] for additional flavor, put shrimp shells in 1 cup water/chicken broth and simmer on stove till pink. Discard shells and add broth to crock pot.
