EASY GREEK YOGURT CUCUMBER SAUCE
This concoction is a result of my experimental efforts in trying to copy a favorite Greek restaurant's tzatziki sauce. Serve with gyros, pita bread, chips, or raw veggies.

- Stir together the yogurt, sour cream, vinegar, lemon juice, cucumber, green onion, garlic, feta cheese, oregano, lemon zest, salt, and pepper in a bowl; cover and chill 8 hours or overnight before serving.

EASY ROASTED CARROT GINGER SOUP WITH GREEK YOGURT AND CROUTONS
I make variations of this soup whenever I don't feel like doing a whole lot of work. It's warm and satisfying on a cold day, and is pretty good for you, too! It's one of those recipes that's very easy to play around with - roast whatever extra veggies you have around the house, make up new garnishes... Another version I enjoy is using shrimp stock and putting a few sauteed shrimp in each bowl. The recipe could easily be doubled for a larger group of people, but I find that these measurements work very well for a dinner for 2. For a vegan version, simply substitute tofu sour cream for the greek yogurt.

Steps:
- Preheat the oven to 400 degrees.
- Dice the pepper and the carrots and halve the garlic cloves. Toss with olive oil, salt, and pepper, and spread on a baking sheet in a single layer.
- Roast the veggies for 40 minutes, or until they start to get brown and caramelize. Stir once or twice during roasting.
- Put grated ginger, stock, and a glug or two of soy sauce into the food processor. Add some hot sauce if you like it spicy.
- Put all the roasted veggies into the food processor and puree until smooth.
- At this point the soup will have cooled down a bit, so you can either pop it in the microwave or put it in a pot on the stove for a few minutes to warm it up.
- Serve with a dollop of greek yogurt on top and lots of crunchy croutons!

EASY GREEK YOGURT
I have this for breakfast most mornings. The extra calcium is a plus. I add honey and granola for a delicious and filling breakfast. You can use your imagination with additions such as fresh fruit, preserves, or even chopped nuts. I have made this with flavored yogurt, but I prefer plain. You can even use the yogurt fluid (whey) instead of water in baking recipes.

- Line a colander with coffee filters and set it in a large bowl. Add yogurt and cover with a clean kitchen towel. Place in the refrigerator for 6 hours to overnight; the fluid from the yogurt will collect in the bottom of the bowl.
- Scoop yogurt out of the coffee filters and back into the original container for storage. Discard accumulated fluid or reserve for other use.

FAST & EASY SPINACH/GREEK YOGURT LOW-FAT LASAGNA
This lasagna is simply delicious, low-fat, and easy to make. I use whatever pasta sauce and cheeses are on hand to make this crowd-pleaser. I hope your family enjoys this as much as we do! (No one has any idea that the "ricotta" is actually low-fat greek yogurt+veggie broth... mwahahaha!)

Steps:
- Heat oven to 400°F.
- In medium saucepan heat up vegetable broth.
- Add Greek yogurt and half the cheese to the hot broth.
- Add spinach gradually to the yogurt/broth mixture. Set aside.
- Drizzle olive oil on the bottom of a 13X9 inch baking dish. Spread a small amount of pasta sauce on bottom of dish.
- Add a layer of noodles.
- Spread sauce on top of noodles.
- Add a layer of 1/3 of the spinach/yogurt/cheese broth.
- Sprinkle with 1/3 of remaining cheese.
- Repeat previous 3 directions twice more.
- Bake for 30 minutes covered, then 10-15 minutes uncovered.
- Let stand at least 10-15 minutes before serving.

This sauce tastes a lot like tzatziki, but it's WAY easier to make. I actually like it better than tzatziki. Very good on grilled chicken gyros. YUM!
