1 (16 ounce) can sliced carrots, drained
⅔ cup brown sugar
¼ cup butter
2 tablespoons orange marmalade

Steps:

  • Place carrots into a microwave-safe bowl; add brown sugar, butter, and orange marmalade to carrots. Cover bowl loosely with plastic wrap and cook in microwave on high power for 3 minutes; stir. If butter and marmalade aren't completely melted, continue cooking on high power for 30-second intervals, stirring after each interval, until carrots are coated with glaze.

I got this recipe off the back of a bag of baby carrots. All the ingredients go in the microwave at one time, cook and you're done. It sounded so easy and delicious that I couldn't resist posting it.

1 1/2 pounds carrots, peeled and sliced diagonally into 1/2-inch pieces
2 tablespoons butter
Coarse salt
3 tablespoons orange juice

Steps:

  • In a large skillet, bring carrots, 1/2 cup water, butter, and 1/2 teaspoon salt to a boil. Reduce heat to a simmer; cover, and cook until almost tender, about 6 minutes.
  • Add orange juice. Cook (uncovered) over high, tossing frequently, until carrots are tender and glazed, 5 to 8 minutes. Serve immediately.

EASY SOY-GLAZED TOFU AND CARROTS



Easy Soy-Glazed Tofu and Carrots image

This dish is similar to a stir-fry but it's cooked in the broiler, not on the stove. Be sure to use extra-firm tofu in this recipe, as it will hold up better than other types of tofu when broiled and tossed.

2 tablespoons vegetable oil
3 tablespoons soy sauce
Coarse salt
1 1/2 pounds carrots, (8 to 9 medium), cut into 2-inch lengths (thick pieces halved lengthwise)
2 packages (12 to 14 ounces each) extra-firm tofu, drained, each block cut into 16 equal pieces (32 total)
4 scallions, thinly sliced
1 to 2 tablespoons rice vinegar
1 to 2 teaspoons toasted sesame oil

Steps:

  • Heat broiler. If using a broilerproof rimmed baking sheet, set rack 4 inches from heat; if using a broiler pan, set rack so that top of pan is 4 inches from heat. In a large bowl, whisk together vegetable oil, soy sauce, and 1 teaspoon salt. Add carrots; toss to coat.
  • With a slotted spoon, transfer carrots (reserving bowl with marinade) to sheet (or pan). Push carrots to one side.
  • Working with a few pieces at a time, add tofu to marinade in bowl; turn gently to coat, and transfer to sheet. Reserve bowl with marinade.
  • Broil until carrots are tender and tofu is browned, turning tofu halfway through cooking time and tossing carrots occasionally (more frequently toward end of cooking time), 30 to 35 minutes.
  • Transfer tofu and carrots to reserved bowl with marinade. Add scallions, vinegar, and sesame oil; toss gently to combine.

EASY GLAZED CARROTS AND RAISINS



Easy Glazed Carrots and Raisins image

I usually make my glazed carrots with fresh baby carrots, butter, and honey. However, tonight I needed a quick side to go with my Easy One Pot Lentils and Rice. I did not have any fresh carrots or honey on hand (I need to get to the grocery store!) but I had a can or organic sliced carrots and some brown sugar. I decided to add raisins, because my 18 month old dd LOVES them, but cannot eat them unless they are chopped or cooked. (due to the fact that they are a major choking hazard) This is what I came up with. I served the lentils and rice as a rice ring, and served it with the carrots and raisins in the middle. (lifted out of the pan with a slotted spoon) My family really enjoyed it, and the kids appreciated the presentation! Whatever works to get them to eat healthy! ;o)

1/4 cup raisins
1/4 cup hot water
1 tablespoon brown sugar, packed
1 tablespoon butter
1 pinch sea salt
1 (15 ounce) can sliced carrots

Steps:

  • Put raisins into a small saucepan, add hot water. and let stand 5 minutes to plump raisins slightly.
  • Meanwhile, drain and rinse the carrots.
  • Add brown sugar, butter, and salt to the pan and stir to dissolve sugar.
  • Bring glaze to a boil over medium-high heat and cook 1 minute.
  • Add carrots to glaze and toss to coat.
  • Bring to a boil, reduce heat to medium and simmer 5 minutes uncovered. You can serve the carrots at this point, but the longer they simmer, the thicker the glaze gets and the sweeter the carrots get.

1/3 cup orange marmalade

  • In 1 1/2- to 2-quart saucepan, heat 1/2 cup water to boiling. Add carrots. Heat to boiling; reduce heat to medium. Cover and cook 10 to 12 minutes, stirring occasionally, until tender.
  • Meanwhile, in 8- or 10-inch skillet, spread almonds in single layer. Cook and stir over medium-high heat 4 to 7 minutes or until lightly browned.

1 Tbsp lime juice
fresh ground black pepper
1/4 c chopped flat leaf parsley (optional)

  • 1. In a medium sauce pan, bring some water to a boil. Add some salt then the carrots and cook until tender..5-6 minutes.
  • 2. Drain the carrots and put them back into the pan,add the butter, honey and lime juice.
  • 3. Cook for an additional 5 minutes to glaze the carrots. Season if desired and garnish with the parsley.

1 tablespoon brown sugar

  • 2. Cook carrots in small amount of boiling, salted water for 15 minutes or until tender.

1 lb fresh carrots
1/2 c butter
1/4 c honey
1/4 c brown sugar
1/2 tsp ginger powder

Steps:

  • 1. Clean and slice carrots. We like them cut in longer pieces but coins are OK too. Cook carrots in a small amount of water until tender. Drain water and reserve 2 tablespoons of water. Set carrots aside for a while.
  • 2. In same saucepan mix reserved water, butter, honey, brown sugar, and ginger. Stir and cook until heated thoroughly and well mixed. Return carrots to pan. Continue cooking until carrots are hot and covered in glaze. Serve hot.
