100 g shrimp
2 -3 cabbage leaves
2 teaspoons apple cider vinegar
1 garlic clove, minced
1 teaspoon fresh ginger, minced
1 teaspoon green onion, coarsely chopped

Steps:

  • Lightly steam cabbage leaves and set aside.
  • Sauté shrimp with vinegar, garlic and ginger until shrimp is cooked through.
  • In a food processor, mince shrimp with green onions.
  • Divide shrimp mixture equally among cabbage leaves, spoon shrimp mixture in leaves, roll and serve with dipping sauce.

100 g raw shrimp (approx. 10-12 small to medium)
2 ounces low-sodium tomato paste
2 tablespoons fresh lemon juice
1 tablespoon apple cider vinegar
1 teaspoon hot sauce
1/8 teaspoon horseradish
1 dash mustard powder
4 drops stevia
1 dash sea salt
1 dash pepper

Steps:

  • Steam shrimp until pink and well cooked. Chill for 30 minutes.
  • Mix all other ingredients together and chill to allow spices to marinate. Add water as needed for desired consistency.
  • Can be served on ice or lettuce leaves.

1 melba toast, made into crumbs
1 tablespoon lemon juice
1 tablespoon apple cider vinegar
1/8 teaspoon onion powder

1 dash cayenne

Steps:

  • Preheat oven to 350.
  • In a small bowl combine all ingredients and form into small cakes.
  • Press crab cakes into muffin tins and bake for 10-20 minutes, until tops are slightly toasted.
  • Alternatively, the crab mixture can be sautéed until warm and served over a green salad.

I came home late one evening and realized I hadn't defrosted any meat. I came up with these fast and delicious wraps that even my husband and kids loved!

4 ounces lean ground beef
1 tablespoon Braggs liquid aminos
1 stalk celery
1 tablespoon ginger, peeled
2 garlic cloves
1 teaspoon black pepper
salt
2 tablespoons cilantro leaves
4 iceberg lettuce leaves

Steps:

  • Brown meat in skillet with the Bragg's.
  • Meanwhile, place celery, garlic and ginger into food processor. Pulse until desired consistancy. I chopped mine very finely.
  • When meat is no longer pink add the pepper and salt. Mix.
  • Add remaining ingredients (from food processor) and cook for another 3 minutes or so to blend the ingredients.
  • Turn off heat and remove from stove, add the cilantro. Mix to combine.
  • Place into bowl.
  • Scoop meat mixture into lettuce and wrap, burrito or taco style.
  • Enjoy these delicious wraps.

1 tablespoon cornstarch
1/4 cup fresh squeezed orange juice
2 tablespoons low sodium soy sauce
2 tablespoons honey
1 tablespoon rice wine vinegar
1 tablespoon sambal oelek
2 tablespoons canola oil
1 tablespoon minced fresh ginger
3 garlic cloves, minced
1/3 cup chopped green onion

Steps:

  • Place shrimp in medium bowl, sprinkle with cornstarch, toss well to coat and set aside.
  • Combine juice, soy sauce, honey, vinegar, and sambal, stirring until well mixed; set aside.
  • Heat canola oil in large nonstick skillet over med-hi heat. Add minced ginger and garlic, stir fry for 15 seconds or until fragrant. Add shrimp mixture, stir-fry for 3 minutes. Add juice mixture and onions, cook 2 minutes or until sauce thickens and shrimp are done, stirring frequently.

I like to buy fresh shrimp and prep it myself (peel, de-vein, cook in boiling water for 2 mins), but you can make these even easier (and no-cook) by using pre-cooked shrimp. Hot dog buns will do, but brioche buns take 'em to the next level.

2 tortillas, whole wheat
4 boston lettuce leaves
4 ounces cooked shrimp, in bite-sized pieces
1/2 small cucumber, peeled, seeded and cut into matchstick strips
2 tablespoons fresh cilantro leaves, chopped
1 tablespoon peanuts, chopped
1 dash sea salt
1 dash ground pepper
1/8-1/4 teaspoon red pepper flakes

Steps:

  • Place the tortillas on a flat surface and layer lettuce followed by shrimp, cucumber, cilantro and peanuts.
  • Sprinkle with seasonings, if desired.
  • Roll up securely and serve.
