EASY GINGER BEEF
In looking for a healthier version of the standard ginger beef, I came up with this non-deep fried version. The longer you marinate the beef, the more ginger flavor it soaks up.

Steps:
- Place steak, ginger, and soy sauce in a bowl; turn to coat steak. Cover tightly; marinate in the refrigerator for at least 30 minutes or up to overnight.
- Heat a wok over high heat; pour in beef mixture. Cover wok; cook until beef is browned, about 5 minutes. Remove beef from wok.
- Heat butter in wok over high heat; stir in bell pepper, onion, mushrooms, and sweet and sour sauce. Cover and cook until vegetables begin to soften, about 3 minutes. Stir cooked beef into vegetable mixture; cook until heated through, about 2 minutes. Serve over cooked rice.

EASY NO-PEEK BEEF TIPS (MADE WITH GINGER ALE)
Found this recipe in a recipe book called "At the End of the Fork". Made this delicious and simple dish and it turned out scrumptious! A definite keeper and a must try!!!! Delicious and Simple are the recipes that I love to prepare. Dinner is over and there are no Beef Tips left! Makes a very flavorful gravy. Absolutely Tender!!...

Steps:
- 1. Pre-heat oven to 350 degrees.
- 2. In a greased casserole dish, sprinkle onion soup mix over beef.
- 3. Spoon mushroom soup over meat; add ginger ale. DO NOT STIR.
- 4. Bake covered at 350 degrees for 2 hours. DON'T PEEK. Serve over noodles or rice.

Gingery beef on a chewy hoagie roll, yum. My oldest son and I love these and could easily wolf the whole batch down - little brother and dad have to fight us for 'em!

- Heat vegetable oil in a large skillet over medium-high heat. Stir in the sirloin strips, and cook a few minutes until the strips begin to brown, but are still a little pink. Stir in the onion and garlic; cook for 2 minutes. Add the celery and ginger, continue cooking until the onion has softened, about 3 minutes. Season with soy sauce and chili oil. Divide among hoagie rolls and serve.
