5 pounds potatoes (about 12 medium), peeled
8 bacon strips, cooked and crumbled
1 small onion, chopped
3 green onions, thinly sliced
1-1/2 cups water
1/2 cup white vinegar
1/3 cup canola oil
1-1/4 teaspoons salt
1/2 teaspoon pepper

Steps:

  • Place potatoes in a stock pot; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, 15-20 minutes or until tender. Drain potatoes; cool slightly., Cut potatoes into slices. Place in a large bowl. Stir in bacon, onion and green onions., In a small bowl, whisk the remaining ingredients until blended; pour over salad and toss gently to coat. Serve warm. Refrigerate leftovers.

This is the easy way out for potato salad, when you're not in the mood to cut up potatoes. This was demonstrated at the Southern Living Cooking Show in Orlando a few years ago.

3 1/2-4 cups frozen potatoes, such as Ore-Ida cottage fries (found in the frozen section next to tater tots) or 3 1/2-4 cups waffle-shaped French fries (found in the frozen section next to tater tots)
1/2 cup cold water
6 slices bacon, minced
1/2 cup celery, chopped
1/2 cup red onion, chopped
2 tablespoons flour
1 1/2 tablespoons sugar
1 1/2 teaspoons salt
1/2 teaspoon celery seed
2/3 cup water
1/3 cup tarragon vinegar or 1/3 cup apple cider vinegar
2 hard-cooked eggs
paprika, to garnish

Steps:

  • Place frozen potatoes and cold water in covered skillet; cook over medium heat for 8-10 minutes or until fork-tender; drain.
  • Meanwhile, in skillet, cook bacon until softened; add celery and onion and cook until bacon is crisp and celery golden. Remove from skillet and drain on paper towels.
  • Spoon off excess fat, reserving 2 T bacon drippings in skillet; blend in flour,sugar,salt and celery seed. Add water and vinegar; cook while stirring until smooth and thickened.
  • Add bacon and celery. Gently fold this mixture into the hot, well-drained potatoes. Turn into a 1.5 quart bowl. Garnish with hard-cooked egg slices and sprinkle with paprika.

8 potatoes
1 cucumber, thinly sliced
½ cup mayonnaise
salt and pepper to taste

Steps:

  • Place potatoes in a large saucepan or Dutch oven, and cover with lightly salted water. Bring to a boil over high heat, then reduce heat to medium, and simmer until potatoes are tender; drain and cool. Peel the potatoes and cut into 1/4 inch slices.
  • Mix together the potatoes, cucumbers, and mayonnaise; season with salt and pepper.

Easy Skillet German Potato Salad image

You certainly don't have to be German to enjoy this This Skillet German Potato Salad is darn near the best potato recipe I have ever made. So savory and full of so much flavor. You can boil the potatoes and mix the dressing ahead of time.

1 1/2 lb small red potatoes
4 slices bacon
1/4 c apple cider vinegar
1 1/2 Tbsp sugar
2 Tbsp water
3 Tbsp olive oil
1 tsp dijon mustard
1 medium sweet onion chopped
2 Tbsp fresh parsley chopped
salt & pepper to taste

Steps:

  • 1. In large pot boil potatoes for 15 minutes. Place under cold running water to stop the cooking process. Cut into large bite size chunks and set aside.
  • 2. Place bacon on cookie sheet Bake in oven at 375 degrees for 7 minutes. Turn bacon and cook for another 7 minutes or until crispy. Remove from cookie sheet and place on paper towel to drain. Do NOT dispose of bacon grease.
  • 3. In medium bowl whisk vinegar, sugar, water, olive oil and Dijon mustard.
  • 4. Place 2 tablespoon bacon grease in large skillet over medium heat. Add onion and cook 3-4 minutes. Add chopped potatoes and cook an additional 5 minutes or until starting to brown on the edges. Add additional bacon grease when necessary to keep things from sticking to the pan.. Whisk vinegar mixture and pour in 1/3 at a time cooking 1-2 minutes after each 1/3.
  • 5. Stir in chopped bacon and parsley.

Found this recipe in an old church cook book been making my German Potato Salad this way ever since. So bring on the brats and kraut and a glass of beer and I am ready.

8 medium cooked potatoes (i use russets)
8 slice bacon, cooked and diced
1 small onion (diced)
2 Tbsp flour
3 Tbsp vinigar
3 Tbsp sugar
2 c water

Steps:

  • 1. Brown bacon and onion .
  • 2. In same pan add flour, sugar, vinegar, and water.
  • 3. Add cooked and diced potatoes
  • 4. salt and pepper to taste. If mixture seems thick add alittle more water.

8 medium russet potatoes, peeled and cut in half
8 slice bacon cooked till crisp, and crumbled
2/3 c water
2/3 c white vinegar
1/2 c splenda or sugar
4 Tbsp all purpose flour
1 large green bell pepper chopped
1 large onion chopped, i used red onion
1/2 c chopped celery
2-3 Tbsp diced pimentoes, drained
1-2 Tbsp fresh chopped chive for garnish, optional

Steps:

  • 1. Peel potatoes cut in half and add to a large pot, cover with water , bring to a boil and boil about 20 minutes or until potatoes are tender but still a bit firm. Drain then allow them to cool slightly., cut into 1/2 inch cubes and set aside till needed.
  • 2. Cook bacon in a large skillet, until crisp. Remove and drain on a paper towel. Crumble and then set aside till needed. Save about 4 tablespoons of the bacon fat.
  • 3. Combine the sugar and flour into a small bowl, then stir to blend together. Set aside till needed. Add the chopped onions, bell peppers and celery to the bacon fat, and cook over medium high heat about 2-3 minutes.
  • 4. Now add the flour sugar mixture and stir to coat veggies.
  • 5. Now add in the water and vinegar and stir gently until mixture begins to thicken.
  • 6. Cook over medium high heat till it begins to bubble and thicken, stirring to prevent sticking. When thickened completely, remove from heat and add the cubed potatoes, then stir to coat potatoes with the vegetable mixture. Now add in the pimentos & stir to mix in.
  • 7. Next add the crumbled bacon and stir gently to mix in, reserving about a tablespoon or so to use as a garnish on top. Garnish with chopped chive if desired & serve while still warm.
