EASY FRENCH TOAST CASSEROLE
Delicious and decadent, simple spin on French toast. Got the idea from a bed and breakfast in the south. Add additional ingredients; we like blueberries and cream cheese, cinnamon apples, nuts, and dried fruit!

Steps:
- Grease a 9x12-inch baking dish.
- Stir 1 cup brown sugar and butter together in a saucepan over medium-low heat until butter melts and sugar dissolves into butter, 2 to 4 minutes. Pour into prepared baking dish and spread a 1 1/2- to 2-inch layer of bread pieces over the top.
- Beat milk, eggs, and vanilla extract together in a bowl; pour milk mixture over bread into the baking dish and move bread as necessary to ensure all bread is absorbing liquid. Sprinkle cinnamon over the top. Cover the dish with plastic wrap and refrigerate, 8 hours to overnight.
- Preheat oven to 450 degrees F (230 degrees C). Remove and discard plastic wrap from baking dish and sprinkle remaining brown sugar over the top of the bread mixture.
- Bake in the preheated oven until browned and bubbling, about 30 minutes.

EASY FRENCH TOAST CASSEROLE (MAKE AHEAD)
Great for Christmas morning as you make it the night before and pop it in the oven for about an hour. It's really yummy and SO EASY! There are a few other french toast casserole dishes here, but none quite like this one. My friend Kathy made this for a ladies brunch/book club and everyone loved it. I had to have the recipe!

Steps:
- The night before: Grease a 9x13 baking dish. Break up half the bread by tearing or cutting into 1 inch or so cubes.
- Scatter cubed cream cheese over the top.
- Top with the remaining bread, also broken or cut into cubes.
- Sprinkle with the cinnamon and the sugar.
- Pour maple syrup over the top (the real stuff always tastes better!).
- Pour the beaten eggs over the top next.
- Cover with foil and place in the fridge overnight.
- The next day: Preheat oven to 350°F
- Bake uncovered 45-60 minutes, depending on your oven and how mushy you like your french toast.
- Sprinkle with powdered sugar before serving.

EASY OVERNIGHT FRENCH TOAST CASSEROLE
Serve dusted with confectioner's sugar and offer warm maple syrup, if desired. Good sides are breakfast sausage links, fresh squeezed orange juice and fresh berries or melon chunks. Yummy!

Steps:
- Melt butter in a 13 by 9 by 2-inch baking dish.
- Arrange the bread slices in the dish, turning to coat them in the melted butter.
- In a large bowl beat the eggs and add the half and half, vanilla, baking powder, nutmeg and the cinnamon; mix well.
- Pour the egg mixture over the bread in the baking dish.
- Cover and chill for 8 hours or overnight.
- Remove from the refrigerator 30 minutes before baking.
- Bake uncovered in a preheated 350 degree F oven for 45-55 minutes.
- Remove from oven and let stand for 10 minutes before serving.
- Dust with confectioner's sugar before serving, and offer maple syrup on the side, if desired.

- Spray a 3-quart baking dish with non stick cooking cooking spray. Spread 1/2 bread cubes to cover the bottom of prepared baking dish.
- Cover with 1 cup of the fruit, followed by the remaining bread cubes and fruit/blueberries.
- In a small bowl, whisk the eggs together. Add the fat free half and half, Lakanto's organic white granulated sugar sweetener, sugar free syrup, vanilla extract, orange or lemon zest, and a pinch of salt. Whisk well.
- Pour the egg and milk batter evenly over all the bread chunks. At this point, you can cover the casserole with plastic wrap or foil and refrigerate it overnight.
- Otherwise, preheat oven to 350 degrees. Cover the casserole with foil and bake for 20 minutes. After 20 minutes, remove foil and bake for another 25-30 minutes or until baked through.
- Let it cool for about 10 minutes before serving. Let it cool for about 10 minutes before serving.

Steps:
- Combine first 3 ingredients in a small, heavy saucepan over medium heat. Cook 5 minutes or until bubbly and sugar dissolves, stirring constantly. Pour sugar mixture into bottom of a 13 x 9-inch baking dish coated with cooking spray. Spread mixture evenly over bottom of pan. Set aside; cool completely. Combine milk and next 5 ingredients (through eggs) in a large shallow bowl; stir with a whisk. Dip 1 bread slice in milk mixture; arrange bread slice over sugar mixture in dish. Repeat procedure with remaining 5 bread slices. Pour any remaining egg mixture over bread slices. Cover and refrigerate overnight. Preheat oven to 350°. Bake at 350° for 30 minutes or until lightly browned. While casserole bakes, combine whipped topping and Grand Marnier. Place 1 bread slice, caramel side up, on each of 6 plates; top each serving with 1 tablespoon topping and 1 teaspoon pecans.
