EASY FRENCH ONION SOUP
This soup is simple to make after work. My husband thinks it is as good if not better than any we've ever had in a restaurant.

Steps:
- Place onions and butter in saucepan.
- Sauté on medium heat until onions are tender.
- Add garlic and sauté 1-2 minutes (don't let garlic burn).
- Add beef broth, consomme, and Woschershire sauce.
- Bring to a boil for 1 minute.
- Take ovenproof bowls (I use over-sized coffee mugs) and place 0.125 cup of cheese in bottom of each bowl.
- Fill bowl with soup leaving room at the top.
- Place toasted French bread on top.
- Top with 0.125 cup Swiss cheese.
- Place under broiler until cheese is bubbly.
- Serve immediately.
- Caution--bowls will be hot!

EASY BEEFY FRENCH ONION SOUP
Many times I had left over fast food so this is one of my recipes for using them. It soon became a favorite and then on the way home I would stop at Arbys and KFC for the fixings for this soup. Good enough for a meal and great as a meal starter or with a sandwitch at lunch.

- 1. Saute onions in a little butter until opaque.
- 2. Dice roast beef and add to onion mix in a large saucepan
- 3. Add water, french onion soup, and chicken gravy. simmer 15-20 minutes.
- 4. Toast garlic bread in oven on both sides until crispy.
- 5. Assemble your soup by pouring soup in oven safe bowls. Add one slice garlic bread on top of soup and top with cheese so it covers top and goes a little over the sides.
- 6. Put under broiler for a few minutes until cheese melts. watching closely. Serve and enjoy.

- Melt butter in a large skillet over low heat. Cook onions with salt, stirring occasionally, until the onions are soft and golden, about 40 to 45 minutes.
- Mix in thyme sprigs and bay leaf. Pour in sherry wine and sherry vinegar, and stir in black pepper. Pour in beef broth, chicken broth, and water. Stir to combine, and allow the soup to simmer gently for one hour.
- Ladle soup into heat-proof crocks. Place a slice of toasted baguette on top of each crock, and sprinkle 1 ounce of shredded Gruyere cheese per serving.
- Preheat oven's broiler and set the oven rack about 6 inches from the heat source. Place the filled crocks on a baking sheet, and broil until the cheese is golden and bubbly, about 1 minute.

- Heat vegetable oil in a large pot or Dutch oven over medium heat. Add onions; cook, stirring frequently, until well browned, about 20 minutes. Add garlic; stir constantly for 1 minute. Pour in beef broth, chicken broth, and pale ale. Stir black pepper and bay leaves into the soup.
- Bring soup to a simmer. Cover and simmer until flavors combine, about 30 minutes.
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler on low. Spread French bread slices on a baking sheet.
- Broil French bread slices until very lightly toasted, 30 seconds to 1 minute. Divide mozzarella cheese and Parmesan cheese evenly over bread.
- Broil bread until cheeses are bubbly and browned, 1 to 2 minutes.

PAM'S EASY FRENCH ONION SOUP
As I said on my Onion Ring recipe, "sometimes I get a hankering for onions." I had three nice fresh onions calling to me from the kitchen the other night, so I decided to cook up some French Onion soup. This is a simple recipe, but the carmelizing of the onions takes some time. Boy is it Yummy though. Even my onion averse husband ate a bowl and loved it.

- Peel and cut off root and top of onions. Cut in half from pole to pole (top to bottom) then place onion half flat side down and cut about 1/4 inch thick slices (also from top to bottom with the grain of the onion). Cutting the onions this way will aid in keeping the onions from breaking down to mush as they carmelize. This will be quite a large pile of onion slivers.
- In a large diameter, deep frying pan or Dutch oven, melt butter and add oil, heat on medium high to slightly brown the butter. Wide pans make it easier to get good carmelization faster. As soon as the butter is slightly brown, put in all the onion slices, thyme and bay leaf and stir to coat with the oil. Turn heat down to medium and pat onions down to get contact with the pan. Check browning after 5 and 10 minutes to determine how long to let it brown between stirring. Set timer for however many minutes you determine and let the onion slivers brown, returning to stir and bring the carmelized part to the top, reset timer and keep stirring and checking until a brown residue is covering the bottom of the pan. (BROWN, NOT BLACK) Add about 1/2 cup of broth to pan, stir until all broth is evaporated (deglaze the pan), and then set timer and stir again until the residue forms again. Turn heat down if it is browning too quickly. Deglaze two more times with broth, letting onions get deeply red brown. When dark brown, remove the pan from the heat (to avoid a flare up), and do a final deglaze with the sherry. Return pan to heat to let it evaporate almost completely.
- Remove the bay leaf and then add all the remaining broth and seasonings. Simmer soup for 15 to 30 minutes, taste and adjust salt and pepper.
- To serve, fill either broiler proof ramekins/soup mugs about 2/3 full of hot soup, toast baguette and sprinkle with Gruyere chees to cover then float toast on top of soup and slip under the broiler for a few minutes until cheese melts and browns slightly. Serve OR dish up a bowl full of soup and serve with grilled Swiss cheese sandwiches.

- Melt butter with olive oil in an 8 quart sauce pan on medium heat. Add onions and stir until tender and translucent.
- Add beef broth and thyme. Season with salt and pepper. Simmer for 30 minutes.
- Heat the oven broiler.

This is a simple and quick low carb meal that can be prepared in minutes! Is is so simple that it really isn't much of a recipe; however, it is a great idea for a low carb substitute for regular French Onion Soup, which is usually made with bread.
