¼ cup water
1 (14 ounce) can sweetened condensed milk
1 (12 ounce) can evaporated milk
5 eggs
1 (8 ounce) package cream cheese
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat sugar and water together in a small saucepan over medium heat, stirring occasionally, until sugar dissolves into a light brown caramel, 8 to 10 minutes. Pour into a round glass baking dish.
  • Place condensed milk, evaporated milk, eggs, cream cheese, and vanilla extract in a blender; blend into a smooth custard. Pour over caramelized sugar in the baking dish.
  • Place baking dish in a deep baking pan. Pour in enough water to reach halfway up the baking dish.
  • Bake in the preheated oven until custard is set and top is light brown, about 1 hour.
  • Cover with plastic wrap; refrigerate until cold, 3 to 4 hours.

This is so good and so easy. I found this recipe after my husband started getting nostalgic about his years spent in Northern Spain. He absolutely loves it when I make it and thinks it's very close to what he would get in Spain. It comes together quick since you barely need to measure anything.

3/4 cup sugar
4 eggs
1 (14 ounce) can condensed milk
1 (12 ounce) can evaporated milk
1 tablespoon vanilla extract
boiling water, for baking in

Steps:

  • Preheat oven to 325.
  • Brown sugar in a saucepan till a medium dark golden brown, but not burnt and then QUICKLY transfer to the bottom of a pie plate(you may add a few tablespoons of water to help it melt).
  • In a large bowl beat the eggs and then add the 2 cans of milk and vanilla extract, mixing well.
  • Pour mixture into pie plate.
  • Using a larger pan that the pie plate will fit in, fill half way with the boiling water, place in oven, and then place pie plate in the middle of the large pan.
  • Bake for approximately 45 - 55 minutes. The center should be soft and firm but not liquidly.
  • Let cool and then after running a knife around the edge to seperate, flip over onto a serving dish.

Here's a simple recipe that my mom's used for years. She picked it up somewhere in South America (either in Peru or Brazil). It's fast, easy and very tasty. The cinnamon makes all the difference. Using a tube pan makes it bake more evenly and more quickly and makes for a prettier presentation.

1 cup sugar, caramelized
6 -10 eggs, well beaten
2 (14 ounce) cans sweetened condensed milk
2 (12 ounce) cans evaporated milk
1 teaspoon vanilla
1 dash cinnamon

Steps:

  • Coat tube pan with caramelized sugar.
  • Allow to harden, then place pan in container with ice cold water until the caramelized sugar cracks.
  • Mix other ingredient in order, stir well and pour in mold.
  • Place mold in pan with 2" hot water in preheated oven.
  • Bake at 350°F for 1 hour or until firm.
  • Let cool, then invert and unmold.
  • Decorate with fresh berries or edible flowers, if desired.

EASY PUMPKIN FLAN

Most flans are so labor intensive, this one is relatively easy. The original recipe I found in an e-book didn't call for the pumpkin and spice, which I added. It said "1 1/2 cans water" and that can mean anything but the cup of pumpkin moistened it up nicely!

1 cup pumpkin puree
3 eggs
2 teaspoons vanilla
1 teaspoon pumpkin pie spice

Steps:

  • Make the caramel sauce by sprinkling the sugar around evenly in a clean frying pan, and cooking it over medium heat until it turns brown.
  • Do not stir until all the sugar has melted and become a brown syrup and pour into a 9" pie pan, thoroughly coating all sides of it.
  • In another bowl, whip the eggs together then all the other custard ingredients. Pour into the pie pan.
  • Fill a 10" pie pan halfway with warm water, and place the filled pie pan inside it.
  • Bake at 350F for 45 minutes or until set.
  • Let cool for 20 minutes, carefully loosen the edges with a butter knife, then invert onto a large serving plate.

DELICIOUS, EASY CUBAN-STYLE FLAN

I love a good flan, and have experimented with many during the years of my flan-fixation. :) This one is quite lovely- both for ease of preparation, and for taste. It is denser then some I've tasted, not too heavy like some that use heavy cream, but texture-wise, very creamy and smooth. I got this recipe from a dear friend who gave me her mother's recipe from Cuba. Don't hesitate to make this recipe becuause you don't know what to do with the leftover egg-whites. There are lots of things to do with egg-whites! Use them in egg-flower soup, fried rice, egg-white omelettes, meringues, as the egg-binder in meatloaf, meatballs and spinach-artichoke dip, just to name a few. Enjoy. :) Note: prep time does not include cooling.

1 whole egg
5 egg yolks

Steps:

  • Equipment: 1 quart flanera or 1 quart round casserole dish with lid AND 1 ovenproof dish or baking pan that the flanera or casserole will fit into.
  • Caramel: Some people like to make caramel by adding water to sugar and then cooking it to a nice dark golden brown, and some just like to melt the sugar to golden without water. Either method will work here. If you are using a flanera, which is a metal pan with a lock-down lid, you can make the caramel right in the flanera. If you are using a casserole dish, make the caramel in a saucepan and pour into the bottom of the casserole dish.
  • Custard: As you prepare the custard, the caramel will cool. In a separate bowl, beat the 1 whole egg and 5 egg yolks together. A whisk works very well here. Add the evaporated milk and sweetened condensed milk to the eggs and mix together. Add the vanilla extract, either 1/2 teaspoon or 1 teaspoon depending on what strength you prefer. Pour the custard mixture into the flanera or casserole dish over the hardened caramel. Put on the lid.
  • Put your flan into the ovenproof dish or baking pan and fill with hot water to about half-way up the sides, or as high as you can go and still move the thing without spilling hot water on yourself.
  • Bake in a pre-heated 350 degree oven for 45 minutes. Turn off the oven and let set for another 15 minutes.
  • Remove from the oven and the water-bath and let cool.
  • Plating: Run a butter-knife around the outside edge of the flan. Place a plate large enough to handle the liquid caramel over the flan and invert. Chill the flan for at least an hour before serving.

  • 1. Lightly grease an 8 inch flan dish.

EASY CHAI CREME CARAMEL (AKA CHAI FLAN DE LECHE)



Easy Chai Creme Caramel (Aka Chai Flan De Leche) image

This is a fast and easy dessert to finish off a spicy meal or add an exotic twist on a classic dessert. It's made from a mix, but no one will ever know! I use Dr. Oetker brand dessert mix, but any brand will do, so long as the box yields 3-4 individual servings. When I have dinenr guests, I like to make this ahead of time so I I can enjoy dinner without having to run back to the kitchen to prepare dessert. Use whole spices so you can skim the spices out of the custard and keep the smooth creamy texture and color of the individual flans. Follow the directions for whatever kind of mix you use, and just be sure to add the spices to the milk as soon as possible to get maximum flavor infused into the custard mix.

2 (105 g) packages Dr. Oetker caramel creme dessert mix (Dr. Oetker is vegetarian)
400 ml milk
1 cinnamon stick, broken into several pieces
4 whole green cardamom pods
2 slices fresh ginger or 2 slices candied ginger

Steps:

  • Divide caramel sauce equally into ramekins, one for each serving. Make sure a thin coat of caramel covers the bottom of each ramekin. Set these aside.
  • Dissolve contents of custard mix into 125mL of milk and whisk until blended.
  • Put remaining milk and whole spices in a saucepan and bring to a boil over medium heat.
  • Reduce heat slightly and add custard mixture, whisking vigorously.
  • Bring just to a boil again, and keep stirring so no lumps form. The allow to simmer for 2 minutes, stirring constantly.
  • Skim spices out of liquid. (Or pour mixture through small mesh strainer in the next step.).
  • Gently pour liquid into ramekins, making sure not to disturb the caramel coating the base of each one.
  • Chill ramekins until set. (This takes approximately 45 minutes in my refridgerator.)
  • Remove ramekins from refridgerator. Put a serving plate against top of a ramekin, , hold them together, and flip them upside down in a fast motion so the creme caramel flops out of the ramekin and onto the serving plate. Let it sit for a minute to allow the caramel to run over the custard before removing ramekin. Repeat this for each serving. (This is quite easy and the result looks impressive.).

  • Caramel:.
  • Put brown sugar and water in a saucepan. Caramelize on high heat. It will be ready when you see big bubbles popping and the texture is thick.
  • Line cake tin with caramel. Be sure to line the sides of the pan. A tip for getting the caramel to stick to the sides is to line it and then throw it in the freezer for a few minutes.
  • Custard:.
  • Blend all ingredients in a big bowl with a hand mixer or spoon as not to create bubbles.
  • Pour mixture into caramel lined cake pan.
  • Cover with aluminum foil.
  • Place tin in a larger baking pan half filled with water.
  • Place pan in pre-heated oven at 350 degrees and bake flan for about 1 hour or until firm.
  • Take the foil off in the last 5 minutes of baking.
  • Place serving deep dish over top of the cake pan, and invert. Flan will easily plate, and the caramel provides a wonderful sauce.

Ingredients:
1 cup and 1/2 cup sugar
6 large eggs
1 14oz can sweetened condensed milk
2 13 oz cans evaporated milk
1 teaspoon vanilla

Steps:

  • Preheat oven to 325 F (165 C). You will need 6 ramekins or other specialty flan cook ware and a large baking pan half full of water to put them in. Pour 1 cup sugar in warm pan over medium heat. Constantly stir sugar until is browns and becomes caramel. Quickly pour approximately 2-3 tablespoons of caramel in each ramekin, tilting it to swirl the caramel around the sides. Reheat caramel if it starts to harden. In a mixer or with a whisk, blend the eggs together. Mix in the milks then slowly mix in the 1/2 cup of sugar, then the vanilla. Blend smooth after each ingredient is added. Pour custard into caramel lined ramekins. Place ramekins in a large glass or ceramic baking dish and fill with about 1-2 inches of hot water. Bake for about 45 minutes (could be more) in the water bath and check with a knife just to the side of the center. If knife comes out clean, it's ready. Remove and let cool. Let each ramekin cool in refrigerator for 1 hour. Invert each ramekin onto a small plate, the caramel sauce will flow over the custard.

4 cups whole milk
1/8 teaspoon salt
1 cup sugar
8 large eggs or 9 medium eggs
1 teaspoon vanilla extract
6 tablespoons sugar

Steps:

  • In a large saucepan, combine milk and salt and scald. Remove from heat and add 1 c. sugar, stirring until it is dissolved. Set aside. In a large mixing bowl, beat the eggs until slightly foamy. Slowly add the sweetened milk while stirring. Add vanilla. If you would like a golden color to the flan add a little yellow food coloring or one drop caramel coloring. In a small skillet, melts 6 Tbs. sugar until it is a light golden brown color. Coat a 1 ½ quart tube pan with the caramel. Pour the custard into the mold and place the mold into a 12" deep Dutch oven filled with water half way up the tube mold. Bake at 300°F for about 1 hour or until set. The custard is done when a knife inserted into the middle of the custard comes out clean. Cool completely before inverting onto a shallow serving plate. If the flan does not release easily, immerse the tube pan in some hot water for a few seconds, then turn out on the serving plate. Serves 6 to 8

some hot tap water for the water bath (bain marie)

Steps:

  • Preheat oven to 325 degrees F.
  • In a skillet over medium heat, swirl 1/2 cup white sugar until it melts and starts turning brown, about 2 minutes.
  • Quickly pour caramelized sugar into the bottom of a 9 inch cake pan and swirl to cover the bottom of the pan before it hardens.
  • Put the other 1/2 cup white sugar, evaporated milk, eggs, salt, and vanilla extract into a blender and blend until incorporated.
  • Pour the custard over the caramelized sugar in the cake pan. Cover with foil and place into a larger pan with sides.
  • Pour hot tap water into the larger pan until it's about halfway up the covered cake pan. Place the pans carefully in the oven.
  • Bake at 325 degrees about 90 minutes or until a knife slipped into the middle comes out clean. Check early to avoid overtaking.
  • Carefully remove the covered cake pan from the water bath to a cooling rack and uncover, allowing the flan to cool for an hour. Then cover and refrigerate for at least 8 hours. Run a knife along the sides and flip the flan onto a plate. Serve cold. Refrigerate leftovers.

This is easy to make Mexican Flan recipe, it is made using whole eggs, condensed and evaporated milk. Covered with a light sugar syrup. It can also be made using cream cheese or coconut milk.

1 can of condensed milk*
1 can of evaporated milk**
6 eggs
1 8oz pkg. of cream cheese (optional, see note)***
1 teaspoon of vanilla
1 cup of sugar
2 tablespoons of water

Steps:

  • In a medium-size saucepan place the sugar and water, bring to a boil in a high heat until sugar dissolves, when sugar dissolves reduce heat and keep boiling until the syrup gets a light brown-caramel color. This will take about 10 minutes. Pour the caramel in your oven proof pan, swirling the caramel to cover the bottom of the pan evenly. Let cool.
  • Place the rest of the ingredients in a blender and process until you have a smooth mixture.
  • Pour mixture slowly into prepared pan and cover with aluminum foil. For the hot bath. Place the pan inside a large baking pan. Add warm water to the pan until it reaches about 3/4 inch.
  • Bake in a preheated oven at 325 degrees for about 50 minutes or until flan looks firm as in the picture below. Flan will keep cooking while it cools, so do not let longer in the oven. Let it cool.4. Once the flan has cooled run, a knife between the flan and baking pan.
  • Place a large serving plate on top of the pan and invert with a quick move to avoid any liquid caramel to spill from the pan. Slice, serve and enjoy.
