A simple fish pie recipe that's quick and easy to prepare. Portion into ramekins and freeze for quick toddler meals or cook in a big dish for the perfect family supper

Number Of Ingredients 11

1kg Maris Piper potatoes, peeled and halved
400ml milk, plus a splash
25g butter, plus a knob
25g plain flour
4 spring onions, finely sliced
1 x pack fish pie mix (cod, salmon, smoked haddock etc, weight around 320g-400g depending on pack size)
1 tsp Dijon or English mustard
½ a 25g pack or a small bunch chives, finely snipped
handful frozen sweetcorn
handful frozen petits pois
handful grated cheddar

Steps:

  • Heat the oven to 200C/fan 180C/gas mark 6.
  • Put 1kg potatoes, peeled and halved, in a saucepan and pour over enough water to cover them. Bring to the boil and then simmer until tender.
  • When cooked, drain thoroughly and mash with a splash of milk and a knob of butter. Season with ground black pepper.
  • Put 25g butter, 25g plain flour and 4 finely sliced spring onions in another pan and heat gently until the butter has melted, stirring regularly. Cook for 1-2 mins.
  • Gradually whisk in 400ml milk using a balloon whisk if you have one. Bring to the boil, stirring to avoid any lumps and sticking at the bottom of the pan. Cook for 3-4 mins until thickened.
  • Take off the heat and stir in 320g-400g mixed fish, 1 tsp Dijon or English mustard, a small bunch of finely snipped chives, handful of sweetcorn and handful of petits pois. Spoon into an ovenproof dish or 6-8 ramekins.
  • Spoon the potato on top and sprinkle with a handful of grated cheddar cheese.
  • Pop in the oven for 20-25 mins or until golden and bubbling at the edges. Alternatively, cover and freeze the pie or mini pies for another time.

Living by the sea, we try to eat fish often and this hearty meal is an easy way to enjoy a little bit of what you fancy! This fish pie is good enough for a dinner party and the kids love it, too. Serve with a green salad or green steamed vegetables like broccoli.

6 medium potatoes
½ cup butter, divided
1 medium white Spanish onion, chopped
1 ½ cups grated medium Cheddar cheese
1 ¼ cups light cream, or as needed
2 teaspoons Dijon mustard
1 teaspoon lemon juice
salt and ground black pepper to taste
1 ½ pounds white fish - skinned, boned, and cut into chunks
½ pound fresh shrimp, peeled and deveined
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Cut a small slit in each potato and place onto a baking sheet.
  • Bake in the preheated oven until potatoes are easily pierced with a fork, about 1 hour 10 minutes.
  • While the potatoes are baking, melt 4 tablespoons butter in a skillet over medium heat; stir in onion. Cook and stir until onion has softened and turned translucent, about 5 minutes. Mix in Cheddar cheese, cream, mustard, and lemon juice. Season with salt and pepper. Cook, stirring frequently, until sauce is warm and Cheddar has melted, 3 to 5 minutes. Remove from heat.
  • Place white fish and shrimp in a 3 1/2-quart oven-proof baking dish. Pour cheese sauce over the fish; stir until well combined.
  • Scoop the flesh out of the baked potatoes and place in a large bowl; discard the skins. Add 4 tablespoons butter and season with salt and pepper. Mash with a fork until butter has melted and potatoes are smooth. Spread the mashed potatoes evenly over the top of the fish.
  • Bake until sauce is bubbling and potato topping is golden brown, about 55 minutes.

EASY-TO-SCALE CHEESY FISH PIE WITH KALE

Double the ingredients in this easy fish pie if you need to feed four, or quadruple for eight. This comforting dinner is perfect for midweek, and adaptable for any situation

200g Maris Piper potatoes , cut into chunks
1 tbsp butter
1 tbsp flour
200ml whole milk , plus 1 tbsp
½ tsp Dijon mustard
100g cheddar , gruyère or emmental, grated
200g fish pie mix (we used a mix of salmon, haddock and prawns)
50g frozen peas
50g shredded kale
1 spring onion , finely sliced
1 tbsp parmesan , finely grated
green salad , to serve (optional)

Steps:

  • Tip the potatoes into a pan, cover with hot water from the kettle and add a pinch of salt. Simmer for 15-20 mins until tender, then drain and leave to steam-dry.
  • Meanwhile, warm the butter in a heavy-based pan over a low heat. Add the flour and stir until you have a paste. Gradually whisk in 200ml milk until you have a thick white sauce. Simmer for 3-4 mins, stirring. Season, then stir in the mustard and half the cheese, and continue to stir until the cheese has melted. Fold in the fish, peas and kale, and cook for 8 mins more, or until the kale wilts, the fish is just cooked and the prawns are starting to turn pink.
  • Heat the grill to medium-high. Mash the potatoes with the spring onion and 1 tbsp milk. Fold in the remaining cheese and season well.
  • Tip the filling into a heatproof dish and spoon the cheesy mash on top, swirling it with a fork until the filling is completely covered. Sprinkle over the parmesan and grill for 10-15 mins until the pie is golden and bubbling. Serve with a green salad, if you like. Uncooked pie, well covered in the dish, will keep in the freezer for up to three months.

This lovely fish pie is mine and my 2 picky kids favourite dish of all. Nice quick and easy to prepare, perfect for a midweek meal. My own recipe that I have made for years.

1 lb white potato, peeled
300 g white fish fillets, I use cod but can substitute for prawns, salmon, haddock
3 carrots, sliced
1 head broccoli
1 cup corn
butter, and
milk, for mashing
1/2 cup cheddar cheese
2 tablespoons flour
1/2 cup butter
300 ml milk
1 bunch fresh parsley, chopped
1 dash white wine (optional)

Steps:

  • Cut up and boil potatoes in salted water until tender, drain, add milk and butter and mash to a smooth consistency, set aside.
  • Steam broccoli, carrots and corn until tender and set aside.
  • Poach fish in milk until cooked through, set fish aside and reserve milk.
  • To make sauce, make a roux by melting butter in a saucepan, adding flour and mix until well combined, next add the reserved milk a little at a time whisking non stop until all milk is used and well combined. Add chopped parsley and simmer until required consistency is achieved, which should be slightly thick but not gloopy. you can add wine here if using.
  • Put fish into a large oven proof dish and chopinto bite size pieces. Season with salt and pepper. next add vegetables, pour over sauce and top with mashed potatoes. Run the fork over the top of the potatoes to slightly flatten and achieve fork grooves. Finally sprinkle on cheese and place under the broiler until the cheese has melted and the pie warmed through, the longer you leave the crunchier the topping will be. serve with a selection of vegetables if required such as peas.

I got a pack of fish pieces from Asda and thought I'd give making a quick and easy fish pie a try... lots of recipes I found for fish pie have tonnes of ingredients - this is a simple one with just the basics.

5 potatoes
mixed fish, 200g
1 cup peas
1 cup milk
1 tablespoon flour
1 tablespoon mustard
2 tablespoons olive oil
1 small onion

Steps:

  • Put the kettle on and boil enough water for the potatoes.
  • Peal, cut into small chunks and then boil the potatoes in one pan for 10-15 minutes, using knife to tell when tender.
  • Put the oven onto gas mark 6.
  • Dice the small onion then sauté for 1-2 minutes in teaspoon of olive oil in another pan.
  • Then add the packet of fish pie mix and gently fry for 2 minutes in the onions and olive oil, make sure to not let the fish stick.
  • Add the cup of milk.
  • Add the tbsp of flour.
  • Add the tbsp of mustard and stir the milk, flour and mustard thoroughly into the fish mixture. Mustard gives a nice flavour to the sauce without using cheese and also gives it a golden colour, you can omit this if you prefer a handful of cheese.
  • Simmer for 5 minutes on low heat, stir occasionally to not let sitck.
  • Then add cup of peas, stir and take off the heat.
  • Drain potatoes thoroughly, add back to pan, pinch of salt and pepper and put over heat for 2 minutes while mashing to draw out and evaporate last of the water. Mash together with a drizzle (about a tablespoon) of olive oil (add butter if you prefer).
  • Pour fish mix into oven proof dish.
  • Carefully spoon over mash potatos and smooth out. I did a quick cross pattern in the mash to make it fluff up and give a nice texture when golden.
  • Put into the oven for 40 minutes/until golden brown.

Having a chunk of something smoked is definitely a must as far as I like it, it brings a real depth and richness to the dish as well as (again!) making it more sustainable since we have real good smoked fish available to buy online or in supermarkets like haddock or salmon.

450 g mix fish hake, cod loin and haddock
5-6 leaves spring greens i used collard
4 small potatoes thinly sliced (for topping)
1 tablespoon butter
1 teaspoon coconut oil or butter
1/2 medium fennel
3 small celery sticks
3 small shallots
1/2 medium leek
2 cloves garlic
200 ml milk
nutmeg
salt sea salt or himalayan
1 pinch pepper freshly ground
60 g grated cheddar cheese

Steps:

  • 1. Preheat the oven and prepare one big or two smaller ovenproof dishes. You may slightly grease them if you like.
  • 2. Place a pan on medium fire, add a tablespoon of coconut oil, or butter, add the roughly chopped shallots, crushed and chopped garlic and a pinch of salt Cook for 2 min.
  • 3. Add the chopped leeks, celery, fennel and cook for 2 more minutes.
  • 4. Add the spring greens chopped and cook for 1 or 2 more minutes stirring in occasionally.
  • 5. Pour in the milk and cook for 1 further minute. Turn off the heat.
  • 6. Split the fish pieces into two and place those at the bottom of the ovenproof dishes. Sprinkle some salt and freshly ground pepper. I used two dishes but you can just use one.
  • 7. Split the vegetables and layer those into equal amounts over the seasoned fish.
  • 8. Using a mandolin slicer, slice the potatoes and layers those over the fish pie.
  • 9. Place the pies in the preheated oven and cook for 25-30 min at 190C/375F.
  • 10. Take out and add the grated cheese. Cook for a further 10 minutes.
  • 11. Serve while hot along with a nice leafy salad or as it is. Goes well with some homemade crusty bread.
