2 lbs red potatoes, cooked,peeled and cubed (about 6 cups)
2 cups shredded reduced-fat cheddar cheese, divided
2/3 cup diced red bell pepper
2/3 cup canned black beans, rinsed and drained
1/2 cup thinly sliced celery
1/2 cup chopped jicama (optional)
1/3 cup thinly sliced green onions with top
2 tablespoons chopped fresh cilantro
1/2 teaspoon salt
3/4 cup fat free ranch dressing
1/2 cup prepared chunky salsa
fresh cilantro stem (optional)

Steps:

  • In large bowl, combine potatoes, 1 1/2 cups cheese, red bell pepper, beans, celery, jicama, green onions, cilantro and salt.
  • In small bowl, combine dressing and salsa; pour over potato mixture.
  • Toss gently to coat.
  • Chill at least 1 hour before serving.
  • Top with the remaining 1/2 cup cheese; garnish with cilantro sprigs, if desired.

4 pounds potatoes, peeled and cut into 1/2-inch cubes (about 8 cups)
1 tablespoon canola oil
1-1/2 teaspoons salt, divided
1/2 teaspoon pepper
1 can (15 ounces) black beans, rinsed and drained
1 can (4 ounces) chopped green chiles
2 tablespoons minced fresh cilantro
3/4 cup sour cream
3/4 cup mayonnaise
2 teaspoons lime juice
1 teaspoon ground chipotle pepper or 2 teaspoons chili powder
1/2 teaspoon ground cumin
1/4 teaspoon garlic powder

Steps:

  • Preheat oven to 425°. Place potatoes in a greased 15x10x1-in. baking pan. Drizzle with oil; sprinkle with 1 teaspoon salt and the pepper. Toss to coat. Roast until tender, 25-30 minutes, stirring occasionally., In a large bowl, mix potatoes, beans, chiles and cilantro. In a small bowl, combine sour cream, mayonnaise, lime juice, chipotle pepper, cumin, garlic powder and remaining salt. Pour dressing over potato mixture; toss to coat. Serve warm.

Creamy, tangy, and crunchy, with a hint of spice and sweetness from pickles, this reminds me of my grandmother's potato salad served every Easter or any time we had barbecue. She always dotted it with olives for a finishing touch and a perfect briny addition. This is the best classic version of good old-fashioned, Southern-style potato salad. Not too mayonaissey with just the right amount of tang! Serve with grilled or smoked meats as the perfect side dish.

5 pounds russet potatoes, peeled
4 teaspoons kosher salt, divided, or to taste
4 large eggs
1 cup mayonnaise
⅓ cup sour cream
3 tablespoons yellow mustard
5 stalks green onions, sliced (white and green parts)
2 stalks celery, finely chopped
1 tablespoon chopped fresh dill
½ cup chopped spicy sweet dill pickles (such as Wickles™), plus 2 teaspoons pickle juice
¾ teaspoon ground black pepper
¼ teaspoon ground paprika
¼ cup sliced green olives with pimientos

Steps:

  • Cut potatoes into 1 1/2-inch pieces. Place in a large pot and add water to cover by 2 inches. Add 3 teaspoons salt and eggs; bring to a boil over medium-high heat.
  • Reduce heat and simmer 9 minutes. Remove eggs to an ice bath. Drain potatoes when fork-tender; they may need another minute or so.
  • Peel and chop eggs and set aside.
  • Combine mayonnaise, sour cream, mustard, onions, celery, dill, pickles, juice and pepper in a large bowl; stir to combine. Stir in potatoes and eggs until well blended, mashing potatoes very slightly. Check for seasoning and add up to 1 teaspoon salt if desired.

I was getting tired of all the potato salads. Yummy as they all are, they all started to taste the same. So, I came up with a twist on potato salads when my oldest granddaughter Isis said," grandma, you should make a potato salad that tasetes like a taco." Great idea! And so I did! I think it DOES taste like a taco, but better!

3 lb red-skinned potatoes, cut into cubes
2 c hellman's light mayonnaise
1 pkg taco seasoning packet
1 c mexiacn-style shredded cheese
1/2 c sliced scallions
1 large can, sliced black olives, drained
1 c crushed taco or nacho flavored baked tortilla chips

Steps:

  • 1. Place potatoes in lg pot, fill w/ water until just covered. Bring to a boil. Cook about 12-15 mins, or until potatoes are just fork-tender.
  • 2. Drain potatoes and let cool completely. Place cooled potatoes in a lg bowl, set aside. In another bowl, whisk together the mayonnaise and taco seasoning packet.
  • 3. Add seasoned mayonnaise to potatoes, along with remaining ingredients, except crushed chips. Mix gently until combined, Refrigerate unti ready to serve. When ready to serve: sprinkle crushed chips over salad.

5 potatoes
3 eggs
1 cup chopped celery
½ cup chopped onion
½ cup sweet pickle relish
¼ teaspoon garlic salt
¼ teaspoon celery salt
1 tablespoon prepared mustard
ground black pepper to taste
¼ cup mayonnaise

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool, peel and chop.
  • Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
  • In a large bowl, combine the potatoes, eggs, celery, onion, relish, garlic salt, celery salt, mustard, pepper and mayonnaise. Mix together well and refrigerate until chilled.
