1 pound ground beef, cooked and drained
1 package (14 ounces) coleslaw mix
2 tablespoons soy sauce
1/2 teaspoon garlic powder
1/4 teaspoon ground ginger
Onion powder to taste
40 egg roll wrappers
1 tablespoon all-purpose flour
Vegetable oil for frying

Steps:

  • In a small bowl, combine the first six ingredients. Place a heaping tablespoonful of beef mixture in the center of one egg roll wrapper. (Keep remaining wrappers covered with a damp paper towel until ready to use.) Fold bottom corner over filling. Fold sides toward center over filling. , In a small bowl, combine flour and enough water to make a paste. Moisten top corner with paste; roll up tightly to seal. Repeat. In an electric skillet, heat 1 in. of oil to 375°. Fry egg rolls for 3-5 minutes or until golden brown.

Easy Chile Relleno Egg Rolls image

I love chile rellenos, but they can be time consuming to make from scratch. This is a fast fix! Feel free to spoon your favorite ranchera sauce over the top if serving with rice and beans. This recipe comes from my 76-year-old Japanese mother, who learned it from a Filipino lady she used to work with back in the early 80s. If using wonton wrappers, you can serve these as appetizers. Enjoy!

2 (12 ounce) packages egg roll wrappers
1 (27 ounce) can whole green chiles - seeded, drained well, and patted dry
1 pound Monterey Jack cheese, cut into 3x1/2-inch thick strips
vegetable oil for frying

Steps:

  • Lay a wrapper on a work surface diagonally so it resembles a diamond. Place a slice of green chile horizontally across the wrapper, 1 inch above the bottom point. Place a strip of Monterey Jack cheese on top of the chile.
  • Fill a small bowl with water. Dip an index finger into the water and moisten the edges of the wrapper. Roll the wrapper up and over the chile and cheese, starting from the point closest to you. Bring in both sides, making sure to press firmly to seal the filling. Roll away from you and to enclose the yumminess inside. Repeat with remaining wrappers, chiles, and Monterey Jack cheese.
  • Heat approximately 1/2 inch of oil in a deep frying pan over medium heat. Carefully lay a few egg rolls into the hot oil. Fry, turning once, until golden brown on both sides, 2 to 3 minutes. Watch carefully to prevent burning. Repeat with remaining egg rolls.
  • Transfer fried egg rolls to a plate lined with paper towels and let cool for a few minutes before serving.

Easy Chicken Egg Rolls image

I like this recipe because it uses already prepared ingredients found in your produce department with the packaged salad greens. Great egg rolls without all the work for those after work meals. (of which I need often) Leave the chicken out for vegetarian egg rolls or substitute shrimp for seafood eggrolls. Keep the oil hot and fry quickly to keep egg rolls from becoming greasy. They only need to brown and crisp, not cook. Frying only 3 or 4 at a time while rolling the others will make it easier to keep track of both the rolling and frying at the same time (unless you have a helper in your kitchen to do one or the other). Serve with my easy sweet and sour dipping sauce (recipe #112947) for a real taste treat. Since preparation (rolling) and cook time can be done at the same time, times are approximate. 2 cups chicken, cooked and shredded
1 cup finely diced onion
3 garlic cloves, minced
2 tablespoons cooking oil
2 (16 ounce) bags packaged coleslaw mix, with shredded carrots
1 (12 ounce) bag bean sprouts
1 (8 ounce) can water chestnuts, diced
1/2 cup bottled teriyaki marinade
1/4 cup soy sauce
24 egg roll wraps
hot oil (for frying)

Steps:

  • Cook onion and garlic in the 2 tablespoons cooking oil until the onions are tender but not browned.
  • Add the chicken, packaged coleslaw mix, bean sprouts, teriyaki sauce and soy sauce to the onions and garlic; mix well.
  • Cover and steam for 5 minutes.
  • Remove from heat and stir in the water chestnuts; drain the liquid from the chicken and cabbage mixture; taste and season with salt if desired.
  • Heat 1 1/2 inches of vegetable oil in a wok or large frying pan.
  • While oil heats, wrap about 1/4 cup of the chicken and cabbage mixture in egg roll wraps, rolling tightly and sealing edges with beaten egg.
  • Fry until a deep golden brown, a few at a time; drain on paper towels.

1 teaspoon grated gingerroot
1/2 teaspoon five-spice powder
1 small onion, chopped (1/4 cup)
2 cloves garlic, finely chopped
18 frozen (thawed) phyllo sheets (18x14 inches)

Steps:

  • Heat oven to 350°F. In 10-inch skillet, cook turkey over medium-high heat, stirring occasionally, until no longer pink; drain. Stir in remaining ingredients except phyllo and cooking spray. Cook 2 to 3 minutes, stirring occasionally, until coleslaw mix is wilted.
  • Cover phyllo sheets with plastic wrap, then with damp towel to keep them from drying out. Place 1 phyllo sheet on cutting board; spray with cooking spray. ½ teaspoon ground cinnamon
¼ teaspoon ground allspice

Steps:

  • In a large bowl, mix the peach pie filling, cinnamon, allspice, cloves, ginger, nutmeg, pumpkin pie spice, and salt.
  • Spread one side of each egg roll wrapper with about 1 tablespoon cream cheese. Top cream cheese with 1 tablespoon of the pie filling mixture. Fold the wrappers over the mixture. Moisten the ends with a small amount of water, and seal.
  • Heat the oil in a large skillet over medium-high heat. Drop the egg rolls a few at a time into the hot oil. Fry until golden brown. Drain on paper towels.
  • In a bowl, mix the raspberry jam, honey, and remaining water. Add more water as necessary to obtain a syrup like texture. Serve the warm egg rolls over ice cream, top with the raspberry jam mixture, and sprinkle with confectioners' sugar.

2 garlic cloves, minced

vegetable oil
1 (18 ounce) jar orange marmalade
1/2 cup white vinegar
2 tablespoons sugar
1 tablespoon soy sauce

Steps:

  • Make the sauce: bring all sauce ingredients to a boil in a small saucepan over medium heat.
  • Cook 2-3 minutes or until marmalade melts; remove from heat and let stand for 30 minutes; serve at room temperature.
  • Make the egg rolls: Brown sausage in a large nonstick skillet over med-high heat, stirring until sausage crumbles and is no longer pink; drain well.
  • Return sausage to skillet; stir in ginger and garlic; cook 1 minute.
  • Add in coleslaw mixture; cook, stirring occasionally, 3 minutes or until coleslaw mix is tender; let stand 30 minutes to cool.
  • Spoon ¼ cup sausage mixture in center of each egg roll wraper.

3 tablespoons soy sauce, divided

3 tablespoons curry powder
1 tablespoon red curry paste (such as Thai Kitchen®)

Steps:

  • Heat 1 tablespoon olive oil and 1 tablespoon soy sauce in a large saucepan over medium heat. Add chicken and cook until no longer pink, 3 to 5 minutes. Add cabbage, onion, and carrot; cook, stirring occasionally, until softened.
  • Mix remaining soy sauce, mayonnaise, curry powder, curry paste, garlic, and chile powder together in a bowl. Fold into the chicken mixture.

4 green onions, chopped
1 1/2 cups bean sprouts
1 tablespoon white wine
2 tablespoons oyster sauce
2 tablespoons soy sauce
8 1/2 ounces baby shrimp
1 tablespoon cornstarch
20 egg roll wraps

Steps:

  • Preheat oven to 400°F.
  • Heat oil in a wok or large pan over medium-high heat. Add coleslaw, green onions, bean sprouts, wine, oyster sauce, soy sauce, and shrimp. Stir-fry for about 2 minutes, until cabbage is wilted. Mix cornstarch with 1 tablespoons cold water and add. Stir for about 1 minute, until sauce is thickened.
  • Spray a cookie sheet with cooking spray. Place 1/4 cup of the mixture on the middle of an eggroll wrapper, turned like a diamond.
  • Fold the bottom corner up, over the filling. Fold in the two sides, then roll upwards. Put a dab of water on the corner to help it stick. Place on the pan seam down.
  • Repeat until you run out of the mixture, about 20 rolls. Eggrolls can be close, but not touching. Spray the tops with cooking spray and bake for 15 minutes, until golden brown. Serve with sweet & sour sauce or spicy mustard.

EASY CHINESE EGG ROLLS

I don't know what's happening to all the Chinese restaurants in my town, but they're all closing up! I'm originally from D.C. and LOVE good Chinese food. I was jonesing for egg rolls and decided to try making my own. And they were YUMMY! I hope you enjoy them as much as we did.

1 lb. ground pork
1 small onion, chopped fine
5 cups packaged cabbage/cole slaw mix
1 tbsp. oyster sauce
1 tsp. ginger in a tube (found in produce dept. of grocery)
salt & pepper to taste
15 egg roll wraps
1 quart oil for frying
3 cloves of garlic finely minched, or 1 tsp. garlic powder
2 eggs scrambled and mashed up, optoinal

Steps:

  • 1. In a little bit of oil, saute onions until tender. Then add pork and saute until browned or done. Add garlic,ginger, salt & pepper and mix well, letting the flavors settle. Add oyster sauce and mix again. Then add cabbage and cook for about 3-5 minutes according to your desired "crunch factor." Fill egg roll wraps by starting with the corner closest to you and add about 2 tbsp. of filling. Wet each end, roll the mixture in the wrap once, fold in the sides, and continue to the end of the furthest corner, making sure the wet ends stick to each other.   • 2. Heat oil to 350-360 degrees. NOTE: Make sure oil is hot enough or egg rolls will be greasy. Deep fry 1-3 egg rolls at a time until they are light brown. They will look darker after you take them out of the oil. Drain on paper towels. AGAIN, make sure that all openings in the egg roll are sealed with water and stay closed or the egg rolls will be greasy.
  • 3. You can by Duck sauce already made or make your own with apricot jam, a little light corn syrup and some water to make it your desired consistency. If you make your own, I recommend putting a tad of ginger in it for some extra flavor.

3 -4 slices Steak-ums
1/4 cup sliced onion
1 teaspoon salt
1 egg
1 tablespoon milk
1 cup cheddar cheese
egg roll wrap
vegetable oil (for deep frying)

Steps:

  • In a frying pan, cook the steak-umm and onion in two tablesspoons of vegetable oil.
  • Season with salt and pepper.
  • Once cooked, chop up the steak and onion. Set aside in bowl.
  • Whisk together the milk and egg to form an egg-wash.
  • Brush the edges of the wrapper with the egg-wash.
  • Place two spoonfuls of the steak and onion in the center of the wrapper.
  • Generously sprinkle with cheese.
  • Fold according to directions. Set aside. Fill and fold the other wrappers.
  • Deep fry for 2 1/2 minutes. (Trick: Turnover every 30 seconds to keep eggroll from getting top heavy with oil.).

8 ounces deli roasted chicken breast, shredded
1/2 cup green onion, sliced
3 tablespoons reduced sodium soy sauce
3/4 teaspoon ground ginger
1/2 teaspoon garlic powder
1 (16 ounce) package refrigerated egg roll wraps
cooking oil (for frying)
bottled sweet and sour sauce

Steps:

  • Preheat oven to 300°F
  • In large bowl, toss together coleslaw mix, chicken, onion, soy sauce, ginger and garlic powder.
  • Spoon about 1/3 cup of the chicken mixture across and just below center of each egg roll wrapper.
  • Fold bottom corner over filling, tucking it under on other side.
  • Fold side corners over filling, forming an envelope shape.
  • Roll egg roll toward remaining corner.
  • Moisten top corner with water; press firmly to seal.
  • Repeat with remaining chicken mixture and egg roll wrappers.
  • In heavy saucepan or deep-fat fryer, heat about 2 inches of oil to 365°F
  • Fry egg rolls, 2 or 3 at a time, 2 to 3 minutes or until brown, turning often.
  • Drain on paper towels.

2/3 cup baby carrots, grated

1 1/2 tablespoons Hidden Valley Original Ranch Seasoning Mix
1 1/2 tablespoons soy sauce
1 teaspoon fresh ginger, grated
1 large garlic clove, mashed
1 tablespoon white wine
2 teaspoons cornstarch
1 teaspoon sugar
2 green onions, chopped
4 ounces fresh spinach, chopped
20 egg roll wraps
nonstick cooking spray
1/2 cup plain Greek yogurt
2 tablespoons sour cream
1 tablespoon soy sauce
2 tablespoons plum sauce
1 tablespoon Hidden Valley Original Ranch Seasoning Mix

Steps:

  • In a large skillet over medium heat, saute for 2 minutes shallots and baby carrots, stirring often. Add chicken breast, Hidden Valley Ranch Original Seasoning Mix, soy sauce, ginger, garlic, white wine, corn starch and sugar. Stirring often cook this mixture for about 7 to 8 minutes. Remove from heat and stir in green onions and spinach. Set aside to cool completely. This could be made the day or morning before.
  • Preheat oven to 400 degrees.
  • On the Egg Roll Wrapper package there is a diagram and instructions on how to assemble. If that isn't handy, here is my best description:.
  • 1) Take one wrapper and place it on a work surface in front of you with one corner facing you.
  • 2) In the middle put 1/4 cup of the cooled filling. Pull up the bottom corner and cover filling completely.
  • 3) Bring both sides in to the middle. Wet the remaining end with water, using your finger and roll the roll forward towards the wet end and seal.
  • 4) Place seam side down on a non stick sprayed baking sheet. Continue until all filling is used.
  • Spray all the tops with non stick spray. Bake for 15-20 minutes until nicely browned.
  • Mix sauce ingredients in a small bowl and dip, eat, dip, eat.
  • Delicious!

1/4 tsp cornstarch
oil for frying

Steps:

  • 1. brown ground pork, drain. add chopped onion and fry together stirring frequently until onions are transparent. add cole slaw mix and mix well, lower heat and cover for 10 min. (let it steam) uncover, stir then add soy sauce incorporating well.add garlic, salt and pepper to taste. Put aside.let cool.
  • 2. mix cornstarch with water. wrap in egg rollwrappers. seal with water. fry in hot oil until light brown, Drain. (be careful, they brown quickly)

1 lb ground beef, cooked and drained
1 (16 ounce) package coleslaw mix
2 tablespoons soy sauce
1/2 teaspoon garlic powder
1/4 teaspoon ground ginger
onion powder, to taste
2 (16 ounce) packages egg roll wraps
1 tablespoon all-purpose flour
vegetable oil (for frying)

Steps:

  • In a bowl, combine the first six ingredients; mix well. Place an egg roll wrapper on work surface with one point facing you. Place a heaping tablespoon of beef mixture in center. Fold bottom third of wrapper over filling. Fold in sides.
  • In a small bowl, combine flour and enough water to make a paste. Moisten top corner with paste, roll up tightly to seal. Repeat with remaining wrappers and filling.
  • In an electric skillet, heat 1 inch of oil to 375*. Fry egg rolls for 3-5 minutes or until golden brown.
  • Note: Fill egg roll wrappers one at a time, keeping the others covered until ready to use.
  • Egg rolls can be reheated in a microwave for 2 1/2 to 3 minutes.

15 egg roll wraps
5 ounces chicken breasts
2 cups bagged coleslaw mix
1 teaspoon minced ginger
1 teaspoon minced garlic
3 teaspoons low sodium soy sauce
cooking spray

Steps:

  • In a food processor, combine chicken breast, garlic, ginger, and soy sauce. Process until the chicken is ground to the consistency of ground beef.
  • Spray a pan with cooking spray and brown the chicken. Add the cabbage and carrots and cook until it is translucent.
  • Put wrappers in front of you with one point facing you, put about 1 or 1 1/2 teaspoons of filling in the center. Fold in both sides and roll from bottom to top. Brush a little water on the far corner to make them stick.
  • Spray each roll with cooking spray and place on a baking sheet. Bake for 12 minutes, turning about half way through.

I saw this on Dinners Drive -Ins & Dives on Food Network. I didn't cook my pork the way he did. But they were still so good. I think it would be good with Chicken and Pepper Jack cheese as well

1 boneless pork roast
1 pkg egg roll wrappers
1 pkg sliced swiss cheese
1 pkg sliced ham ( black forrest or smoked)
1 bunch green onions
oil for deep frying
1 pkg pork flavored gravy ( for dipping sauce)

Steps:

  • 1. I cooked my pork in my crock pot, season the way you like it. When done let cool some to where it is easy to shred,
  • 2. Place egg roll wrapper on cutting board, layer a slice of cheese, then ham, then some pork, top with a couple of slices of the green onions( i washed my onions and cut half the greens off, then sliced it down 4 times to make thin strips)
  • 3. Brush wrapper around edges with egg wash or water, rolls egg roll then fold in the ends, deep fry until golden brown, roll around some for even cooking, about 3 minutes total
  • 4. Make the pork gravy as directed ( i used 3/4 water then thinned down with 1/2 cup of the broth from the pork)
  • 5. 03/15/12 I made these tonight and I used Curly's pulled Pork ( sauceless) instead of making a roast, I think it was better with this pork, and I also thinned my gravy down with some soy sauce, was really good.

Love to make these & freeze for an easy pull out side when we fix an Asian dish. You can add pork, shrimp or beef or just leave it with the veggies. I use whatever meat I have in fridge as a leftover. We also often use spring roll wrappers.

1 (16 ounce) bag coleslaw mix
1 medium onion, diced
soy sauce
3 tablespoons oil
1 egg

Steps:

  • Use deep frying pan, add oil, coleslaw mix and onion, meat optional, cook until small and translucent, place 2 heaping T. in middle of eggroll fold according to directions.Beat egg add to final flap to seal well. Drop in deep fryer or large frying pan with cooking oil at 375 for 2-3 mins until golden brown. If you don't want to fry all of them you can make them and freeze them, cooking time will change due to being frozen usually 6-8 minutes.

1 (1 lb) package prepared egg roll wrap (about 18 rolls)
2 cups shredded cooked pork
1 (4 ounce) can canned shrimp
1 (8 ounce) can water chestnuts
2 celery ribs
3 medium radishes
5 scallions
2 cups shredded cabbage
2 medium carrots
1 cup bean sprouts
1 teaspoon grated ginger
1 teaspoon garlic powder
1 teaspoon salt (or to taste)
1 teaspoon cumin
1 teaspoon tarragon
1 teaspoon black pepper
2 tablespoons olive oil

Steps:

  • (note: shredding to fine will result in mushy texture) With a small food processor shred the pork, celery, radishes, and scallions together.
  • Put in big bowl.
  • Rinse the water chestnuts and shrimp in cold water before using.
  • Then shred the water chestnuts and shrimp.
  • Put with pork mix.
  • Then the shred the cabbage and carrots together to make 2 cups of mix.
  • Put in with the pork mix.
  • Shred the bean sprouts on a quick pulse and add to mix.
  • Add all your spices and stir and taste.
  • If you think it needs something more (i. e. salt, garlic, whatever, season it to your taste.) Lay egg roll wrapper flat and put on a loose 1/3 cup of filling (don't pack it) in center and arrange it in a small log, fold sides over and start to roll.
  • Place on greased cookie sheeat sides not touching.
  • Brush tops of egg rolls lightly with oil and bake.
  • Bake at 375 degree oven for 30 minutes.

1 cup chopped cooked meat, poultry or 1 cup shrimp
1 1/2 tablespoons minced fresh ginger
2 garlic cloves, minced
1 teaspoon seasoned pepper
1/2 teaspoon salt
1 (16 ounce) package egg roll wraps
vegetable oil (for frying) or cooking spray, for optional baking method

Steps:

  • Stir together the first 6 ingredients.
  • Brush water around outer edge of each egg roll wrapper. Spoon 1/3 cup filling in center of each egg roll wrapper. Fold bottom corner over filling, tucking tip of corner under filling; fold left and right corners over filling. Tightly roll filled end toward remaining corner; gently pressing to seal.
  • Frying Method: Pour oil to depth of 3 inches in a dutch oven; heat to 375 degrees. Fry egg rolls in batches 3-4 minutes or until golden brown; drain on paper towels. Serve immediately.
  • Baking Method: Preheat oven 425 degrees. Spray each roll, front and back, with cooking spray or lightly brush with a pastry brush vegetable oil. Bake for 10-14 minutes turning about halfway through until lightly browned. Serve immediately.
