Steps:
- Position knife blade in food processor bowl; slowly drop half each of dates and raisins through food chute with processor running.
- Remove date mixture; repeat procedure with remaining dates and raisins.
- Turn date mixture out onto wax paper; knead in pecans.
- Shape into a 12-inch log, and roll in coconut.
- Chill and thinly slice.
- Yield: one 12-inch log.

- In a bowl, combine 2 cups of graham cracker crumbs, marshmallows, dates and walnuts. Stir in cream; mix thoroughly. Shape into a 14x3-in. log. Roll in remaining crumbs. , Wrap tightly in plastic wrap or foil. Refrigerate at least 6 hours or overnight. Slice; garnish with whipped cream if desired.

Steps:
- 1. Chop dates. (Do not buy or use dates that are already chopped.)
- 2. Combine sugar, milk, and dates in a large saucepan. Cook over medium heat, stirring constantly until mixture reaches soft ball 234 degrees.
- 3. Remove from heat. Stir in butter and nuts. Stir until candy starts to thicken. Divide candy in half, by shaping it into logs on two damp tea towels. roll and shape into 10"X2" logs. Let cool. Slice to serve.
MOM'S GRAHAM CRACKER DATE NUT ROLL

- Combine ½ of the crumbs with dates, marshmallows, nuts, whipped cream and vanilla.
- Place mixture on a large piece of wax paper.
- Shape into a roll about 3" in diameter.

- Chill 12 hours or longer.
- Serve in ¾-inch slices topped with whipped cream.

- combine the marshmallows, dates, crumbs and walnuts.
- add enough heavy cream to bind all ingredients together.
- shape into a roll about four inches in diameter, and roll in the extra finely crushed crumbs.
- roll in plastic wrap, and then in foil.
- refrigerate for several hours before serving.
- cut into slices.
- note: this roll can be prepared days in advance.

DATE NUT ROLL
Another recipe that my wonderful mom made every year for the holidays. I remember a long object rolled up in a kitchen towel, hanging from the clothes line, and this year I found out it was the date nut roll, hung out to dry. I guess it's part of the process. So this year mom came for Thanksgiving and I documented the recipe, of course adjusting for those without a closeline.

Steps:
- Mix the sugar and vanilla in a medium saucepan on medium heat.
- Boil gently until mixture reaches 240 degrees.
- Take off the heat, and add rest of ingredients, stir well.
- The mixture will thicken as it cools.
- Pour onto dampened cloth or waxed paper forming a log.
- Allow to cool or refrigerate.
- If desired, coat with chopped nuts or powdered sugar and slice.
