This is my mom's recipe - it's very quick to make. I used to make this in college every Friday during Lent. You can make the curry start to finish in the time it takes the rice to cook. The amount of curry and ginger is the starting amount; I use up to twice that much, but adjust it to taste.

3 tablespoons butter
2 teaspoons curry
1/4 cup onion
1/8 teaspoon dried ginger or 1 teaspoon fresh ginger
3 tablespoons flour
1 cup chicken broth
1 cup milk
3/4 teaspoon salt
3/4 teaspoon sugar
2 teaspoons lemon juice
8 ounces shrimp

Steps:

  • Melt butter with curry, onion, and ginger and cook until onion begins to soften.
  • Add the flour and stir to combine with butter.
  • Add the broth, milk, salt, sugar and lemon and stir to combine with flour.
  • Bring to a simmer and add the shrimp.
  • Simmer until the shrimp is cooked.
  • Serve over rice.

1 tablespoon butter
2 teaspoons curry powder
3/4 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon ground coriander
1/4 teaspoon ground cinnamon
1 cup light coconut milk
1 pound uncooked large shrimp, peeled and deveined
1/3 cup chopped dried apricots
2 cups hot cooked brown rice

Steps:

  • In a large skillet, melt butter. Add the curry, cumin, salt, garlic powder, coriander and cinnamon; cook over medium heat until lightly browned. Stir in coconut milk. Bring to a boil. Reduce heat; simmer, uncovered, for 3-4 minutes or until thickened., Add shrimp; cook and stir for 2-4 minutes or until shrimp turn pink. Stir in apricots; heat through. Serve with rice.

2 tablespoons butter or 2 tablespoons vegetable oil
2 -3 tablespoons curry powder
1 cup finely chopped onion
1 cup finely chopped celery
2 cloves garlic, minced
1 lb fresh shrimp, cleaned
1 tablespoon all-purpose flour
1 cup sour cream
1/2 cup whipping cream

Steps:

  • In a large non-stick fry pan, melt butter, stir in curry powder and cook and stir for 5 minutes to develop flavor of the curry powder.
  • Add the onion, celery and garlic; cook and stir until onion is softened.
  • Add shrimp and cook for 3 to 4 minutes until shrimp have turned pink and are almost cooked.
  • Stir in the flour until it has been absorbed.
  • Add sour cream and whipping cream, stirring all the time until mixture comes to a boil and thickens.
  • Seve immediately over rice.

1 1/2 lbs uncooked medium shrimp (peeled and deveined)
1 tablespoon minced fresh ginger
1 -2 tablespoon fresh minced garlic (or to taste)
1 tablespoon sesame oil
1/2-1 teaspoon dried chili pepper flakes (optional add in for more heat)
1 medium red bell pepper, seeded and chopped
1 -2 teaspoon Thai red curry paste (or to taste)
1 teaspoon curry powder (or to taste)
1 (15 ounce) can coconut milk
2 tablespoons soy sauce
1 tablespoon brown sugar
black pepper
salt (optional)
chopped green onion (optional)
cooked rice

Steps:

  • In a bowl combine the peeled shrimp with ginger and garlic; toss to combine.
  • Heat sesame oil in a large skillet (or wok) over medium-high heat.
  • Add in shrimp and cook for 3-4 minutes or until pink, stirring occasionally (the shrimp will not be cooked through) remove to a plate and set aside.
  • Add in the bell pepper, curry paste and curry powder (and chili flakes if using) to the skillet; cook for 2 minutes stirring occasionally.
  • Stir in coconut milk, soy sauce and brown sugar; cook stirring for about 3 minutes or until the curry paste dissolves.
  • Add in the partially cooked shrimp back into the skillet, season with black pepper and salt if desired and cook for 2 minutes.
  • Serve over hot cooked rice.
  • Sprinkle with chopped green onions if desired.

400 ml coconut milk
1 tablespoon hot curry paste (or curry powder and ground cumin)
1 large onion
3 plum tomatoes
1 lb peeled uncooked frozen shrimp
1 celery, chopped
2 green onions, chopped
1/2 cup chopped fresh coriander
1 1/2 teaspoons lime juice

Steps:

  • Pour coconut milk into a large, wide frying pan and set over medium heat. Stir in curry paste. Finely chop onion and stir into sauce. Slice tomatoes in half. Squeeze out and discard seeds. Coarsely chop. Then stir into gently boiling sauce. Stir often, uncovered until sauce thickens, 7-10 minute Meanwhile, defrost shrimp according to package directions. Pat dry with paper towels.
  • Once sauce is almost as thick as you like, stir in shrimp and celery. Stir until shrimp are bright pink, 3-5 minute Remove from heat. Stir in green onions, coriander and lime juice. Taste and stir in salt or more lime juice if needed. Excellent served over jasmine rice.

1/4 cup vegetable oil
1 large onion, chopped
10 fresh curry leaves (optional) or 10 curry powder
1 tablespoon minced fresh ginger
1 tablespoon minced garlic
1 teaspoon ground coriander
2/3 teaspoon salt
1/2 teaspoon ground turmeric
1 tomatoes, finely chopped
1 teaspoon ground red chili pepper
2 lbs medium shrimp, peeled and deveined
1/4 cup water (or less if adding frozen cooked shrimp)
1 teaspoon garam masala
chopped fresh cilantro

Steps:

  • Heat the oil in a wok or large saucepan over nearly high heat.
  • Add the onions; cook and stir until browned.
  • Mix in the curry leaves (or curry powder), then season with the ginger, garlic, coriander and salt.
  • Cook and stir for 1 minute.
  • Season with salt and turmeric, then mix in the tomato, chile powder, shrimp and water.
  • Reduce the heat to medium-high and cook for 7 to 8 minutes, until shrimp are opaque.
  • Taste and adjust salt and chile powder if necessary.
  • Season with garam masala, stir and remove from the heat.
  • Garnish with fresh cilantro and serve with flat bread or rice.
