175g plain flour
3 large eggs
450ml milk
sunflower oil , for frying

Steps:

  • Weigh the flour in a large jug or bowl. Crack in the eggs, add half the milk and a pinch of salt. Whisk to a smooth, thick batter. Add the remaining milk and whisk again. Set aside for at least 30 mins.
  • Heat a large non-stick crêpe pan or frying pan. Add a drizzle of oil, then wipe out the excess with kitchen paper. When the pan is hot, add enough batter to just cover the surface, swirling it and pouring any excess back into the bowl. The pancake should be as thin as possible. When the edges are peeling away from the sides of the pan, shake it to see if the pancake easily releases and is browning on the underside. If not, cook a little longer. Flip and cook the other side for a minute or two. Serve, or keep warm in a low oven.

1 cup all-purpose flour
¼ teaspoon salt
3 eggs
1 ¼ cups milk, 1% or 2%
2 tablespoons butter, melted
5 tablespoons butter
4 cloves garlic, minced
2 teaspoons chopped fresh thyme
2 ½ cups shredded rotisserie chicken
⅓ cup herb and garlic cream cheese
2 tablespoons chopped fresh parsley

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Crepes: In a bowl, combine flour and salt. In a separate bowl, whisk together eggs, milk and melted butter. Whisk egg mixture into flour mixture until smooth. Cover and refrigerate for 1 hour. Strain mixture into a clean bowl.
  • Heat a small non-stick skillet or crepe pan over medium heat. Brush pan with some oil.
  • Pour approximately 1/4 cup batter into centre of pan, swirling pan to coat. Cook for about 1 minute or until bottom is a light golden colour. Flip and cook for 30 seconds. Transfer to plate. Repeat with remaining batter. (Make-ahead: Stack crepes between waxed paper, wrap and refrigerate for up to 3 days or freeze for up to 1 month.)
  • Chicken and Garlic Filling: In a skillet, melt 3 tablespoons of the butter over medium high heat with garlic and thyme. Add chicken and cook, stirring for 5 minutes or until heated through. Stir in cream cheese until melted and smooth. Remove from heat and divide the chicken mixture into centre of each crepe and fold over. Place in shallow casserole dish, overlapping slightly. Melt remaining 2 tablespoons butter and drizzle over stuffed crepes.
  • Place in preheated oven for about 10 minutes or until warmed through. Sprinkle with parsley before serving.

I made these for the very first time yesterday, and I must say how absolutely DELICIOUS they were! Good enough to eat alone, without any fillings really. They're super easy, and a great breakfast or brunch item. Enjoy!

1 1/2 cups whole milk
3 eggs
3 tablespoons sugar
1 teaspoon salt
4 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
1 cup flour

Steps:

  • In a blender, combine milk and eggs, blend until foamy, approx 20 seconds or so. Turn off.
  • Add sugar and salt, blend for a few seconds turn off.
  • Add melted butter and vanilla, blend a few seconds turn off.
  • Add flour, blend until all mixed.
  • Okay now for cooking them, this is what I did --
  • I had a small tefal frying pan, (measured 6-1/2 on bottom, 9-1/2 or so across top) I sprayed it with non-stick Butter Flavor cooking spray. Heat it on medium-high heat.
  • Use a 1/3 cup measuring cup and dump crepe mixture into pan, swirl around real quick to coat bottom of pan.
  • I used a silicon spatula to lift edges of crepe and to form round if any stray edges -- it will start to bubble, not much, but its safe to flip when you see edges on underside becoming brown. Just flip with plastic spatula.
  • So once first side cooked, flip and cook about 2 minutes or so, transfer to plate and continue with rest of batter.
  • *** Each crepe I made, I sprayed pan with butter cooking spray. So when I took crepe out, i sprayed bottom of pan before putting next cup of batter, do each time.
  • Serve with powdered sugar, jam, fruits any filling of your choice!
  • *** For chocolate crepes, add two tablespoons of chocolate syrup to blender when adding in vanilla.
  • *** For saltier crepes to make with meat or veggies, omit sugar and vanilla.

This is a recipe that was given to me a couple of years ago. My hubby really loves it especially when I use rotisserie chicken as part of the filling versus just chicken breast. These crepes cook very quickly so don't wander too far from the stove while cooking. They also freeze very well!

2 tablespoons oil
¼ teaspoon salt
2 (10.5 ounce) cans condensed cream of chicken soup
3 ½ cups shredded roasted chicken
1 cup shredded Cheddar cheese
⅔ cup milk
1 (4 ounce) can sliced mushrooms, drained
⅓ cup sliced almonds

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
  • Whisk milk, flour, eggs, 2 tablespoons oil, and salt together in a bowl until well combined.
  • Heat a nonstick 10-inch skillet or crepe pan over medium-high heat until hot. Pour about 1/4 to 1/3 cup batter into the hot pan and immediately tilt the pan so the batter covers the bottom. Cook until the edges start to dry and the center is just about set, 1 to 3 minutes. Flip and repeat to brown the other side. Transfer to a sheet of waxed paper and repeat to make remaining crepes. Stack crepes between layers of waxed paper while you make the filling.
  • Stir condensed soup, chicken, Cheddar cheese, milk, and mushrooms together in a large bowl until blended. Spoon about 1/3 to 1/2 cup chicken mixture down the side of one crepe. Roll the crepe, tucking in the sides as you roll. Repeat to stuff remaining crepes.
  • Place crepes with seams facing down in the prepared baking dish. Pour remaining soup mixture over top and sprinkle with sliced almonds.
  • Bake in the preheated oven until hot and bubbly, 20 to 30 minutes.

1 1/2 cups Wondra Flour
4 tablespoons melted butter
4 large eggs
1 cup water
1 cup milk
1/2 teaspoon salt

Steps:

  • Place water, milk, flour, eggs and salt into blender (in that order makes it easier to scrape the unmixed flour off the sides) and blend at lowest setting.
  • After 30 seconds pour in melted butter and continue to blend at lowest setting for two minutes (make sure to stop the blender after about 15 seconds and scrape any unmixed flour off the sides).
  • Warm a non-stick crepe pan (8" or 10" pans are the best size) over medium heat.
  • Starting with the crepe pan already tilted, pour in 1/4 cup to 1/3 cup of batter (depending on pan size) and quickly tilt the pan spreading the batter to the edges (this should make for a nice thin crepe).
  • Once the edges start to curl up slightly, inspect the under-side to see if it's a light golden-brown.
  • This step is up to you, but some people like to flip the crepe for about 10-15 seconds just to give it a more "finished off" look.
  • Fill with fruit or Nutella or cinnamon-sugar, or my favorite, ham & Gruyère (don't forget to add pepper!).

1 lemon, zest of

2 teaspoons Grand Marnier

Steps:

  • Cream the powdered sugar into the butter until you have a smooth texture.
  • Add lemon zest, lemon juice, and Grand Marnier. It will break down (look a little curdled) when you add the citrus and alcohol but that is okay.
  • Spread the mixture over each crepe.
  • Fold the crepes in quarters and pile together.
  • Keep crepes warm in a 200 degree Fahrenheit oven.

1 cup milk
1 egg
1/4 cup frozen strawberries
1/4 cup frozen blueberries

Steps:

  • Spray non-stick on pan, and heat on medium heat.
  • Combine all ingredients in a measuring cup.
  • When pan is ready (water droplets thrown on it should sizzle), pour on crepe batter until desired size. (Swivel the pan a little to spread out the batter a bit).
  • Once the edges have changed colour and firmed up, flip the crepe and leave on the other side for about 10 seconds.
  • Cover with fruit topping and whipped cream.
  • Fruit Topping Suggestion: Combine frozen fruit in pot with water and sugar (You can use fresh fruit too, I just happen to have a lot of frozen fruit handy.).
  • Heat on medium high heat (while you are making the crepes).
  • When it's heated you can either leave as is or puree it.

I have been using this recipe since I was in High School, so that should tell you how EASY they are to put together and they are such a hit! You can do anything with them.   • In medium bowl, beat eggs slightly.

1 cup complete pancake & waffle mix (Just Add Water type)
2 tablespoons sugar
1 cup water
2 eggs

  • Heat 8-inch skillet; grease lightly with oil.
  • In small bowl, combine all ingredients; beat with eggbeater until batter is smooth.
  • For each crepe, pour 2 tablespoons batter into hot skillet, immediately tilting pan until batter covers bottom.
  • Cook until edges start to dry and center is set.
  • If desired, turn to brown other side.

Heres my recipe for crepes so far that I have taken and simplified a common ground from other crepes recipes I found. Its easy to remember and easy to double or even cut the ingredients in half if its just for one. This recipe so far is for one or two but you can easy double! Very tasty!

1 cup flour
2 eggs
1 cup milk
1 tablespoon butter (melted but cooled)
1 pinch salt
1 teaspoon sugar (leave out for non-sweet crepe)
2 -4 drops vanilla extract (or more if you like, leave out for non-sweet crepe)
oil (to distribute on pan)

Steps:

  • Oil or spray pan and preheat oven-top to medium high (around 8) while you mix. Combine the dry ingredients first then add vanilla, milk and eggs and wisk away. Then add melted but COOLED butter, otherwise you'll have tiny egg clumps. I usually mix even more with a handheld mixer to make sure its all mixed very well.
  • Pour the batter as you would like a pancake but since I dont have an actual crepe maker I pour the batter and swirl the pan around so the batter becomes thinner and wider. Let sit until bottom starts to have golden brown swirlies, then you can flip (I just use a spatula to flip and to loosen the bottom after a few seconds of cooking, its never burned but it might depend on the material yours is made of).
  • After you've made your crepe you can add whatever you like! My personal favorite is a bit of butter, strawberry preserves, caramel, whipped cream and 1 scoop of ice cream! I havent done anything with non-sweat crepes but sure will in the future -- Enjoy!

Truly a simple and easy way to make crepes. This is actually more of a technique than a recipe. Beat eggs, add enough flour to thicken to a thick cake batter consistency and then thin with milk, till the consistency of cream. Change the amount of eggs for more or less batter. Very easy and very versatile. And very yummy. Please note that ingredients are just estimates due to the technique.

3 -4 eggs
1 cup flour
1 1/2 cups milk
1/4 teaspoon salt
1 tablespoon sugar (optional)
vanilla extract (optional)

Steps:

  • With a whisk, beat eggs till well mixed and then start to add the flour. Add enough to thicken the batter to the consistency of a thick cake batter (or brownie batter).
  • Then slowly start to mix in the milk. Add enough milk to thin the batter out to the consistency of half and half. Add salt, and for sweet crepes, the sugar and vanilla. Mix.
  • Heat a 9 inch nonstick pan over med. to med/high heat. Spray with non stick spray or grease with a small drop of butter.
  • Using a small ladle or a 1/3 measuring cup, lift pan off stove and pour measured batter in, quickly swirling the batter to coat the pan. Keep swirling the pan till all the batter has solidified. Return to heat.
  • Cook approximately 1- 2 minutes. You can flip and cook other side for another 45 sec. or just remove to a plate. Repeat with remaining batter.
  • Fill with whatever you would like. My personal favorite is after flipping the crepe, I break an egg on the crepe and quickly scramble it and spread it out over the crepe, being careful not to tear the crepe. Add salt and pepper then a slice of ham and a bit of cheese. Wait a minute for the egg to cook and the cheese to melt and then fold in half and half again. Oh so good! My kids love sugar and cinnamon or jam, my husband loves lemon and sugar. And lets not forget nutella with bananas and toasted almonds.

This is an easy delicious dinner I invented which all my four kids love (very rare to find something they will all eat!) It's cheap to make and tastes good too.

1 cup all-purpose flour
1/3 cup water
1/3 cup milk
1 egg
1 tablespoon oil
500 g beef mince
1 (400 g) can baked beans
Mexican seasoning, mix
1 cup tasty cheese, grated

Steps:

  • Crepes.
  • Combine all ingredients together and beat til smooth with a whisk. Mixture should be runny.
  • Heat a greased frypan on stove.
  • Pour 2 or 3 tbsps mixture into pan and tip pan til a medium sized circle is covered with mixture. (makes a crepe about 20cm or 8inches across).
  • Filling.
  • Brown mince in saucepan.
  • Add seasoning to taste.
  • Add baked beans.
  • Assembly.
  • Place about 2 tblsps meat mixture across middle of crepe.
  • Roll up and place in lasagna dish.
  • Sprinkle with grated cheese.
  • Brown under griller.
  • Serve with salad or veges.

Steps:

  • Whisk the milk and egg together, then add the flour little by little, whisking after each addition until you have a smooth batter.
  • Season the batter with salt & pepper - you can always be inventive and add some chili powder or any spice you fancy! I chucked in a teaspoon of oregano before I cooked my last crepe.
  • Refrigerate for at least half an hour. In the meantime prepare your fillings. You can be inventive as you like! Traditional galette recipes call for emmental and either ham or other cured meats. I made an emmental and rocket crepe, then a sundried tomato, olive, emmental and rocket one as homage to where I am living at the moment!
  • Heat your frying pan on a med-high heat. add a little drop of oil and wait until the pan is very hot before you add a spoonful or two of you batter (depending on how big you want your crepes.)
  • Cook for around 3 minutes on one side, then flip, add your filling to the middle of the cooked side, then fold the edges to make a little parcel. Flip over a few times to make sure you cheese and whatever else you're using is nice and melted!
  • Serve hot on it's own or with a side salad and enjoy!

1-3/4 cups cold milk
6 ready-to-use crêpes (9 inch)
4 cups strawberries, sliced, divided
3/4 cup thawed COOL WHIP Whipped Topping
2 oz. BAKER'S Semi-Sweet Chocolate, melted, cooled

Steps:

  • Beat pudding mix and milk in medium bowl with whisk 2 min.
  • Spread pudding onto crêpes, adding about 1/4 cup pudding to each crêpe. Top each crêpe with 1/4 cup strawberries.
  • Fold each crêpe in half, then fold in half again; place on platter. Top with remaining strawberries and COOL WHIP.
  • Drizzle with melted chocolate.

A CREPE MIX PREPARED- I USED FREDA'S RECIPE (A GREAT CHOICE)
24 oz cottage cheese, small curd
1/2 box cheesecake pudding mix
1 tsp vanilla
FOR TOPPING
1 pkg strawberry glaze (in produce isle)

Steps:

  • 1. In a bowl put the cottage cheese and pudding, mix and add vanilla. If you want it smooth beat it or just stir to mix well. (I stirred) Put in fridge while preparing the crepes. If making for 6 peope double your filling recipe. Make up all your crepes.
  • 2. take one crepe, add some filling and roll. serve two per person.
  • 3. Top with strawberry glaze, and sour cream (optional) I served them with sausage
