My latest chili recipe - I've found it tastes best if made the day before. Adjust the heat by using hot, medium or mild picante sauce and taco seasoning (I use hot for both). Red pepper flakes are optional, but I like it hot and use 2 teaspoons.

2 lbs lean ground beef, cooked and drained
1 tablespoon onion powder
2 teaspoons minced garlic
1 (16 ounce) jar picante sauce (mild, medium or hot)
2 (14 1/2 ounce) cans diced tomatoes, undrained
1 (1 1/4 ounce) packet taco seasoning (mild, medium or hot)
2 (15 ounce) cans chili beans, in sauce
1 (15 1/2 ounce) can dark red kidney beans, undrained
1 (15 ounce) can black beans, undrained
3 tablespoons chili powder
2 tablespoons ground cumin
1/2 teaspoon salt (optional)
1 teaspoon black pepper
1 teaspoon oregano
1/2-2 teaspoon red pepper flakes

Steps:

  • Mix all ingredients in Crock Pot.
  • Cover; cook on HIGH for 3 to 4 hours.
  • Note: To make on stovetop, mix all ingredients in a big soup pot; cover and simmer for about an hour or so.

1 lb ground turkey (you can sub ground chicken)
1 small onion, chopped
1 (4 1/2 ounce) can chopped chilies, drained
1 (14 1/2 ounce) can black beans, undrained
1 (14 1/2 ounce) can chickpeas, undrained
1 (14 1/2 ounce) can kidney beans, undrained
1 (28 ounce) can diced tomatoes, with juice
1 (16 ounce) can tomato sauce
1 -2 tablespoon chili powder, to taste

Steps:

  • Cook turkey and onion in a medium fry pan over medium high heat, scramble fry until no longer pink.
  • Drain off fat and transfer cooked meat and onion to crock pot.
  • Add all remaining ingredients and mix well.
  • Cook on high 6 to 8 hours.

1 (19 ounce) can hot chili beans
1 (15 ounce) can tomato soup
1 (28 ounce) can whole tomatoes or 1 (28 ounce) can crushed tomatoes
2 medium green peppers, chopped
1 large onion, chopped
4 garlic cloves, chopped
2 lbs ground beef or 2 lbs turkey
1/2 teaspoon celery seed
2 tablespoons chili powder
1 teaspoon cumin
1/8 teaspoon basil
1/2 teaspoon cayenne pepper
1 small bay leaf
1 teaspoon salt
1 teaspoon pepper

Steps:

  • In small skillet, saute onion, garlic and peppers.
  • In big skillet, brown beef or turkey.
  • Drain fat.
  • Add all ingredients to crock pot.
  • Cook on high 4 to 6 hours or medium 6 to 8 hours.

1 (15 ounce) can white hominy
2 (15 ounce) cans great northern beans, drained and rinsed
1 (1 1/4 ounce) package taco seasoning
1 (10 1/2 ounce) can cream of mushroom soup
2 (4 ounce) cans green chilies, chopped
1 cup water

Steps:

  • Put all ingredients in the crock-pot, in the same order listed. (It is very important to put the chicken on bottom since it takes the longest to cook.).
  • Cook on low for 8-10 hours.
  • When ready to serve, slowly stir the chicken from the bottom.
  • It tastes fabulous plain or you can top with dollop of sour cream and crunched up tortilla chips. I also add cheese and fresh green onion.

3 garlic cloves, minced
1 medium onion, diced
2 (16 ounce) cans stewed tomatoes
2 (16 ounce) cans diced tomatoes

1 (16 ounce) can olives (optional)
1/4 cup chili seasoning mix
1/8 cup brown sugar

Steps:

  • Brown turkey onion and garlic. Drain off extra fat and place in crock pot.

1 onion, minced
1 garlic clove, minced
1 lb beef stew meat (can also use buffalo stew meat or omit for vegetarian option )
30 ounces canned red kidney beans (2 15 oz. cans drained of liquid and rinsed. I use BPA-free cans & Organic)
28 ounces diced tomatoes (also use BPA-free cans & organic if you can find them)
16 ounces tomato sauce (also use BPA-free cans & organic if you can find them)
1 teaspoon chili powder
1/8-1/2 teaspoon cayenne pepper (or more per taste. This depends on the heat strength of your cayenne)
1 pinch creole seasoning (Tony Chachere's Original Creole Seasoning if avaliable)
1 bay leaf

Steps:

  • Brown ground beef with onion and garlic. (if using stew meat or buffalo meat only brown the meat, do not fully cook!).
  • Drain meat if necessary.
  • Combine meat/onion/garlic mixture with the remainder of the ingredients and put in slow cooker.
  • Cook on low for 8 to 10 hours.
  • Remove bay leaf prior to serving.
  • I use Frontier Co-op spices that I purchase at my local health food co-op. I find their spices are extremely fresh and their 90,000 hu cayeene is great for slow-cooking recipes!
  • If making this as a vegetarian chili, simply skip the meat and add more beans. I love to add black beans. Yum!
  • Serve over rice or eat as is.

2 1/2 lbs coarse-grind ground beef or 2 1/2 lbs other ground meat
1 large onion, chopped
5 garlic cloves, sliced
seasoned adobo seasoning or seasoning salt, to taste
black pepper, to taste
ground red pepper, to taste
1 teaspoon ground cumin
1 teaspoon Mexican oregano or 1 teaspoon dried oregano
2 tablespoons chili powder
14 1/2 ounces peeled crushed tomatoes
8 ounces tomato sauce
10 1/2 ounces campbell's beef consomme

Steps:

  • Place beef, garlic and onion in a large skillet or dutch oven and brwon it, then drain any excess fat/drippings.
  • Place the meat mixture in the crock pot with the remaining ingredients and stir.
  • Cover and cook on low for 8-10 hours, or until meat is tender. Serve with beans if you like. Stir them in towards the end of cooking time so they heat up.

1 can (14-1/2 oz.) stewed tomatoes
2 cans (8 oz. each) tomato sauce
1 can kidney beans, drained
1 can pinto beans, drained
1-2 Tbsp chili powder, depending on how spicy you like it
1 tsp dried basil
1/2 tsp salt
Black pepper to taste
3 cups Kraft Instant Minute Rice, cooked
Topping options:
Kraft Shredded Cheese
Sour cream
Also: can be eaten with tortilla chips

Steps:

  • Brown beef/turkey, onion, green pepper and garlic together until meat is done. Drain and place in crock-pot.
  • Add remaining ingredients (except the cooked rice and the toppings) and stir well. Cook on LOW for 5-6 hours.
  • Serve over individual bowls of rice. Add desired toppings. Can also eat with tortilla chips.
