Steps:
- Preheat the oven to 400 degrees F (200 degrees C). Spray a deep 9x13-inch (or larger) baking dish with cooking spray.
- Mix chicken stock, condensed soups, melted butter, salt, and pepper together in a bowl.
- Spread rice on the bottom of the prepared baking dish. Top with cubed chicken. Carefully pour stock-soup mixture over top, being careful it doesn't overflow. Sprinkle Cheddar cheese over top to cover.
- Bake in the preheated oven until chicken is cooked through and cheese is nicely browned, 60 to 75 minutes, depending on size of chicken cubes. Remove from the oven and cool for about 10 minutes before serving.

EASY CREAMY SOUR CREAM CHICKEN CASSEROLE
This is one of the first recipes I really "mastered" when I was learning how to cook. My husband got to enjoy this recipe at least twice a month because it was one of the few dishes I knew how to make. Now, that I'm a much better cook, we still have this delicious dinner on our menu at least monthly. It is so easy to put together and very good. If you like your casserole's creamy, then this is one you've gotta try! I hope you enjoy it as much as we do!

Steps:
- Preheat oven to 350°F.
- Boil chicken breast until tender; drain and cube.
- Spread evenly over the bottom of a square casserole dish.
- Salt and pepper to taste.
- Mix sour cream and chicken soup in a separate bowl.
- Spread the sour cream and soup mixture over the chicken in the casserole dish.
- Crush the Ritz crackers and spread over top of the casserole.
- Spoon melted butter on top over all.
- Bake in a 350°F oven until top is golden brown, approximately 20-30 minutes.

EASY CREAMY CURRY CHICKEN AND RICE CASSEROLE
If you love curry then you will enjoy this rice dish! You can increase the curry if desired. Throw in some dark raisins too. Prep time does not include cooking the chicken.

Steps:
- Set oven to 375 degrees.
- Grease an 8 x 8-inch baking dish.
- In a frypan, saute the onion, garlic, salt and curry for about 4 minutes.
- Whisk in flour.
- Add in half and half (1/4-cup at a time) bring to a boil then reduce the heat immediately, and continue cooking whisking frequently for about another 5 minutes, or until sauce thickens.
- In a bowl combine cooked rice, peas, carrots, red bell pepper, lemon juice and cooked chicken, and add in to the sauce in the frypan; toss to combine.
- Season with black pepper to taste.
- Transfer the mixture to prepared baking dish.
- Cover with foil and bake for about 20 minutes.
- Remove foil and bake for another 10 minutes longer.

EASY CREAMY CHICKEN ALFREDO CASSEROLE
I came up with this recipe because I needed something quick for friends who dropped by. Its very easy and takes only 35 minutes to bake. Enjoy!

Steps:
- 1. Cook egg noodles according to instructions on package. Drain.
- 2. Mix with a whisk the jar of Alfredo sauce and the sour cream until blended. Add in your garlic and parmesan cheese. Mix until blended. Add your chicken and peas. Incorporate your noodle to this mixture and fold in until noodles are mixed well.
- 3. In a sprayed 9x13 casserole dish pour the noodle mixture. Then take crushed Ritz crackers and melted butter mixed together and add them to the top of the casserole. Bake at 350 degrees for approximately 35 minutes.
EASY CREAMY CHICKEN CASSEROLE
This easy creamy chicken casserole is my mother's recipe and a family favorite. It's one of our comfort foods and regular easy recipes to make through a busy week. Can easily be prepared in advance, then popped in the oven for a nice hot meal. If making for the first time, add half of the sour cream and taste first. Add more if desired, tasting as you go, to reach desired flavor. Serve over cooked white rice.

- Preheat an oven to 350 degrees F (175 degrees C). Mix the crackers and melted butter together in a bowl; set aside.
- Bring water and chicken stock to a boil in a pot over high heat. Season with salt and black pepper. Add the chicken. CREAMY DREAMY EASY MEXICAN CHICKEN CASSEROLE
I was looking for an easy and fast Mexican casserole and I got a few ideas from a couple recipes here on Zaar and then added my own touches and ingredients. This is an extra creamy casserole, just delicious! And this is a very versatile recipe. Use whatever type of meat you'd like, delete the onions for an even faster prep time, add jalapeños, etc. Delete the tortillas and it is an awesome enchilada filling or even an appetizer dip.

- Pull apart chicken into bits and/or tiny strips into a large bowl.
- Over medium heat sauté onions to desired texture.
- Mix together chicken, taco seasoning, refried beans and Rotel tomatoes (with juices) and onions.
- Mix together Southwest style condensed soup & sour cream in medium bowl.
- In a medium casserole dish spread half the sour cream mixture on the bottom.
- Then tear 1 tortilla into pieces on top of sour cream mixture.
- Add 1/2 chicken mixture on top of that & then a layer of cheese.
- Repeat layers and sprinkle cheese on top.(For an extra crunchy top, add an extra layer of torn tortilla between 2 cheese layers).
- Bake at 350°F for 20 minutes or until heated through.
- Both the chicken mixture & sour cream mixture can be mixed ahead of time & stored in the fridge.

- Preheat oven to 400°F.
- Cook Stuffing with Butter & Water according to package directions.
- Combine well Cream of Chicken Soup and Half & Half in a mixing bowl.
- In a 13 x 9 casserole dish, arrange Chicken in a single layer.
- Spread Soup mixture evenly over the top of chicken.
- Sprinkle over pepper to taste.
- Spoon Stuffing evenly over the top of Soup mixture.
- Bake for 30-35 minutes until Chicken is cooked through.
