Easy Pork Chops With Cranberry Pan Sauce image

This recipe might not look like much, but wait until you try it! If you can,try to use the fresh thyme in place of dryed, it really makes a difference in taste! If you want you can use chardonnay in place of the white wine, I use chardonnay and it worked out quite well. This recipe can be doubled if desired. Serve this with potato pancakes for a great meal!

4 -6 tablespoons butter
4 pork chops (bone in or boneless)
salt and pepper
garlic powder
2/3 cup dry white wine
1 1/4 cups cranberry sauce (can use a little more)
1/4 cup shallot, chopped
2 tablespoons chopped fresh thyme (or 1-2 teaspoons dryed thyme, rubbed between fingers to release the flavor)

Steps:

  • Melt the butter in a heavy skillet over medium heat.
  • Season the pork chops with salt, pepper and garlic powder, and saute until browned and cooked through (about 5-6 minutes on each side).
  • Transfer the chops to a plate.
  • Add in wine to the same skillet; bring to a simmer, scraping any browned bits in the bottom of the pan.
  • Stir in cranberry sauce, shallots and fresh thyme; reduce the heat to medium-low and simmer until slightly reduced, stirring occasionally about 3-4 minutes).
  • Season the sauce with salt and pepper.
  • Return pork and any of the juices from the plate into the skillet; cook until heated through (about 1 minute).
  • Transfer the chops to a plate.
  • Spoon the sauce over the pork.

This is a very easy way to make cranberry sauce. Try to use orange juice if possible, it really brings out "life" to the cranberry sauce. This is a fantastic recipe for cranberry sauce, I make it all the time for holidays, you can prepare this well in advance even days ahead, cover and refrigerate. If you are doubling the recipe then make in two separate microwave-safe bowls, don't double the recipe into one bowl or it will overflow in the microwave.

1 1/4 cups sugar (a little more sugar, if you prefer it sweeter)
1/2 cup orange juice or 1/2 cup water
1 teaspoon grated orange rind

Steps:

  • Combine all ingredients in a 3-qt microsafe bowl; mix well.
  • Cover with wax paper.
  • Microwave on high for 5 minutes.
  • Stir well; recover with wax paper.
  • Microwave another 5-7 mins longer until cranberries pop, and sauce has thickened.
  • Let stand, covered until cool.
  • Transfer to serving bowl and chill for 3-4 hours.

1/4 cup water
3 tablespoons red wine vinegar

  • Sort through berries and remove any stems and blemished berries (brown or mushy ones). Rinse with water and drain well in a colander. Meanwhile, in 3-quart saucepan over medium/medium heat, bring water, sugar, and salt to a boil; then let boil for 5 minutes, whisking occasionally. Stir in the cranberries and bring back to a boil; continue boiling 5 to 6 minutes longer, stirring occasionally, or until berries "pop". (It's important that they "pop" to release the natural pectin which thickens the sauce.) TIP: For a different flavor twist, after the sauce has finished cooking, stir in 1 tablespoon grated orange zest, 1 finely minced fresh jalapeno pepper (remove seeds first), or 2-3 tablespoons peach or pineapple preserves.
