2 tbsp golden caster sugar
4 tbsp crème fraîche and grated chocolate, to serve

Steps:

  • Melt the chocolate in the microwave in a microwaveable bowl, stirring every 30 seconds until just melted. Whisk the egg whites to soft peaks, scatter in the sugar and whisk again until the mixture forms stiff peaks when you lift the whisk out (around 30 seconds).
  • Add a big tablespoon of the egg white to the melted chocolate and mix vigorously, working fast so the chocolate doesn't cool and harden. Then fold in the remaining egg whites carefully using a spatula or large metal spoon. Spoon into 4 glasses or ramekins and set in the fridge for 2-3 hours. Pinch kosher salt

Steps:

  • Beat the egg yolks and granulated sugar in a medium bowl with an electric mixer on medium-high heat speed until thick and bright yellow.
  • Heat 1 cup cream in a medium saucepan until just at a simmer, then slowly whisk about half of the hot cream into the yolk-sugar mixture to temper it. Slowly add the remaining hot cream, then transfer the mixture back to the saucepan and cook, stirring, until thickened, about 5 minutes (do not boil).
  • Add the semisweet chocolate to a bowl and slowly pour the egg-sugar-cream mixture over it. Stir until the chocolate is smooth and melted, then add the vanilla and salt. Cover with plastic wrap and refrigerate until cold, about 2 hours.

1/2 teaspoon vanilla
2 cups cold milk, divided (2%, 1% or skim recommended)

  • Beat 1/2 cup milk, vanilla, and Dream Whip powder on slow speed just until blended. Then, blend on high speed for 4 minutes or until topping thickens and forms peaks.

2 env. (1/4 oz. each) KNOX Unflavored Gelatine
1 cup water, divided
1 cup sugar
2/3 cup canned sweetened condensed milk
gel food colorings (2 different colors)

Steps:

  • Melt 1 pkg. chocolate as directed on label; cool completely.
  • Beat whipping cream, dry pudding mix and melted chocolate in large bowl with mixer on high speed until mixture forms stiff peaks.
  • Place cake on center of bottom of 9-inch springform pan. Spoon enough of the whipped cream mixture into pan to completely fill in space between cake and rim of pan. Spread remaining whipped cream mixture into even layer over top of cake.
  • Freeze 6 hours or until firm.
  • Sprinkle gelatine over 1/2 cup water in small bowl; set aside. Mix sugar, condensed milk and remaining water in saucepan until blended. Bring to boil, stirring constantly. Add gelatine; cook 1 to 2 min. or until gelatine is completely dissolved, stirring constantly.
  • Break remaining white chocolate into small pieces; place in medium bowl. Add gelatine mixture; let stand 5 min. Gently stir until chocolate is completely melted and mixture is well blended.
  • Pour 1/4 cup chocolate glaze into each of 2 small bowls; tint glaze in each bowl with different color food coloring. Cover with plastic wrap, pressing wrap directly onto surface of glaze to prevent skins from forming on tops. Let stand at room temperature 1-1/2 hours or until glaze is cooled to 93ºF to 96ºF when tested with instant-read or candy thermometer.
  • Meanwhile, tint remaining glaze with food coloring to desired shade; pour through fine-mesh strainer into separate bowl. Cover with plastic wrap, pressing wrap directly onto surface of glaze. Let stand at room temperature 1-1/2 hours or until ready to use.
  • Run knife around rim of pan to loosen dessert; remove rim. Smooth side of dessert, if necessary. Invert empty small bowl (8-inch diameter or less) onto rimmed baking sheet; top with dessert. 4 tablespoons hot water
4 eggs, beaten (I use the pasteurized ones since the eggs won't be cooked)

  • In separate bowl, beat eggs (by hand or electric mixer) a couple of minutes, until slightly thickened.
  • Stir in chocolate and mix to a uniform color.
  • Pour in pan and bake for 50 to 60 minutes.
  • Cake will fall slightly as it cools.
  • When room temperature, open springform pan, peel foil away from sides, place serving plate on top and flip over. Remove remaining foil.
  • Serve at room temperature.
  • Note: This cake is rather hard to slice, use plain dental floss or kitchen string, and holding taut in both hands, slice through cake, dividing it as you go.
  • For Christmas, decorate center with holly leaves and cranberries.

Easy chocolate mousse image

Got this recipe from the back of the Swiss miss hot chocolate box. Love this mousse. I freeze it also. So good.

6 envelope (1 oz. each) hot cocoa mix
1/4 c boiling water
1/2 tsp vanilla
1 16 oz. container cool whip
chocolate sprinkles or shaved chocolate curls

Steps:

  • 1. In a large bowl, combine cocoa mix with water until cocoa is dissolved.Stir in vanilla.Gently fold together cocoa mixture and cool whip until well blended.spoon into individual souffle cups.Refrigerate 30 to 40 minutes until firm. Garnish with sprinkles or curls, if desired.
