Kid-Friendly Chili Recipe...no hunks of tomatos, onions, or peppers. Just a smooth belly-warming bowl of Chili. If you are looking for an "authentic" chili recipe then this is probably no the one for you. However, if you are looking for an easy recipe (that you probably have the ingrediants on hand) you can throw in the crockpot and that your picky eater will actually eat..look no further. This is my fav chili recipe that I modified from an old Eastern Star recipe book called Homespun Cooking. Posting it here for safe keeping. Serve with Corn Chips or Corn Bread for a satisfying, belly-warming meal. :)

Number Of Ingredients 9

1 lb ground beef
1 teaspoon onion powder
1 garlic clove, minced (or 1/4 tsp garlic powder)
1 1/2 teaspoons salt
2 tablespoons chili powder (to taste)
3 tablespoons tomato paste
2 tablespoons plain flour
3 cups water
1 (15 ounce) can kidney beans or 1 (15 ounce) can pinto beans

Steps:

  • Brown ground beef with onion powder & garlic.
  • Place browned meat & the remaining ingredients (except beans) into the crockpot.
  • Stir to ensure all ingredients are incorporated (mixed well).
  • Cook on Low 6-10 Hours.
  • Add Beans to the Chili 1/2-1 hour before the end of cooking (long enough to heat them through).
  • Special Note: I have added the complete 6oz can of tomato paste (so as not to waste it) with no issues. You may want to add a bit more water if you do use the whole can. Also, I have used just kidney beans or just pintos or both (for a realy hearty chili). This is one of those recipes you can play around with and have little ill-effects.
  • Also, I like to top ours with fresh grated cheddar cheese & a dollip of sour cream immediately before serving.

We love chicken chili, but our old recipe required a lot of prep and hours of simmering on the stove top. I put this together one morning in the crock pot, and we love coming home to a crock full of hot chili to enjoy with almost no prep! Leftovers freeze well, or we love to put the leftovers right into small containers to enjoy for lunches throughout the week.

2 (15 ounce) cans black beans (drained)
2 (15 ounce) cans great northern beans (drained)
1 (10 ounce) can diced tomatoes with green chilies
1 (10 ounce) can cream of chicken soup
1 (10 ounce) can chicken broth
1 (1 1/4 ounce) packet taco seasoning mix
5 boneless skinless chicken breasts (frozen)
1 (8 ounce) package cream cheese

Steps:

  • Place frozen chicken breasts in bottom of crock pot.
  • Sprinkle the packet of taco seasoning over the chicken.
  • On top of chicken and seasoning pour the black beans, great northern beans, tomatoes and green chilies, cream of chicken soup, and chicken broth.
  • Cook all day on low, or half day on high.
  • About one hour before serving, cut up block of cream cheese and drop into crock pot, stirring occasionally to melt.
  • Before serving, remove chicken breasts, cut into pieces, and mix back into the chili. Serve topped with sour cream or shredded jack cheese if you'd like.

Recipe from the WebMD Weight Loss Clinic. They say "chili is one of America's favorite lunch or dinner entrees -- especially during the winter months. Served with cornbread, it really hits the spot. I happen to be a "hot" spice lightweight, so you'll need to add extra chili powder, cayenne pepper, or jalapeƱo if you want a hotter chili." I haven't made this but I want it in my cookbook so I'm posting it to share.

2 teaspoons canola oil
1 lb beef top round steak, trimmed of fat and cut into 1/4-inch cubes (such as London broil)
1 cup finely chopped onion
2 teaspoons garlic (minced or chopped)
1 teaspoon paprika
2 -3 teaspoons chili powder
1/2 teaspoon ground cumin
1 teaspoon dried oregano flakes
14 1/2 ounces Mexican-style stewed tomatoes (or similar)
1 cup light beer (non alcoholic beer, beef broth or water can be substituted)
1 -2 teaspoon finely chopped chili pepper, finely chopped (jalapeno chili, halved and seeded (optional)
15 ounces low-sodium kidney beans, drained and rinsed (or pinto beans)
finely minced onion, for serving (optional)
grated reduced-fat sharp cheddar cheese (optional) or monterey jack cheese (optional)

Steps:

  • Heat the oil over medium-high heat in a large, nonstick frying pan or skillet. Add beef, onion, and garlic, stirring occasionally, until browned (about 3 minutes).
  • Spoon beef mixture into crock pot. Add paprika, chili powder, cumin, oregano, and stewed tomatoes (including liquid), beer, jalapeno if desired, and beans. Stir to combine. Cover and turn crock pot on LOW. Cook 8-10 hours.
  • Sprinkle each serving with minced onion and grated cheese if desired.

3 cups homemade chili or 2 15.5oz cans
8 ounces cream cheese (cut into blocks)
32 oz block of Velveeta Cheese (cubed or 1 1/2 cups shredded cheese)
1/4 cup salsa

Steps:

  • Add chili to crockpot.
  • Cut blocks of cream cheese and place on top of chili.
  • Cut Velveeta into blocks and place on top of chili.
  • Pour 1/4 cup salsa on top of everything.
  • Mix everything together until combined.
  • Cook on low for 3-4 hours or high for 2 hours. Stirring once halfway through.
  • Serve with tortilla chips, veggies, corn chips, bread or hot dogs!

3 lb hamburger
2 large sweet onions
salt and pepper to taste
3 can(s) chili beans
1 can(s) tomato juice
4 Tbsp chili powder

Steps:

  • 1. Brown hamburger and onion in a pan, add salt and pepper to your taste. Pour in crockpot when done.
  • 2. Add chili beans undrianed, tomato juice and chili pepper. Mix all ingredients together, cook on low for 6 to 8 hours.

This recipe came from my mom and I always loved the flavors. It is very easy and quick and seems to please even picky eaters. Since we have diners that do not like spicy foods, you might want to add heat to yours! You can cook this on the stove top also, (You can also buy the smaller cans of vegetable juice if you don't want red beer with the leftover juice :D).

2 lbs ground beef (lean)
1/2 cup onion (chopped)
3 ounces chili seasoning mix (3 pkgs of any brand)
1 tablespoon cumin
15 ounces diced tomatoes (any brand or flavor for chili)
15 ounces kidney beans (any brand)
23 ounces vegetable juice (V-8 or any store brand, mild or spicy, about 1/2 of a large can)

Steps:

  • Brown ground beef in skillet. (I cook mine with water because it crumbles easier and more of the fat drains off.).
  • Drain beef and add onion, the 3 pkgs of chili seasoning and cumin to the skillet and cook a little longer until the seasonings are well blended (about 10 minutes on med-low heat).
  • While seasonings are cooking into the meat, rinse and drain the kidney beans well and add to crockpot.
  • Add the diced tomatoes (I add the juice also for flavor) to the crockpot.
  • Add the browned beef mixture to the crockpot.
  • Pour in about 1/2 of the tall 46 oz can of vegetable juice to the crockpot (I usually add about 1/3 of a can first, stir all ingredients and then decide if I want my chili thinner by adding more of the vegetable juice.).
  • Cook on low in crockpot for about 2 hours or until all is heated through.
  • Serve with cheese, crackers, fritos, cornbread. (Leftovers are great on chili dogs.).
