EASY, LOW-FAT CHICKEN LASAGNA
This recipe derived from the need to use leftover grilled chicken when I was really in the mood for lasagna! The grill flavor really lent it a good flavor- so I suggest using leftover grilled or rotisserie chicken for this.

Steps:
- Preheat oven to 375 degrees.
- In 1 T olive oil saute the onion and bell pepper until translucent.
- Add chicken and set aside.
- Spray a 9x13" pyrex dish with cooking spray and spoon about a half cup of the spaghetti sauce on the bottom.
- Mix the fresh herbs, garlic salt, and cayenne straight into the container of cottage cheese.
- Layer 4 uncooked lasagna noodles, 1/3 cottage cheese mixture, 1/3 chicken mixture, 1/3 of the remaining sauce, 1/3 mozzerella and 1/3 parmesan.
- Repeat this process until finished.
- Cook, uncovered, for about 45 minutes or until bubbly and golden brown on top.

- Heat oven to 400°F.
- Heat oil in large skillet on medium heat. Add chicken and peppers; cook and stir 5 min. or until chicken is evenly browned. Stir in salsa, water, Parmesan and 1 cup mozzarella.
- Spread 1/4 of the chicken mixture onto bottom of 13x9-inch dish sprayed with cooking spray; top with 3 noodles. Repeat layers twice; cover with remaining chicken mixture. Sprinkle with remaining mozzarella.

- For the sauce: In a large stockpot, combine the alfredo sauce, diced tomatoes, sun-dried tomatoes, bell pepper, onion, garlic, water, Italian seasoning, salt and pepper. Bring to a boil, then reduce heat, cover and simmer for 1 hour.
- Crumble the ground chicken in a saucepan. Cook until no pink remains. Add the chicken to the stockpot. Simmer for another 15 minutes.
- Meanwhile, cook the lasagna noodles according to package directions. Drain and set aside.
- Cook the mashed potatoes according to package directions. Stir in butter and sour cream.
- Heat oven to 350 degrees.
- To assemble, place a thin layer of sauce in the bottom of a 9x13" baking pan. Layer 1/3 of each, noodles, potatoes, Mozarella, Swiss and Cheddar cheeses. Crumble small pieces of goat cheese and dot over other cheeses. Add another layer of sauce. Repeat layers 2 more times, ending with cheeses. Bake for 35 to 40 minutes or until cheese is melted and bubbly.

- Combine chicken, pasta sauce, water and oregano; set aside. Mix cream cheese, 1-1/2 cups shredded cheese, milk and seasoning until well blended. Stir in spinach.
- Spoon 1 cup chicken mixture into slow cooker sprayed with cooking spray; top with layers of half each of the noodles and cream cheese mixture. Cover with 2 cups chicken mixture. Top with remaining noodles, cream cheese mixture and chicken mixture. Cover with lid.

- 1. Bring a large pot of lightly salted water to a boil. Cook Lasagna noodles for 8-10 minutes, or until al dente.Drain, rinse with cold water, and set aside.
- 2. Meanwhile,place the chicken in a saucepan with enough water to cover,and bring to a boil.Cook for 20 minutes, or until juices are no longer pink.Remove from the saucepan and shred.
- 3. Preheat oven to 350 degrees. Dissolve bouillon cube in hot water. In a large bowl mix the chicken with the bouillon, cream cheese, and 1 cup mozzarella cheese.
- 4. Spread 1/3 of the spaghetti sauce in the bottom of a 9 inch square baking dish.Cover with chicken mixture, and top with 3 lasagna noodles;repeat. top with remaining sauce,and sprinkle with remaining cheese.

- 1. Blend soups, sour cream, milk, and parmesan cheese. Fold in chicken and vegatables.
- 2. pour 1/4 of chicken mixture into the bottom of a greased 9x13 baking dish. Top with 3 of the cooked noodles.
- 3. Spread 1/3 of the remaining chicken mixture over noodles, sprinkle with 1/3 of the shredded cheese. Repeat layers two more times but reserve the last portion of shredded cheese.
- 4. Cover with foil and bake at 350 degrees for 45 minutes.
- 5. Remove from oven and remove foil. Sprinkle with reserved shredded cheese. Continue baking, uncovered, for 15 minutes, until cheese is melted and lightly browned. Let stand for 15 min. before cutting and serving.

I found this recipe years ago on the back of a mayonnaise jar. I have been making it since then. It is the most requested thing to make for all our family get togethers and for Church functions.

- Preheat oven to 375 degrees. In a saucepan over medium high heat, stir together mole paste and about half of the broth.
- Once mixture is smooth, stir in remaining broth and chicken. Heat until simmering.
- Spray a 9-inch pie plate with non-stick cooking spray. Place two tortillas, overlapping, on bottom of pie plate. (Tortillas won't completely cover the bottom; that's OK.).
