Easy to put together and inexpensive. I use Pepperidge Farm Stuffing Mix, but any kind would work. Also, you can use canned chicken if you're in a hurry!

5 boneless skinless chicken breasts
1 cup chicken broth
1/2 cup margarine, melted
1 (10 1/2 ounce) can cream of mushroom soup
1 (10 1/2 ounce) can cream of chicken soup
2 cups cornbread stuffing mix

Steps:

  • Boil chicken and reserve 1 cup broth. Tear cooled chicken apart and set aside.
  • Preheat oven to 350.
  • Butter 9 x 13 casserole dish and put half of stuffing mix in the bottom of the dish.
  • Combine broth, soups, margarine and chicken pieces. Mix well and pour into casserole dish. Top with remaining stuffing mix.
  • Bake in preheated oven for 30 minutes, until bubbly.

This is a recipe I found on the back of a Campbells soup can years ago and have made this recipe many, many times and it is without a doubt a family favorite. Simple, quick and very tasty. Definately a meal to make if your pressed for time( I can usually get it on the table in under an hour from start to finish). In order to make this in a timely fashion, only use boneless, skinless chicken breasts or chicken tenderloins. I think these cook up more tender and quicker than breasts with the bone still in. 4 boneless skinless chicken breasts
10 3/4 ounces condensed cream of celery soup
1/2 cup milk
6 ounces Stove Top low-sodium chicken stuffing mix
1 cup sharp cheddar cheese
3 tablespoons butter, to fry the chicken in. add more throughout cooking process if needed
salt and pepper

Steps:

  • On your stove top, melt butter in frying pan and cook chicken breasts until done.Remove chicken from pan and set aside.
  • While chicken is cooking combine soup and milk in a bowl and mix together. Set aside.
  • In the same frying pan (just clean it out a bit) prepare the chicken stuffing according to package directions.
  • Once the stuffing is done, place chicken breasts on top of the stuffing that is still in the frying pan. Pour soup mixture over the chicken and sprinkle the cheese over the soup. Cover the pan with a lid and cook on medium low heat. Not to high or the stuffing will burn. Meal is ready when all the cheese is melted and the soup is hot and bubbly.

1 pkg (6 ounce) chicken flavor stuffing mix
2 c cubed, cooked chicken
1 can(s) (10 ounce) cream of chicken soup
1/3 c sour cream
1 pkg (10 ounce) frozen peas and carrots, or frozen broccoli cuts, thawed and drained
1/2 c shredded cheddar cheese (optional)

Steps:

  • 1. Prepare stuffing mix as directed on package; set aside.
  • 2. Mix chicken, soup, sour cream, vegetables and shredded Cheddar cheese and put into a 9 X 13 inch baking dish; top with prepared stuffing.
  • 3. Bake at 400 degrees for 30 minutes.

9 ounces egg noodles
2 (10.5 ounce) cans cream of chicken soup
1 cup sour cream
3 cups cubed cooked chicken
1 (6 ounce) package stuffing mix
2 cups chicken broth
¾ cup butter

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Mix cream of chicken soup and sour cream together in a bowl; stir in chicken and noodles. Spoon mixture into the prepared baking dish; sprinkle with stuffing mix.
  • Combine chicken broth and butter in a saucepan over medium heat until butter is melted; pour over stuffing layer.
  • Bake in the preheated oven until casserole is bubbling and stuffing is browned, about 30 minutes.
