Don't let the sparse ingredient list fool you. This is a recipe that's so easy to make yet so delicious that everyone inhales it. My mother was raised on this soup and she served it often to us. My grown daughters now demand it when they are home. To this day, entering the house on a cold day and smelling this soup is the most comforting, delicious aroma imaginable. It's also non-fat if you use skim milk. (But I like half-and-half, myself!)

Number Of Ingredients 5

1 large potato, per person
1/4 cup chopped celery, per person (include leaves)
1/4 cup chopped onion, per person
1/4-1/2 cup half-and-half or 1/4-1/2 cup cream
salt and pepper, to taste

Steps:

  • Peel and cube potatoes.
  • Put in a saucepan along with the onions and celery.
  • Add water, but don't quite cover the vegetables.
  • Bring to a boil, lower heat, cover and simmer for 25 minutes, or until all of the vegetables are very tender.
  • Using a potato masher, coarsely crush the potatoes, but don't mash them--you want chunks left.
  • Add enough milk or cream to thin to desired thickness and add salt& pepper to taste.
  • (It will take a lot of salt!).

2 tablespoons butter
1 medium onion, chopped
6 medium potatoes, peeled and cubed
5 cups water
2 cups 2% milk
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1/2 teaspoon garlic salt
1/8 teaspoon pepper
12 ounces process cheese (Velveeta), cubed
Minced fresh parsley

Steps:

  • Melt butter in a Dutch oven over medium-high heat. Add onion; cook and stir until tender, 5 minutes. Add potatoes and water; bring to a boil. Reduce heat; cover and simmer until potatoes are tender, 15 minutes. Stir in the milk, soup, garlic salt and pepper; heat until warmed through. Add cheese; stir until cheese is melted. Sprinkle with parsley.

I was looking for a satisfying potatoe soup recipe and came across one similar to this. I just doctored mine up a bit. This is very filling and makes alot!

4 cups water
6 chicken bouillon cubes
1 cup finely chopped onion
3 cups diced potatoes (I dice them very small)
1 bag frozen broccoli or 1 bag california-blend frozen vegetables
1 can cream of chicken soup
1 3/4 cups milk
1/2 lb Velveeta cheese
1/2 lb cheddar cheese

Steps:

  • In a large Pot put the water, boullin, and onion.
  • Cover and cook on medium heat for 20 minutes.
  • Then add the potatoes and frozen vegetables (I diced mine very small with a food chopper).
  • Cover and cook on medium for another 20 minutes.
  • Then turn down the heat to low and add the soup, milk and cheeses (cut into small chunks).
  • Stir until the cheese is melted.
  • Either simmer on low or pour into a crockpot on low for up to 4 hours.

1 (10 1/2 ounce) can chicken broth
1/2 cup water
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon onion powder
1/4 teaspoon cayenne pepper
1/4 teaspoon mustard powder
1/2 tablespoon soy sauce
1 teaspoon Worcestershire sauce
1 (15 ounce) can diced potatoes, drained (add an extra can if you want chunkier soup)
1 (14 ounce) can crushed tomatoes seasoned with basil garlic & oregano
1/2 cup whipping cream
4 -6 ounces Velveeta cheese, cut into chunks
1/2 cup sharp cheddar cheese, shredded
1 tablespoon flour

Steps:

  • Pour the broth & water into a large pot. Add the spices, soy sauce, Worcestershire, & potatoes to the pot then bring to a boil. Turn down the heat & simmer for 5 minutes.
  • Tip: If you can't find crushed tomatoes with basil, garlic, & oregano you can puree a can of diced tomatoes with basil, garlic, & oregano.
  • Add the crushed tomatoes, cream, & cheese, stir until melted. Mix the flour with 1 tablespoon of water then stir into the soup. Simmer for another 7-10 minutes.

3 lbs russet potatoes, peeled
4 cups chicken broth
1/4 cup butter
1/2 cup chopped green onion, can save some tops for garnish
1/4 cup flour
1 teaspoon celery seed
1/4 teaspoon spanish smoked paprika
4 cups fat-free half-and-half
1 lb American cheese or 1 lb mild cheddar cheese
salt, to taste
pepper, to taste

Steps:

  • Dice the peeled potatoes into about 3/4" pieces.
  • Place the diced potatoes in a pot with the 4 cups of chicken broth and bring to a boil. Reduce heat and simmer for about 15 minutes or until potatoes are nice and tender.
  • While potatoes cook, in a separate pot, melt the butter. Add the chopped green onion and sauté for 5 minutes.
  • Whisk the flour, celery seeds and paprika into the butter/green onions and stir constantly until a smooth paste. Gradually stir in the ff half and half. Stir frequently until mixture begins to thicken.
  • Add the hot cooked potatoes and both into the creamy mixture; stir well.
  • With a slotted spoon remove 1 or 2 cups of the potatoes and set them aside.
  • Use a stick blender or blender or food processor to blend the soup in the pot.
  • Return the blended mixture and reserved 1 or 2 cups of potatoes to the pot.
  • Stir in the cheese, salt and pepper.
  • Stir and cook (but do NOT allow to boil) until cheese is melted smooth and well-mixed.
  • Serve.
  • Garnish with some green onion tops, if desired.
