2 cups rice
1 ½ cups shredded Cheddar cheese, divided
1 teaspoon ground black pepper
½ teaspoon salt
4 skinless, boneless chicken breast halves, or more to taste
2 (10.5 ounce) cans cream of chicken soup
3 cups water, or more as needed
1 (1 ounce) package dry onion soup mix (such as Lipton®)

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Prepare a 13x9-inch baking dish with cooking spray.
  • Spread rice into the bottom of the prepared baking dish. Sprinkle 1 cup Cheddar cheese over the rice; season with black pepper and salt. Arrange chicken breast halves evenly atop the rice and cheese layers. Dot chicken breasts evenly with rounded teaspoons of cream of chicken soup. Pour 3 cups water over the chicken and finish by sprinkling onion soup mix evenly over everything.
  • Bake in preheated oven for 1 hour. Check rice for doneness; if water is already completely absorbed, add 1/2 cup more water to keep mixture moist. Continue baking until the chicken breasts are no longer pink in the center and the juices run clear, about 30 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Sprinkle remaining 1/2 cup Cheddar cheese over the dish.

2 cups boiling water
4 boneless skinless chicken breasts, about 1 lb
1/4 teaspoon garlic powder

Steps:

  • Preheat oven to 425 degrees and boil water.
  • In a 13x9 casserole dish, combine rice and contents of seasoning packet; add boiling water to dish and mix well.
  • Add chicken, sprinkle with garlic powder; cover and bake for 30 minutes.
  • Add broccoli and cheese; cover and continue to bake for another 8-10 minutes or until chicken is no longer pink in center.

I came up with this recipe one night while submerged in the depths of a fajita craving. I serve it over white rice with the cheese blend melted down over top. Sometimes I spice things up with a dollop of sour cream; as it melts down over the hot chicken and rice it makes the juice all creamy and delicious.

1 large vidalia onion
1 lb boneless skinless chicken breast
1 (1 1/8 ounce) packet fajita seasoning mix
4 cups white rice, prepared
1 cup Mexican blend cheese

Steps:

  • Rough chop onion.
  • Sauté over medium heat until soft and translucent, remove from heat.
  • Cook chicken breast over medium heat until mostly done, remove from heat and allow to cool until it can be comfortably handled.
  • Shred chicken.
  • Add chicken and onion back to pan.
  • Mix seasoning packet in 3/4 to 1 cup of water.
  • Pour over chicken and onion.
  • Simmer over medium-low heat for 15-20 minutes, until sauce reduces by about 1/3.

1 cup carrot, thinly sliced
6 ounces reduced-sodium ham

2 -4 boneless skinless chicken breasts
3/4 cup uncooked rice
1 (10 3/4 ounce) can condensed cream of broccoli soup or 1 (10 3/4 ounce) can broccoli cheese soup
1 cup water
1 cup frozen broccoli florets
1/2 teaspoon paprika
1/2 teaspoon pepper
1/2 teaspoon salt
1 cup shredded cheese (whatever you want, I like Mexican blend)

Steps:

  • Mix soup, water, rice, broccoli, paprika, salt and pepper in a 2 quart baking dish.
  • Put chicken on top on rice mixture and sprinkle with paprika, salt and pepper.
  • Top with cheese. (I also put some Parmesan and Breadcrumbs on here too, but that's optional).
  • Cover and bake 40 minutes at 375 degrees.
  • Remove foil and bake another 5-10 minutes until chicken and rice is done.

1/4-1/2 cup margarine
1 onion, chopped
1 cup dry lentils
1 cup uncooked rice (, not instant rice)
2 1/2 cups hot water
2 1/2 teaspoons chicken bouillon granules
1 1/2 cups cold water
1 1/2 cups shredded cheddar cheese
1 piece sandwich bread
oil
italian seasoning
1 teaspoon parmesan cheese

Steps:

  • Use a big pot and cook onion in margarine until soft.
  • In a bowl, stir together bouillon and hot water.
  • Add lentils, rice, bouillon-water mixture and cold water.
  • Bring to a boil.
  • Lower heat, cover and simmer 25 minutes, stirring occasionally.
  • Meanwhile, fry both sides of a slice of bread in oil and sprinkle with Italian Seasoning blend.
  • Cool on rack.
  • After 25 minutes, rice should be cooked and lentils should be cooked but still firm (not mushy) and there should still be some moisture in the mixture.
  • Turn stove off and stir 1 cup of the cheese into the mixture until cheese is melted.
  • Pour mixture into a 9 by 13 pan that has been sprayed with Pam and smooth the top with the back of your spoon.
  • Sprinkle remaining 1/2 cup of shredded cheese over top.
  • Crunch up the cooled fried bread with a knife and sprinkle over casserole.
  • Sprinkle parmesan over casserole.
  • Bake in preheated 350 oven for 15 minutes or so until cheese is melted.
  • Let cool slightly before serving.

Found this in a Rach Magazine. It isn't quite as greasy as other fritters. Also, you can start with leftover rice from a Chinese restaurant if you don't want to make the rice.

1 cup arborio rice
3 slices bacon, chopped
1 cup shredded mozzarella cheese
1 cup grated parmesan cheese
1 large egg, lightly beaten
salt

1/2 cup seasoned bread crumbs
1/4 cup extra virgin olive oil
10 ounces spinach, coarsely chopped
1 pinch red pepper

Steps:

  • Line a baking sheet with parchment paper. In a medium saucepan, bring the rice and 2 1/2 cups water to a boil. Lower the heat and simmer until the rice is still firm, but cooked through and the water has evaporated, about 20 minutes. Transfer to a large bowl and let cool slightly. This is about 3 cups cooked rice.
  • In a large skillet, cook the bacon until crisp. Using a slotted spoon, add the bacon to the rice, reserving the skillet with the bacon greast. Stir the mozarella, parmesan, and egg into the rice mixture. Season with salt and pepper.
  • Divide the rice mixture into 12 mounds on the prepared baking sheet. Flatten into 3-inch patties. Sprinkle on both sides with the breadcrumbs. Panko crumbs work well here also.
  • Add the olive oil to the skillet and heat over medium-high heat. Add the patties and cook, turning once, until crisp, about 5 minutes. Drain on paper towels.
  • Optional. Add the spinach to the skillet and cook over high heat, turning until wilted, about 2 minutes. Season with the crushed red pepper. Top with the fritters.

This Easy Cheesy Broccoli Rice is a fast and flavorful side when you don't have time to make a classic Broccoli Cheddar Casserole.

1 lb. frozen broccoli florets, thawed ($2.59)
2 cups long grain rice ($1.32)
2 Tbsp butter ($0.26)
1/2 tsp salt ($0.02)
1/4 tsp garlic powder ($0.02)
1/8 tsp cayenne pepper (optional) ($0.02)
Freshly cracked pepper ($0.05)
1/4 cup grated Parmesan ($0.41)
1 cup shredded sharp cheddar ($1.25)

Steps:

  • Place the rice in a large pot and add 3 cups water. Place a lid on the pot and bring it up to a boil over high heat. Once it reaches a boil, turn the heat down to low and let it simmer for 15 minutes. After simmering for 15 minutes, turn the heat off and let the rice rest without removing the lid for an additional 5 minutes. (OR use your favorite method of cooking rice -- rice cooker, Instant Pot, etc.)
  • While the rice is cooking, chop the broccoli florets into tiny pieces.
  • Once the rice has cooked, fluff it gently with a fork. Add the butter, salt, garlic powder, cayenne, and some freshly cracked pepper. Fold the butter and spices into the rice until fairly well combined (the butter should melt quickly in the hot rice).
  • Add the chopped broccoli and gently fold it into the rice. The broccoli should bring the temperature of the rice down just to the point where it is hot/warm, but not so hot that the cheese immediately melts when stirred into the rice.
  • Finally, add the Parmesan and cheddar cheeses, and fold to combine again. Taste and adjust the salt or butter if needed. Serve immediately.
