Steps:
- Combine hash browns, ham, onion, celery, chicken broth, salt, pepper, and garlic powder in a slow cooker. Stir well to combine. Place the lid on the slow cooker.
- Cook on Low heat until celery is soft, 4 to 5 hours.
- Mix in cream cheese and Cheddar cheese. Stir until cheese is melted. Cover and cook on Low for an additional 30 minutes, stirring occasionally. Serve topped with chopped green onions as a garnish.

EASY CREAMY, CHEESY POTATO SOUP W/ CRISP BACON
This soup is fabulous, and much easier than the more complicated, time-intensive potato soup that I sometimes make. It is easy to throw together on a weekday night, or for lunch. You can, of course, use real potatoes (2 cups potatoes, skinned and cut into cubes), but I find it is even easier, and just as delicious, to use canned, sliced potatoes. It is a filling, creamy, and hearty soup, one that can easily be served alone for a complete meal. Although shared with me by my sister-in law, it actually originally came from a Gooseberry Patch cookbook, and then has been adjusted by me. You will love this soup - as my husband says, "This soup is awesome!!!! "

- In a 3-qt sauce pan, combine potatoes, water, regular salt, and pepper.
- NOTE: If using real, uncooked potatoes, bring to a boil, cover and simmer for 10 mins, until potatoes are tender.
- If using canned potatoes, bring to soft boil.
- Turn down heat to medium.
- Gradually add soup and milk, stirring constantly.
- Add onions, garlic, Johnny's seasoning salt, and dashes of hot sauce, and allow to cook, while stirring, for 5 minutes.
- Stir in sour cream, bacon, and parsley, and heat thru.
- Top with additional pepper and cheese.

- Dice the peeled potatoes into about 3/4" pieces.
- Place the diced potatoes in a pot with the 4 cups of chicken broth and bring to a boil. Reduce heat and simmer for about 15 minutes or until potatoes are nice and tender.
- While potatoes cook, in a separate pot, melt the butter. Add the chopped green onion and sauté for 5 minutes.
- Whisk the flour, celery seeds and paprika into the butter/green onions and stir constantly until a smooth paste. Gradually stir in the ff half and half. Stir frequently until mixture begins to thicken.
- Add the hot cooked potatoes and both into the creamy mixture; stir well.
- With a slotted spoon remove 1 or 2 cups of the potatoes and set them aside.
- Use a stick blender or blender or food processor to blend the soup in the pot.
- Return the blended mixture and reserved 1 or 2 cups of potatoes to the pot.
- Stir in the cheese, salt and pepper.
- Stir and cook (but do NOT allow to boil) until cheese is melted smooth and well-mixed.
- Serve.
- Garnish with some green onion tops, if desired.

- Place broth, onions, and broccoli in a pan and simmer 8-10 minutes. You should still see small chunks of broccoli floating in it.
- Add milk and stir in potato flakes.

EASY CHEESY CROCK POT O'BRIEN POTATO SOUP
Well, this is a no brainer! I am probably the only one that had never seen this recipe until recently. Saw on FB and knew I had to adjust to our tastes and try it. It is a definite keeper! Added ham and cheddar cheese to increase protein and make it a meal. Used O'Brien instead of regular hash browns to add the onion and peppers. Used lower sodium products to cut back on sodium content. I doubled the recipe for leftovers. A creamy, cheesy potato soup that uses your slow cooker to do all the work. Delicious and satisfying. A definite comfort soup for a cold winter evening.

- Line crock pot or slow cooker with disposable liner for easy clean up later. Put frozen potatoes in crock pot or slow cooker.
- Add chicken broth, cream of chicken soup, and ham (if using ham).
- Add a pinch of pepper. Salt to taste only if you like a lot of salt.
- Cook on low 4-6 hours or until potatoes are tender. Add cream cheese after cutting cream cheese into very small cubes.
- Cook 30 minutes, stirring frequently, until cream cheese is melted and completely incorporated. AGAIN: DO NOT USE FAT FREE. WILL NOT MELT!
- Stir in 2 cups of the shredded cheddar cheese. Stir until melted. Soup is now ready to serve.
- Top with bacon bits and additional cheddar cheese if desired. ENJOY that creamy, cheesy potato goodness!

- Add chicken broth, diced potatoes, salt, pepper, bay leaves, and fennel seed.
- Boil gently about 15 minutes until potatoes are tender, but not falling apart.

- In a large Pot put the water, boullin, and onion.
- Cover and cook on medium heat for 20 minutes.
- Then add the potatoes and frozen vegetables (I diced mine very small with a food chopper).
- Cover and cook on medium for another 20 minutes.

EASY CHEESY BACON POTATO SOUP
This soup is quick and easy, and so delicious; the perfect soup for a cool Autumn day. I created the recipe one day when I had some leftover bacon, a hunk of smoked gouda, a few potatoes and some milk and cream that needed to be used soon, so... viola! A new soup! Don't forget the chives; they add another great level of flavor.

- Gather and prep ingredients (shred cheese, peel and cube potatoes etc...)
- Pour 4 cups milk into a 2 or 3 quart saucepan; add cubed potatoes, 1 teaspoon sea salt and a grind of black pepper. Bring milk and potatoes to the boil over medium-high heat, stirring frequently to avoid scorching. Immediately reduce heat to low/medium-low. Let simmer for 10 minutes, stirring occasionally.
- Test a piece of potato with a fork to check for tenderness. When tender, remove from heat; stir in 2 cups cheese.
- When cheese has melted, stir in bacon pieces and 1/4 cup cream. Taste for seasoning; adjust accordingly, if needed.
- Ladle into bowls. Garnish with grated cheese, chives and bacon bits (the most important being chives.) Serve hot. Refrigerate leftovers.
