A delicious one dish meal that is full of flavor and will be cooked in less than 1 hour. The only prep time is for 2 cups of water to boil; and make sure the chicken is thawed if previously frozen. I got this recipe from my Brand Named Best Loved Casseroles book, in the "Dinner in Minutes" chapter.

1 box broccoli and cheese flavored rice mix (I use Uncle Ben's au Gratin)
2 cups boiling water
4 boneless skinless chicken breasts, about 1 lb
1/4 teaspoon garlic powder
2 cups frozen broccoli
1 cup shredded low-fat cheddar cheese (4 oz)

Steps:

  • Preheat oven to 425 degrees and boil water.
  • In a 13x9 casserole dish, combine rice and contents of seasoning packet; add boiling water to dish and mix well.
  • Add chicken, sprinkle with garlic powder; cover and bake for 30 minutes.
  • Add broccoli and cheese; cover and continue to bake for another 8-10 minutes or until chicken is no longer pink in center.

BISQUICK EASY CHEESY CHICKEN CASSEROLE

You can use Alfredo sauce instead of Cheddar cheese sauce for a change of flavors. I'm going to try using Velveeta sometime instead of the cheese sauce. This is from Bisquick II.

2 cups cooked chicken
16 ounces cheddar cheese pasta sauce
1 lb frozen broccoli carrots cauliflower mix, thawed and drained
1 1/4 cups Bisquick baking mix
1/4 cup grated parmesan cheese
1/4 cup butter
1 egg, slightly beaten

Steps:

  • Heat oven to 400 degrees. Mix chicken, cheese sauce and veggies in a 9 inch square pan.
  • Mix Bisquick, Parmesan and butter with a fork until crumbly. Stir in the egg and sprinkle the mixture over the chicken mixture.
  • Bake uncovered about 20 minutes or until topping is golden brown.

6 boneless skinless chicken breasts, uncooked, and cut into bite size pieces
1 can (10 1/2 ounce) cream of mushroom soup
2 medium onions, chopped
1 (2 lb) bag broccoli florets, steamed and chopped
1 lb cheddar cheese, grated
1 box (6 ounce) Stove Top Stuffing Mix
2 tablespoons butter, melted

Steps:

  • 1. Preheat oven to 350 degrees F. Place chicken in an ungreased 9x13x3" casserole dish in a single layer.
  • 2. Spoon on cream of mushroom soup and spread evenly. Arrange onion slices on top of soup. Add broccoli, spread out evenly. Add cheese, spread out evenly. Sprinkle Stove Top Stuffing Mix on top of cheese. Drizzle with melted butter.
  • 3. Bake in oven for 1 hour. Allow to cool for 10 minutes and serve. Enjoy!

Corn tortillas stuffed with a flavorful chicken filling and topped with a Mexican 4-cheese blend, a spicy red chili sauce, olives and green onions -- absolutamente deliciosa!

3 cups cooked chicken thighs, shredded (boneless & skinless)
2 cups shredded Mexican blend cheese, 4-cheese
1 cup scallion, chopped
1/2 teaspoon garlic powder
1/2 teaspoon ground cumin
1/2 teaspoon onion powder
1/2 teaspoon lemon-pepper seasoning
1 dash kosher salt
1 (15 ounce) can black beans, rinsed and drained
1 (8 ounce) can whole kernel corn, rinsed and drained
1 (10 ounce) can diced tomatoes and green chilies, drain
enchilada sauce
1 (29 ounce) can enchilada sauce
72 inches corn tortillas
1 (2 ounce) can sliced black olives, drained
fresh cilantro leaves, garnish
sour cream, garnish
guacamole, garnish

Steps:

  • Preheat oven to 350 degrees; place rack in middle of oven.
  • Spray 13x9-inch baking dish with no-stick cooking spray.
  • After poaching the chicken, shred it and put into a large mixing bowl. Add to the chicken 1 cup of the Mexican cheese (reserve the remaining); 1/2 cup of the scallions (reserve the remaining); garlic powder, cumin, onion powder, lemon-pepper, and salt. Give a good toss.
  • To the chicken and cheese mixture add the black beans, corn, diced tomatoes, and 1 cup of the enchilada sauce (reserve the remaining); blend well and set aside.
  • Spread 1 cup of the encilada sauce in the baking dish. Heat the remaining in a large skillet until warm.
  • Completely submerge each tortilla (one-at-a-time) in the warmed sauce. Shake off the excess sauce and transfer the tortilla to a large plate.
  • Spoon about 1/3 cup of the chicken mixture evenly on each tortilla; roll up and place seam side down in the prepared baking dish. Repeat these steps with the remaining tortillas.
  • Pour the reserved enchilada sauce over the tortillas, spreading evenly and covering tortilla edges. Top with the olives, and the remaining cheese and scallions.
  • Cover with heavy-duty foil and bake for 30 minutes, or until the cheese is bubbly and the filling is hot.
  • Remove from oven and let stand for 5 minutes. Serve with some or all the garnishes. A freshly tossed green salad dressed in olive oil and red-wine vinegar will make this meal complete.

1 cup chopped onions
1/4 cup chopped pickled jalapeño slices
2 cups chopped cooked chicken
1 can (14.75 oz.) cream-style corn
1/4 lb. (4 oz.) 2% Milk VELVEETA, cut up

Steps:

  • Preheat oven to 350°F. Heat dressing in skillet on medium-high heat. Add onions and jalapeño slices; cook 10 min. or until tender, stirring occasionally. Add chicken and corn; mix well.
  • Spoon into lightly greased 1-qt baking dish; top with the cheese.
  • Bake 20 min. or until heated through (160°F).
