Steps:
- Place cauliflower and broccoli in 2-qt. microwaveable dish. Add water; cover. Microwave on HIGH 8 to 10 minute or until vegetables are tender; drain. Set aside.
- Microwave cream cheese and milk in 2-cup microwaveable measuring cup or medium bowl 1 minute or until cream cheese is melted and mixture is well blended when stirred. Add sour cream; mix well. Pour over vegetables; sprinkle with Cheddar cheese.
- Microwave 2 minute or until cheese is melted.
- Mix cracker crumbs and Parmesan cheese. Sprinkle over vegetables.

- Preheat oven to 350 degrees. In a food processor, combine bread and Parmesan. Pulse until coarse crumbs form, about 3 to 4 times; set aside.
- In a large saucepan with a lid, melt butter over medium heat. Add flour; cook, whisking constantly for 1 minute. Whisk in milk.
- Add cauliflower, and season with salt and pepper. Bring to a boil, and reduce to a simmer. Cover, and cook until starting to soften, about 5 minutes. Remove from heat; gradually stir in Gruyere.
- Pour mixture into a 2-quart baking dish, and sprinkle with breadcrumb mixture. Cover with aluminum foil; bake until cauliflower is easily pierced with a knife, about 20 minutes. Remove foil, and bake until breadcrumbs are golden brown, about 20 minutes more. Serve.

- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower florets, cover, and steam until tender, about 15 minutes. Drain; transfer cauliflower to a 9x13-inch baking dish.
- Preheat oven to 350 degrees F (175 degrees C).
- Melt butter in a large skillet over medium heat. Add onion and garlic; cook and stir until softened, 5 to 7 minutes.
- Combine sour cream, Cheddar cheese, cream of chicken soup, salt, and black pepper in a large bowl; fold in onion mixture. Pour sour cream mixture over cauliflower in baking dish. Scatter cracker crumbs on top.
- Bake in the preheated oven until bubbly and cheese is melted, about 20 minutes.

Steps:
- Cook cauliflower flowerets until just tender; drain and mix in 3/4 cup of the grated cheese (reserve a 1/4 of a cup of cheese).
- Brown onions and parsley in butter.
- Add tomatoes, bouillon cube, sugar, salt, pepper, and breadcrumbs to the onion mixture and simmer 5 minutes.
- Place half of the tomato mixture in a large casserole.
- Add cauliflower on top of the tomato mixture.
- Then add the 1/4 cup of cheese over the cauliflower layer.
- Bake at 350 degrees F. for 15 minutes or until bubbly.

- In a microwave safe dish, combine the cauliflower, butter, cream, salt and pepper and mix thoroughly. Microwave on high for about 25 minutes, or until tender. (Edit: There seems to be some confusion about this amount of time. Cook it til it's soft. It takes me 25 minutes for this much cauliflower in my microwave, yours might be less. You can always start with 10 minutes, then 10 more, then 5 more if necessary. The key is to get it soft enough to mash with a fork. This amount of time also sweetens the cauliflower and reduces the cream and butter, making it like a thick sauce.) Remove from the microwave and mash with a fork or potato masher. Taste and season with more salt or pepper if necessary. Lay the slices of cheese across the top of the cauliflower. Microwave for another 2- 3 minutes or until the cheese has melted. Serve hot!
