Baked Cauliflower and Cheese image

A delicious creamy cauliflower dish with cheese. For a quick version serve without final step of baking!

1 head cauliflower, cut into florets
½ cup vegetable broth
1 tablespoon salted butter
1 tablespoon all-purpose flour
⅓ cup heavy cream
1 teaspoon white sugar
¾ teaspoon salt
¼ teaspoon ground white pepper
⅛ teaspoon garlic powder
⅛ teaspoon onion powder
¼ cup grated Parmesan cheese

Steps:

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, 15 to 20 minutes. Drain and let cool enough to handle, 5 to 10 minutes.
  • Preheat the oven to 400 degrees F (200 degrees C). Lightly butter a casserole dish.
  • Transfer florets into the bowl of a food processor. Add broth and puree on high speed until smooth, but with some very small pieces remaining for just a bit of texture.
  • Melt butter in a saucepan over medium heat until a pinch of flour sprinkled into the oil will just begin to bubble. Whisk in flour to form a thick paste the consistency of cake frosting. Continue cooking, whisking constantly, until flour has turned golden and begins to smell like toast, 3 to 5 minutes.
  • Stir in pureed cauliflower, cream, sugar, salt, white pepper, garlic powder, and onion powder. Set over medium heat and cook, stirring often, until thick, 5 to 10 minutes. Transfer to the prepared dish and sprinkle with Parmesan cheese.
  • Bake in the preheated oven until golden and cheese is melted, 10 to 15 minutes.

cooking spray (such as Pam®)
3 cups bite-sized cauliflower florets
1 egg
½ tablespoon all-purpose flour
½ cup milk
salt and ground black pepper to taste
2 cups shredded sharp Cheddar cheese
1 pinch ground paprika

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a baking dish with cooking spray.
  • Place cauliflower in a microwave-safe bowl with 1/2 cup water. Microwave until tender-crisp, about 5 minutes. Drain and transfer to the prepared baking dish.
  • Whisk egg and flour together in a bowl. Add milk, salt, and pepper. Pour over cauliflower florets. Sprinkle Cheddar cheese and paprika on top.
  • Bake in the preheated oven until cheese is melted and cauliflower is soft, 30 to 40 minutes.

Cauliflower and cheese , what a good combination and a great quick and easy recipe . Make as a side order goes well with any thing . Or even mix it up with a bit of colour , as I do with this dish on St. Patricks day . I add broccoli as well as cauliflower just looks so nice the green and white ... so I hope you will like ......

Number Of Ingredients 6

1/2 fresh head of cauliflower (or you can use frozen)
1 c fresh cream + 1/2 teaspoon of butter
1 c white cheddar cheese grated.
pinch of salt and cracked black pepper
1/2 tsp ground or grated nutmeg
1 small handful of breadcrumbs for top

Steps:

  • 1. Wash and cut in half the cauliflower and cut out the hard bit in the middle we don't need it. Then cut again into quarter cut pieces. Then place the cauliflower into an oven proof dish.
  • 2. In a pot over medium heat add in the butter let it melt coating the bottom of the pot. This will stop the cream from burning or sticking to the bottom of your pot. Pour in the cream, add to that some grated nutmeg this adds great flavour to the cream and also season with some salt and pepper and stir well.
  • 3. Once the cream has started to bubble don't let cream boil. Add in the grated cheese and stir constantly until the cheese has melted smoothly into the cream the cheese sauce should appear slightly thicker now.
  • 4. Then pour the cheese sauce over the cauliflower, and sprinkle over the bread crumbs. Cook in the oven at 180c/ 350f for 15 minutes until a nice golden brown colour and the cauliflower is tender.

1 head cauliflower
¼ cup butter, cut into pieces
1 teaspoon mayonnaise
1 teaspoon prepared mustard
½ cup grated Parmesan cheese

Steps:

  • Steam whole head of cauliflower for 30 minutes. Drain and place on a pie plate.
  • Preheat oven to 375 degrees F (190 degrees C).
  • In a mixing bowl, combine mayonnaise and mustard; spread the mixture over cauliflower and dot with pats of butter. Sprinkle generously with Parmesan cheese.
  • Bake at 375 degrees F (190 degrees C) uncovered, for about 30 minutes, or until the cheese is brown.

I made this cheesy cauliflower dish for dinner one night when my husband was gone. It was so good the boys and I ended up not eating anything else but the casserole! I used fat-free milk and cream cheese and it turned out great!

2 ounces fat-free cream cheese, softened
¼ cup fat-free milk
¼ cup grated Parmesan cheese
¼ cup shredded Cheddar cheese
½ cup bread crumbs
2 tablespoons butter, melted

  • Preheat the oven to 350 degrees F (175 degrees C).
