1 cold rotisserie chicken
3/4 cup coarsely chopped cashews
3/4 cup chopped celery
1/2 cup minced red onion
3/4 cup light sour cream
1/4 cup mayonnaise
2 tablespoons lemon juice
3/4 teaspoon dry tarragon
1/4 teaspoon pepper
salt

Steps:

  • Remove and discard skin and bones from rotisserie chicken. Tear meat into bite- size pieces and place in a large bowl with cashews, celery and onion. Mix together remaining ingredients in a small bowl and stir into chicken mixture. Chill for 1 hour to allow flavors to blend. Serve over salad greens or spoon into tomato cups, croissants or pita bread.

This is one of my very favorite dishes. The crisp vegetables and cashews with the chicken and sauce is just superb. It's an easy recipe to do and very rewarding. There's 1 hour of marinating time.

1 1/2 lbs chicken breasts
1/2 cup teriyaki sauce
1 tablespoon grated fresh ginger
1 tablespoon fresh garlic
3 celery ribs, sliced
3 green onions, sliced
2 tablespoons vegetable oil, divided
1 1/4 cups chicken broth
1 1/2 tablespoons cornstarch
2 tablespoons soy sauce
1 cup cashews
chow mein noodles

Steps:

  • Cut chicken in thin strips, place in shallow dish.
  • Combine teriyaki sauce, ginger and garlic.
  • Pour over chicken.
  • Cover and chill 1 hour.
  • Drain chicken, discard marinade.
  • Stir fry celery,and onions in 1 TBS oil in large skillet 3 minutes.
  • Remove from skillet and set aside.
  • Stir fry chicken in remaining oil 4 minutes.
  • Remove from skillet and set aside.
  • Mix broth,cornstarch and soy sauce.
  • Pour into skillet and cook and stir until thickened.
  • Add vegetables, chicken and cashews, stir until heated thru.
  • Serve over chow mein noodles.

QUICK & EASY CASHEW CHICKEN

A simple way to make this popular restaurant dish at your home. I sort of invented it by experimenting at home and it has become my husbands absolute favourite! If you'd prefer it spicy, just add some crushed red pepper along with the garlic, onion and cumin.

1 -1 1/2 lb boneless skinless chicken breast
1 small onion
1 (8 ounce) can Chinese vegetables, drained (baby corn, water chestnuts, bean sprouts, bamboo shoots)
1 (9 1/2 ounce) can Planter's fancy cashews
1 (1 1/4 ounce) package McCormick's chicken stir-fry seasoning packet
3 dashes garlic powder
3 dashes onion powder
1 dash cumin powder
sesame oil

Steps:

  • Dice chicken into small pieces, approx 1/2" to 3/4" cubed.
  • Cut up onion into small pieces.
  • Heat wok at high heat on stove, add a small amount of sesame oil to coat bottom of pan.
  • When oil is hot, begin browning chicken by stirring continuously with chopped onion, garlic, onion and cumin.
  • When cooked through, remove from pan and set aside.
  • In same pan (you do not need to clean it!), empty can of vegetables into pan and stir fry for about 2 minutes.
  • Then, return chicken and onion mixture to pan.
  • Add seasoning packet and just enough water to dissolve.
  • Stir fry for three minutes.
  • Serve with steamed white rice.

1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
2 tablespoons dry sherry
2 teaspoons minced peeled fresh ginger
3 1/2 teaspoons cornstarch
Coarse salt
1/2 cup low-sodium chicken broth
2 tablespoons soy sauce
1 tablespoon rice vinegar
2 teaspoons sugar
1 tablespoon plus 2 teaspoons vegetable oil
2 garlic cloves, chopped
2/3 cup unsalted cashews, toasted
2 scallions, white and green parts separated and thinly sliced
Cooked white rice, for serving

Steps:

  • In a medium bowl, toss chicken with sherry, ginger, and 1 1/2 teaspoons cornstarch; season with salt. Refrigerate 30 minutes. In another bowl, combine broth, soy sauce, vinegar, sugar, and 2 teaspoons cornstarch; set sauce aside.
  • In a large nonstick skillet, heat 1 tablespoon oil over medium-high. Add half the chicken and cook until golden and cooked through, about 5 minutes. Transfer chicken to a plate. Add 1 teaspoon oil to skillet and cook remaining chicken (reduce heat if chicken is over-browning). Transfer to plate.
  • To same skillet, add 1 teaspoon oil, garlic, cashews, and scallion whites. Cook, stirring constantly, until garlic begins to soften, 30 seconds. Whisk sauce and add to skillet along with chicken. Cook until sauce thickens, about 30 seconds. Top with scallion greens and serve with rice.
