This is a great marinade, very easy, and you probably already have everything you need...just need to get the meat

5 lbs flap steak
3 cups soy sauce
1 cup orange juice
1/2 cup lemon juice
1 (12 ounce) can beer

Steps:

  • Get your flap steak at a mercado (Mexican Market) or Carniceria (Mexican Butcher) if one is available.
  • It will also be sold as Carne Asada Ranchera.
  • If this isn't available, you may also purchase skirt steak at your local grocery store, but it's not quite the same.
  • The flap steak has the texture and fat content to come out'just right'.
  • Mix your marinade together in a bowl large enough to hold all plus the meat.
  • Place the meat in the marinade, cover and refrigerate for 24 hours.
  • Grill the meat on high heat on your grill, until it is brown on both sides.
  • Cook to a temperature you prefer.
  • For most this is well done, I happen to like it so it is stil juicy.
  • Serve with flour or corn tortillas, and the sides you like, such as cheese, onions, hot sauce, etc.
  • I recommend fresh flour tortillas (probably at the same mercado you got the meat at), and by fresh, I mean made that day.
  • Regular tortillas are ok, but fresh is better.
  • If you have a Chevy's or Don Pablos or other restaurant that makes their tortillas fresh for their customers, go buy some.
  • It's usually about$2 per dozen, and well worth it.

Easy, yummy & delicious. You can add additional heat to this dish by adding some cayenne pepper or red pepper flakes to this. Also jalapenos can be served with the toppings. I have a recipe on my blogspot for homemake tortillas if interested... joellemjohnson.blogspot.com

Number Of Ingredients 8

1/4 pork loin (about 3 lbs)
1 onion
2 can(s) enchilada sauce ( i use 1 can hot, 1 can mild)
2 tsp sugar
1 clove garlic, minced
seasonings of your choice ( i used chili powder,cumin, paprika,seasoned salt & pepper)
flour tortillas
toppings of your choice (i use sour cream, lime,shredded cheese, avacado, lettuce & tomato, & green onion thinly sliced

Steps:

  • 1. Mix seasonings in small bowl. Set aside. Peel onion cut in half lenghtwise & slice in thin 1/2 moons, seperating rings.
  • 2. Pour enchilada sauce in large crockpot. Spread onions over sauce. Sprinkle the seasonings over onion mixture reserving a couple of tablespoonfuls. Place pork loin in crockpot turning to cover meat with sauce. Sprinkle remaining seasoning over top. Cook meat on high for around 4 hours. Turn meat over, then turn heat down and cook for an additional 2 hours or until meat is falling apart.
  • 3. Take meat out and place on platter. With 2 forks shred meat. Spoon a couple of tablespoons of sauce ontop of meat.
  • 4. Serve wtih tortillas, and toppings of your choice. I spoon some sauce into small bowls, and dip the tacos into sauce( I usually squeeze a little lime over the sauce to add additional flavor while eating. Enjoy
