Steps:
- Mix the brown sugar, half-and-half, butter and salt in a saucepan over medium-low heat. Cook while whisking gently for 5 to 7 minutes, until it gets thicker. Add the vanilla and cook another minute to thicken further. Turn off the heat, cool slightly and pour the sauce into a jar. Refrigerate until cold.

- Cream butter and sugar, then add egg and beat.
- Add rest of dry ingredients and beat til mixed.
- Fold in apples and pecans. Pour into greased and floured large round, deep cake pan. *Use greased and lightly floured parchment paper
- on the bottom for easier removal.
- Bake at 350º for 35-40 minutes.
- Cool a bit, turn out onto rack to cool completely. *Can serve warm, too.
- Meanwhile, make caramel sauce.
- Caramel sauce:
- Melt butter, brown sugar and salt in pan over low-med heat,
- stirring, for about 2-3 minutes.
- Remove from heat, stir in vanilla and cream and stir well till not grainy.
- Drizzle lots of caramel sauce over cut cake slices when serving.
- Sprinkle chopped pecans on top of that if desired.
- 8 servings.

CARAMEL SAUCE IN CROCKPOT, SUPER EASY!
My very good friend Jana McK. gave me this recipe for the stove top. I have adapted it for the crock pot. It makes for a super easy, no fuss caramel dipping sauce. Great for fruit, nuts and even pretzels. Only 2 ingredients. Remember crock pots vary in their heat intensities. Mine gets very hot on high. Finally, you might want to line the crockpot with those disposable liners to make it easier to clean up the sticky glue from the can and make sure you wait until the can is warm, not hot or the "sauce" will explode.

Steps:
- Take can of sweetened condensed milk and remove label. (Do Not Open).
- Place in a 3-1/2 to 4-1/2 quart crock pot.
- Pour water in crock pot until the can is completely covered with water. You only need water to be 1/4 in over the top of can.
- Put lid on crock pot.
- Heat on high for 3-1/2 to 4-1/2 hours (the longer the milk cooks the darker the caramel will be).
- At desired time remove can with tongs (Be careful the can will be very hot).
- Allow to cool to the point that you can touch the can, but the can will be still warm.
- Open can and pour contents into a bowl that has a good sealing lid.
- Stir in the vanilla extract.
- At this point you are ready for dipping.
- Any leftovers can be placed in the refrigerator.

- For the crust: Preheat the oven to 350 degrees F.
- Crush the graham crackers in a food processor or resealable plastic bag. Pour the crumbs into a bowl and stir in the melted butter. Press into a pie pan and bake until golden and set, about 5 minutes. Set aside to cool completely.
- For the filling: Remove the ice cream from the freezer and allow to soften slightly. Mix in the pecans, peanut butter cups and peanut butter crunch candy bars and pour the ice cream mixture into the crust. Cover with foil and freeze until very hard, 1 to 2 hours.
- For the caramel sauce: Mix the brown sugar, half-and-half, butter and salt in a saucepan over medium-low heat. Cook, while whisking gently, until thicker, 5 to 7 minutes. Add the vanilla and cook another minute to thicken further. Pour the sauce into a jar and refrigerate until cold.
- To serve, cut slices of the pie and serve on individual plates with cold caramel sauce spooned over the top and sprinkled with pecans. Serve with extra caramel sauce on the side.

This maple caramel sauce is so incredibly easy--only two ingredients! I originally made it to drizzle over smoked pork chops but quickly realized it could also be served over ice cream (or your favorite dessert). It's so buttery-smooth and decadent. Yum!

- Melt together maple syrup and butter in a small saucepan over medium heat.
- Stirring with a wooden spoon, cook over medium heat for 10-12 minutes until the sauce thickens to the consistency of a smooth caramel sauce. If necessary, whisk to thoroughly incorporate melted butter.
- Remove from heat and allow to cool for 5 minutes. As it cools, a thin skin may form on top. Just stir it once more with your wooden spoon before drizzling over your food of choice.

WAY TOO EASY CARAMEL SAUCE/DIP

- In medium microwave proof mixing bowl, stir together all ingredients except vanilla. Microwave on high (1200 watts power microwave) for 2 minutes, stir well. Return to microwave on high for 1 minute and thirty seconds. (Watch carefully so it doesn't boil over) Stir again and return to microwave for 1 minute. Stir well and place a small amount (couple of teaspoons) on cold plate to see if texture is thick enough when cooled to room temp. If not, microwave another 30 seconds or so. Remove and add the vanilla, stir to incorporate. Set aside to cool for ice cream topping or for apple dip. Refrigerate in airtight container til use. (this will make it stiff, just zap for 10 or 20 sec to bring back to softer form)
