BUFFALO CHICKEN PASTA



Buffalo Chicken Pasta image

This is a nice meal for when you are craving buffalo wings. The celery is definitely optional. This isn't super healthy, but I usually help it out by using WW pasta, Olive Oil (or bake the chicken), Olive Oil Mayo, and skim milk. Also feel free to sub Ranch dressing for the Blue Cheese. Definitely serve it with a big salad!

1 lb penne pasta
1 tablespoon paprika
1/2 tablespoon salt
1/2 tablespoon garlic powder
1/2 tablespoon pepper
1 lb chicken breast, cut into strips
1/4 cup olive oil
1/2 cup Frank's red hot sauce
1 cup celery, diced
1 large red onion, sliced into quarter rings
1 cup mayonnaise
1/2 cup blue cheese dressing
3/4 cup milk

Steps:

  • Cook pasta according to directions.
  • While pasta is cooking, prepare chicken with spices and cook in oil.
  • When chicken is about 1/2 cook through, add the onion, celery, and saute until chicken is fully cooked.
  • Now add the hot sauce and saute with chicken for about 2 minutes.
  • Combine mayo, dressing, and milk in medium bowl. Add to skillet and heat through and stir to combine.
  • Toss with pasta.

I came up with this by piecing together a bunch of different recipes and then sifting down the ingredients to make it tasty and easy. If you want to get "fancy" you can add some chicken and sauteed red pepper and onion. One of my hubby's favorites!

1/2 lb linguine
1 tablespoon buffalo wing sauce, to taste (or more, I like "Anchor Bar Buffalo Sauce" or "Frank's RedHot Buffalo Wings sauce" because they have)
1 tablespoon butter
1/4 cup milk
1 teaspoon chicken bouillon granule

Steps:

  • Cook noodles al dente.
  • Drain noodles.
  • While noodles are still very hot, add butter and stir to melt and coat noodles.
  • Move noodles to one side in pan and pour in milk on other side.
  • Add boullion granules to milk and whisk with fork until they are a bit dissolved.
  • Add buffalo sauce to milk mixture and stir.
  • Mix noodles and sauce together and serve.
  • Make sure to put the bottle of buffalo sauce on the table with the meal so guests can add more if they want spicier pasta.

2 cups rigatoni pasta
2 cups shredded cooked chicken breast
1 teaspoon dry ranch salad dressing mix (such as Hidden Valley Ranch®)
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon garlic powder
1 (8 ounce) package Neufchatel cheese
1 (8 ounce) container sour cream
½ cup Buffalo wing sauce (such as Frank's RedHot®)
½ cup shredded sharp Cheddar cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook rigatoni in the boiling water, stirring occasionally until tender yet firm to the bite, about 12 minutes. Drain and set aside.
  • Season chicken with ranch dressing mix, salt, pepper, and garlic powder. Set aside.
  • Meanwhile, combine Neufchatel cheese, sour cream, and Buffalo wing sauce in a large saucepan over low heat. Cook, stirring constantly, until well combined, about 3 minutes. Add Cheddar cheese and stir well until melted. Add pasta and chicken and continue cooking until well incorporated and heated through.

For anyone who likes Buffalo wings, this is a great change of pace from normal pasta salad. Really popular as a side dish for a barbeque or just about any gathering you can think of. You can substitute or add many different vegetables with this recipe.

1 (16 ounce) package uncooked rotini pasta
½ cup mayonnaise
1 cup chunky blue cheese dressing
½ cup buffalo wing sauce
1 teaspoon salt
½ teaspoon black pepper
1 pound frozen cooked chicken strips, defrosted and diced
½ cup red bell pepper, diced
½ cup green bell pepper, diced
1 cup red onion, diced

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the rotini, and return to a boil. Cook uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink.
  • Stir together the mayonnaise, blue cheese dressing, buffalo wing sauce, salt and pepper in a large bowl. Add the chicken, bell peppers, red onion, and cooked pasta and toss to coat with the dressing. Cover and chill at least 1 hour in the refrigerator before serving.
