Fast and Easy Ricotta Cheese Pizza with Mushrooms, Broccoli, and Chicken image

This is a delicious pizza with a buttery ricotta cheese sauce and with a topping of mushrooms, broccoli, and chicken breast.

1 tablespoon butter
1 skinless, boneless chicken breast, cut into bite-sized chunks
1 (8 ounce) container ricotta cheese
1 tablespoon butter
1 teaspoon garlic powder
1 teaspoon dried oregano
salt and ground black pepper to taste
1 (12 inch) pre-baked pizza crust
2 cups shredded mozzarella cheese
½ cup chopped fresh broccoli
1 (3 ounce) can sliced mushrooms, drained

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C).
  • Melt 1 tablespoon butter in a skillet over medium heat. Cook the chicken in the butter until no longer pink and the juices run clear, 7 to 10 minutes; remove from heat and set aside.
  • Combine the ricotta cheese, 1 tablespoon butter, garlic powder, oregano, salt, and pepper in a microwave-safe bowl. Heat in microwave for 1 minute; stir to combine. Spread the mixture over the pizza crust. Scatter the mozzarella cheese evenly over the pizza. Arrange the cooked chicken, broccoli, and mushrooms evenly on top of the pizza.
  • Bake in the preheated oven until the cheese is melted, about 20 minutes.

Four Cheese White Broccoli Pizza (Easy) image

A fabulous white pizza... again, four cheeses are used (grated parmesan, provolone, ricotta, & mozzarella) as well as fresh broccoli florets. You could substitute with spinach if you like, but we LOVE this recipe as is... I buy the pre-made pizza dough from my grocery store to save time, but you could always make your own of course. Also, I use MILD provolone - it's pre-packaged & pre-sliced think it is Belgioioso brand. Note: I use the 12 oz. bag of "Broccoli Wokly" which is already cut into florets - I steam it according to the package directions first in the bag & use the full bag on the pizza.

4 tablespoons extra virgin olive oil
1 lb pizza dough
1/4 cup grated parmesan cheese
3/4 lb provolone cheese, sliced (mild)
12 ounces broccoli florets (I use Broccoli Wokly whole 12 oz. bag steamed)
1/3 cup ricotta cheese
1/2 cup mozzarella cheese, shredded
garlic powder
salt
oregano

Steps:

  • Preheat oven to 425 degrees.
  • Roll out dough. Coat pizza pan with the olive oil and spread out rolled dough evenly to all edges of pan. Sprinkle with grated parmesan cheese. Top with sliced provolone then place broccoli florets (already steamed per broccoli wokly package directions) on top of provolone. Using two teaspoons, spoon about 3/4 teaspoonful size spoonfuls of ricotta sporadically around the broccoli areas in empty spots. Season whole pizza with salt, oregano & garlic powder to taste then sprinkle the shredded mozzarella evenly all over pizza.
  • Bake for 12-18 minutes or until crust just golden brown. Slice & serve.

I had some boboli pizza crust and some tyson frozen chicken strips, so I made this pizza w/ just ingredients on hand and it came out so yummy!

1/2 c reduced-fat, shredded mozzarella cheese
1 c reduced-fat alfredo sauce, like bertolli
6 oz tyson frozen chicken strips, cut into pieces
1 whole wheat boboli pizza crust

Steps:

  • 1. Heat oven to 350. Lightly spray a pizza pan w/ olive oil cooking spray. Sprinkle pan w/ garlic powder.
  • 2. Place pizza crust on pan. Spread crust w/ sauce. Sprinkle w/ chicken pieces. Spread w/ broccoli. Sprinkle w/ cheese. Bake 15 mins.

EASY SPINACH BROCCOLI PIZZA

2 pkg instant pizza crust mix (if using lg cookie sheet as in pic)
1 c fresh spinach leaves or enough to spread over entire pizza
1 c chopped broccoli florets
1 jar(s) alfredo sauce
1 pkg shredded mozzerella

Steps:

  • 1. Prepare pizza crust as directed. (Some have different temp settings. So just keep an eye on them when baking.) Preheat oven to setting recommended on package.
  • 2. Chop broccoli florets into smaller pieces if you like. Keep spinach whole. It will shrink up when cooked.
  • 3. When dough is ready, spread on cookie sheet. Spread jar of alfredo sauce evenly over dough. Place as little or as much fresh spinach as you desire over sauce. Add chopped broccoli. Sprinkle shredded mozzarella evenly. Bake about 10 - 20 min or until cheese is melted & crust is golden brown.

1 package (16 ounces) Italian bread shell or ready-to-serve pizza crust (12 to 14 inches in diameter)
2/3 cup pizza sauce
1 teaspoon olive or vegetable oil
1 clove garlic, finely chopped
1 small onion, finely chopped (1/4 cup)
2 cups broccoli slaw
2/3 cup shredded mozzarella cheese
2 tablespoons grated Parmesan cheese

Steps:

  • Heat oven to 450°.
  • Place bread shell on ungreased cookie sheet. Spread pizza sauce evenly over bread shell.
  • Heat oil in 8-inch skillet over medium heat. Cook garlic and onion in oil, stirring occasionally, until onion is tender. Stir in broccoli slaw. Cook 5 to 6 minutes, stirring occasionally and adding up to 2 tablespoons water if necessary to prevent sticking, until broccoli is crisp-tender.
