When faced with the "what do I serve a crowd before noon?" dilemma, opt for this easy breakfast casserole. Spend 20 minutes assembling the ingredients the night before, store it overnight in the fridge and pop it into the oven the next morning.

24 oz bulk pork sausage
1 medium bell pepper, chopped (1 cup)
1 medium onion, chopped (1/2 cup)
3 cups frozen hash brown potatoes
2 cups shredded Cheddar cheese (8 oz)
1 cup Original Bisquick™ mix
2 cups milk
1/4 teaspoon pepper
4 eggs

Steps:

  • Heat oven to 400°F. Grease 13x9-inch (3-quart) baking dish. Cook sausage, bell pepper and onion in 10-inch skillet over medium heat, stirring occasionally, until sausage is no longer pink; drain. Stir together sausage mixture, potatoes and 1 1/2 cups of the cheese in baking dish.
  • Stir Bisquick™ mix, milk, pepper and eggs until blended. Pour into baking dish.
  • Bake uncovered 40 to 45 minutes or until knife inserted in center comes out clean. Sprinkle with remaining cheese. Bake 1 to 2 minutes longer or just until cheese is melted. Cool 5 minutes.

A little sweet, a little savory and a lot of delicious. This easy breakfast casserole can even be prepped the night before.

1 pound breakfast sausage
2 (8 ounce) packages refrigerated crescent rolls
7 eggs
½ cup milk
¾ cup MUSSELMAN'S® Apple Butter
½ cup shredded sharp white Cheddar cheese

Steps:

  • Preheat the oven to 375 degrees F. Lightly spray a 3-quart casserole dish (or a 13x9-inch pan) with nonstick cooking spray.
  • Brown the sausage in a skillet and crumble it as it cooks. Remove to a paper towel to drain any excess grease.
  • Roll up the crescent rolls according to your package instructions and line them up in the casserole dish (it is okay if they touch).
  • Whisk together the eggs, milk, apple butter and optional cheese.
  • Scatter the cooked sausage over the top of the crescent rolls in the dish. Pour the egg mixture over the top.
  • Bake for 35-40 minutes or until the eggs have completely set in the center.
