¾ cup Italian seasoned bread crumbs
1 (1 ounce) package dry Ranch-style dressing mix
2 ½ tablespoons vegetable oil
1 pound tilapia fillets
2 teaspoons butter

Steps:

  • Place the bread crumbs in a bowl. In a shallow dish, mix the dressing mix and oil to form a paste. Coat the tilapia fillets with the paste, then dredge in the bread crumbs to lightly coat.
  • Melt the butter in a skillet over medium heat. Place the fillets in the skillet, and cook 5 minutes on each side, or until golden brown and easily flaked with a fork.

This is a dish that I make often because it's tasty, easy and doesn't leave my house smelling like oil for 2 days!!

2 lb white fish fillets
1 c bread crumbs
1 Tbsp herbs of choice (i prefer thyme or oregano)
1/2 tsp garlic powder (or more to taste)
3/4 tsp salt
1/2 tsp ground black pepper
2 Tbsp grated parmesan (optional)
1/2 tsp paprika, cayenne pepper, allspice, white pepper, or other dried herbs (optional)
1 stick butter, melted
1 Tbsp lemon juice

Steps:

  • 1. -Preheat oven to 500°F. (400°F or more) -Grease a shallow baking dish (enough to hold all fish without overcrowding). -Pat dry the fish fillets with kitchen paper. -Season the fillets with salt and pepper to taste (do not over do it because the coating is seasoned as well) -In a bowl, mix all dry ingredients (breadcrumbs + seasoning + herbs + cheese) -In another bowl, mix the melted butter with the lemon juice. -Dip the fish fillets in the butter/lemon mixture then in the breadcrumbs mixture. -Place fillets in a greased baking pan. -Bake uncovered at 500°F for 10-15 minutes, or until fish flakes easily with a fork. (depends on fish type and thickness) **I like to drizzle some olive oil or put few butter nobs on the fillets before baking them, so that the breadcrumbs become crispier and more golden. **Don't expect the same color and crispiness of deep fried fish, but it is a really good and tasty alternative. My family loves it.

1 lb. fish fillets (1/4 to 1/2 inch thick)

Steps:

  • Heat oven to 350°F. Spray shallow baking pan with nonstick cooking spray. In shallow dish or pie pan, combine croutons, cheese, parsley flakes and paprika; mix well. In another shallow dish, combine egg, lemon juice and water; beat well.
  • Cut fish fillets into serving-sized pieces. Dip in egg mixture, tucking thin ends of fish under to form pieces of uniform thickness. Dip fish in crouton mixture, patting gently to coat; place in sprayed pan. Spray fish with cooking spray for about 5 seconds.
  • Bake at 350°F. for 10 to 15 minutes or until fish flakes easily with fork.

8 small fillets of sole, flounder or fluke, about 1 1/2 pounds
1 egg
Salt and freshly ground pepper to taste
3 tablespoons water
1 tablespoon plus 1/3 cup peanut, vegetable or corn oil
1/2 cup flour
3 cups fresh bread crumbs
3 tablespoons butter
Juice of 1 lemon

Steps:

  • Put the fillets on a flat surface. There may be a small bone line running partly down the center of each fillet. If so, cut on both sides and discard it.
  • Beat the egg, salt, pepper, water and one tablespoon of oil in a flat dish.
  • Put the flour in a flat dish and toss the fillets in it. Shake off excess.
  • Put bread crumbs in a flat dish.
  • Dip the floured fillets, one at a time, in the egg mixture to coat well. Dip them on both sides in the bread crumbs and pat lightly to make the crumbs adhere.
  • Heat the remaining one-third cup of oil in a heavy skillet and add enough breaded fillets to make one layer without crowding. Cook until golden brown on one side, about one and one-half to two minutes. Turn and cook about one and one-half minutes on the second side. The cooking times will depend on the thickness of the fish. It may be necessary to add more oil if it disappears. As the fillets are cooked transfer them to a warm serving platter. Continue cooking until all the fillets are done.
  • Pour off the oil from the skillet and wipe it out with paper towels.
  • Put the butter in the skillet and swirl it around over high heat until it starts to foam. Continue cooking until it starts to become hazelnut brown. Pour this over the fish. Sprinkle the fish with the lemon juice and serve.
