- Mix together chicken, adobo sauce, paprika, 1 teaspoon of the salt, and 3/4 teaspoon of the pepper in a large bowl using your hands. Shape into 4 (3/4-inch-thick) patties. Arrange patties between 2 sheets of wax paper on a baking sheet; freeze 15 minutes.
- Meanwhile, stir together coleslaw mix, mayonnaise, vinegar, sugar, and remaining 3/4 teaspoon salt and 1/4 teaspoon pepper in a bowl until thoroughly combined.
- Heat a grill pan over medium-high; generously coat with cooking spray. Add patties to pan; cook until a thermometer inserted in thickest portion of patties registers 165°F, about 5 minutes per side. Transfer to a plate; immediately brush tops evenly with 2 tablespoons of the barbecue sauce.
- Spread cut sides of bottom bun halves evenly with mustard; top with patties, slaw, pickles, and remaining 2 tablespoons barbecue sauce. Replace top bun halves.

Wanted something different than a chicken parmesan or a boring sandwich to use with some chicken patties I had in the freezer. Came up with this super easy, kid approved idea. Served with potato salad and it feels like a picnic!

- Bake chicken patties according to direction, usually about 17 minutes.
- Turn oven to broiler setting.
- Spoon barbecue sauce on top.

IMPOSSIBLY EASY BARBECUE CHICKEN PIE

- Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray. Layer chicken, corn and 3 tablespoons of the parsley in pie plate.
- In medium bowl, stir Bisquick mix, milk, 1/4 cup barbecue sauce and eggs with wire whisk or fork until blended. Pour into pie plate.
- Bake 28 to 32 minutes or until knife inserted in center comes out clean. Brush 2 tablespoons barbecue sauce over top of pie. Sprinkle onions evenly over sauce.
- Bake 2 to 3 minutes longer or until onions are golden brown. Remove from oven; sprinkle with remaining 1 tablespoon parsley. Serve with additional barbecue sauce.
