Easy Balsamic Poached Chicken and Glaze image

I love this recipe because it's easy, I always have these ingredients on hand and it's such a great result with so little effort! Poaching the chicken in the balsamic sauce yields an extremely flavorful and juicy result! I usually serve it with asparagus or spinach and roasted potatoes.

4 boneless skinless chicken breasts
1 (14 1/2 ounce) can low sodium chicken broth
1 cup balsamic vinegar

Steps:

  • In a sauce pan, bring the chicken broth and balsamic vinegar to a boil.
  • Add the chicken. If the broth and vinegar mixture doesn't fully cover the chicken pieces, add a little more broth
  • Simmer for 2 minutes, cover, and remove the pan from heat.
  • Set pan aside for 20 minutes, until chicken is cooked through. Try not to lift the lid during the 20 minutes of cooking.
  • Remove chicken from pan and set aside. Return sauce to the stove and reduce until to about 1/2 a cup (this may take awhile to reduce, but it's worth it, stick with it).
  • Pour the reduced sauce glaze over chicken and serve!

2 tablespoons cornstarch

This all-star easy baked salmon works for a weeknight meal or a special dinner for a crowd! Topped with a flavor-packed balsamic glazed. Ready in mins!

1 cup balsamic vinegar
1/4 cup quality dark honey
4 garlic cloves, minced
1/2 tsp cayenne pepper
1/2 tsp Aleppo pepper
3 tbsp Dijon mustard
2 tbsp Private Reserve extra virgin olive oil
3 lb Salmon fillet, no skin
Salt and black pepper
1/3 cup chopped fresh parsley leaves
1/3 cup chopped fresh dill

Steps:

  • Preheat oven to 425 degrees F.
  • In a small saucepan, mix balsamic vinegar and honey. Bring to a boil over medium heat, then reduce heat to simmer. Cook for 15 minutes or so. Remove from heat, and let cool for 5 minutes.
  • To the balsamic mixture, add garlic, spices, mustard, and olive oil. Mix until well combined.
  • Line a large baking sheet with parchment paper.
  • Season salmon well with salt, and a little black pepper on both sides. Brush one side with the balsamic glaze, then lay salmon, glazed sided down, on the prepared baking sheet. Dress the top generously with the balsamic glaze (reserve a small bit of the glaze for the end.)
  • Place salmon in oven (middle rack), and bake until salmon flakes nicely. Baking time will depend on the thickness of your salmon, as determined by the thickest part of the salmon fillet. For every inch of thickness, roast 8 to 10 minutes. Could be a total of 15 to 18 minutes.
  • Remove from oven and brush with remaining glaze. Top with fresh chopped herbs. Enjoy!

Crispy oven roasted brussels sprouts baked in the most amazing honey balsamic glaze. This is one of my favorite brussels sprouts recipes!

2 pounds brussels sprouts, (bottoms cut and outer leaves removed)
3 tablespoons olive oil
4 cloves garlic, (minced)
salt and fresh ground pepper, (to taste)
1 tablespoon honey
3/4 cup white balsamic vinegar
2 tablespoons light brown sugar
freshly shaved parmesan cheese, (for topping (optional))

Steps:

  • Preheat oven to 400F.
  • Place cleaned brussels sprouts on a sheet pan and set aside.
  • In a small mixing bowl stir together olive oil, garlic, salt and pepper.
  • Pour olive oil mixture over brussels sprouts and mix until well combined.
  • Roast for 30 minutes, or until tender and slightly charred.
  • In the meantime prepare the Honey Balsamic Glaze
  • Combine honey, vinegar, and brown sugar in a saucepan.
  • Bring to a simmer over medium-high heat; simmer for 10 minutes or until thickened, stirring occasionally.
  • Remove from heat and let cool at least 5 minutes.
  • Pull brussels sprouts out of the oven and transfer to a large bowl or platter.
  • Pour prepared honey balsamic glaze over the brussels sprouts and toss to combine.
  • Add freshly shaved parmesan cheese over the brussels sprouts and serve.
