4 ripe tomatoes, sliced
4 tablespoons mayonnaise
4 tablespoons Parmesan cheese
1 tablespoon Dijon mustard
1 tablespoon brown mustard
1 teaspoon dried oregano
salt and pepper to taste
1 teaspoon chopped fresh parsley
¼ cup shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Arrange tomato slices in a single layer on a baking sheet. In a small bowl, mix together mayonnaise, parmesan, Dijon mustard, and brown mustard. Season with oregano, and salt and pepper to taste. Use a spoon to top each tomato slice with a small amount of the mayonnaise mixture. Sprinkle with mozzarella , and then top with parsley.
  • Bake in preheated oven for approximately 15 minutes, or until golden brown. Serve immediately.

  • Place tomatoes cut-side up on a baking sheet.

1/2 cup grated Parmesan cheese

Fresh tomatoes can be so much more than just another veggie in your salad. We love them covered in herbs and parmesan cheese, then baked in a hot oven. And you will too! They are the perfect side dish, so flavorful and delicious. Seriously, the easiest side dish you'll ever make!

2 large tomatoes, cut into 3-4 slices each (they'll be thick)
1/2 c grated parmesan
1/4 tsp dried oregano (add more if you like oregano)
salt and pepper to taste
olive oil to drizzle, optional (i didn't use any)
fresh parsley or basil for garnishing

Steps:

  • 1. Preheat oven to 425' F.
  • 2. In a small bowl toss together the Parmesan cheese, dried oregano, salt and pepper. Top each tomato slice evenly with the Parmesan cheese mixture. Drizzle with a bit of olive oil, if desired.
  • 3. Bake for about 5 to 10 minutes or until you notice the cheese starts to turn gold.
  • 4. Garnish with fresh parsley or basil and serve.

½ cup parmesan cheese
1 teaspoon fresh oregano
1 Tablespoon olive oil
salt and pepper, to taste

Steps:

  • Preheat oven to 425 degrees F.
  • Wash tomatoes and slice in half horizontally.
  • If that is too thick for your liking, you can cut out some of the tomato from the center to make the ends thinner.
  • Place tomatoes open ends up on a baking sheet.
  • Sprinkle cheese and oregano over the tomatoes.
  • Drizzle with olive oil and top with salt and pepper.
  • Bake for 10 minutes.
