While they don't get the same love as French fries, home fries, or steak fries, cottage fries more than hold their own against their potato side dish fraternity brothers.

4 baking (russet) potatoes, sliced into 3/8-inch thick rounds
salt and freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste
1 pinch herbes de provence, or to taste
2 tablespoons olive oil

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Line a baking sheet with parchment paper or a silicone baking mat and set aside.
  • Combine potatoes, salt, ground black pepper, cayenne pepper, and herbes de provence in a large bowl. Drizzle olive oil over potatoes and stir to evenly coat.
  • Place potatoes on baking sheet, spaced evenly, and bake in the preheated oven for 15 minutes.
  • Remove from oven, flip over each potato slice, and return to the oven for another 15 minutes. Continue cooking and flipping until potatoes are well browned, about 30 minutes. Potatoes should be crispy around edges, but still soft in the center.

Easy Baked Cottage Fries image

These are very easy to make and a great side dish. Crunchy and healthier then deep frying.

4 medium russet potatoes peeled and sliced 3/8 inch thick
1 tsp salt
1/2 tsp pepper and cayenne pepper
1 Tbsp herbs de provence
3 Tbsp olive or canola oil

Steps:

  • 1. Place potatoes in a bowl. Drizzle the oil over and sprinkle all the seasonings on them mixing to try to coat as evenly as you can.
  • 2. Preheat oven 425 degrees. Use a slip mat or parchment paper. Lay the potatoes in a single layer on paper. Will have to use probably two large baking sheets.
  • 3. Bake until browned probably 15 minutes or so. Flip and bake until other side is browned.

PARMESAN COTTAGE FRIES

This is an easy recipe that does not really need accurate measurements to come out well. The time that you bake the potatoes depends on how fat you make the chunks.

6 potatoes, cut into 1/2-inch cubes
2 tablespoons olive oil, or to taste
1 cup grated Parmesan cheese
2 cloves garlic, chopped, divided
2 tablespoons butter
salt and ground black pepper to taste
1 pinch garlic and herb seasoning blend (such as Mrs. Dash®)
12 large mushrooms, quartered
3 Roma tomatoes, diced
1 green bell pepper, cut into large chunks
1 slice onion

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Grease a 10x15-inch glass baking dish.
  • Spread potatoes into the baking dish; drizzle olive oil on top. Sprinkle Parmesan cheese and 1 garlic clove over potatoes.
  • Roast in the preheated oven for 25 minutes.
  • Melt butter in a large skillet over low heat; season with 1 garlic clove, salt, pepper, and garlic-herb seasoning. Add mushrooms, tomatoes, bell pepper, and onion. Cook and stir until softened, about 5 minutes.
  • Remove baking dish from the oven. Flip potatoes and stir in mushroom mixture.
  • Return baking dish to the oven; continue roasting until potatoes are slightly browned, about 15 minutes more.

4 cups frozen broccoli florets

1 large baking potato
olive oil, salt and pepper

Steps:

  • 1. Scrub potato, cut into wedges.
  • 2. Soak potato slices in hot water for 10 minutes or cold water for 1 hour.
  • 3. Pat potatos dry. Lightly oil and sprinkle with salt and pepper. You can use spray oil too!
  • 4. Preheat over to 475 degrees. Cover fries with foil and bake for 5 minutes.
  • 5. Uncover and continue cooking for 15 minutes. Turn potatos over and cook for an additional 15 minutes.
