REALLY EASY APPLE FRITTERS
Ever have extra apples on hand and wonder what to do with them? You're bored with apple pie, apple salad, etc. How about some apple fritters? A welcome change from the same ol', same ol'. Recipe: Paula Deen

Steps:
- 1. In a large bowl, combine the beaten egg, milk, sugar, cinnamon and sour cream. Mix well and add the flour.
- 2. Heat 2 Tbsp. oil in a large skillet to 375 degrees F. Dip the apples in batter and place in hot oil. Cook for 1 to 2 minutes. Turn and cook another 1 to 2 minutes.
- 3. Remove fritters and drain. Sprinkle with powdered sugar and serve warm. Enjoy!

- 5. NOTE: If you don't have self-rising flour on hand you can make your own: 1 cup flour 1/2 tsp. salt 1-1/2 tsp. baking powder

Steps:
- Heat oven to 200ºF.
- Mix baking mix, water and sour cream in medium bowl just until blended. Stir in apples and cinnamon.
- Heat 2 Tbsp. oil in large nonstick skillet on medium heat. Add 1/4 cup batter to skillet; repeat 3 times to make a total of 4 fritters. Flatten each to 4-inch round with back of spatula; cook 2 min. on each side or until golden brown on both sides. Transfer to ovenproof plate; place in oven to keep warm until ready to serve. Repeat with remaining oil and batter.
- Sift sugar over warm fritters. Serve warm or at room temperature.

How to make Easy Homemade Apple Fritters

- Combine flour, sugar, salt, baking powder, cinnamon. Stir in milk and egg until just combined. Fold in apple. Pour oil into skillet so that it is approximately 1 1/2 deep. Heat oil on high. Oil is ready when a little dough thrown in floats to top. Carefully add dough to oil in heaping teaspoons. Cook until brown, about 2 minutes, then flip. Cook another 1-2 minutes, until both sides are browned. Transfer briefly to paper towels to absorb excess oil, then transfer to cooling rack. Make glaze by stirring milk and powdered sugar together in a small bowl. Drizzle over apple fritters. Wait approximately 3 minutes for glaze to harden, then flip fritters and drizzle glaze over the other side. Best served warm.
