MOM'S MACARONI AND POTATO SALAD



Mom's Macaroni and Potato Salad image

My mom and grandma's macaroni and potato salads are family favorites and we have them a lot for summer get togethers. This is a combination of both recipes made into one and submitted for the Craze-E Contest.

1 lb shell pasta
4 new potatoes, if small use 6
4 hard-boiled eggs
15 ounces peas
1/4 cup plain yogurt
3/4 cup mayonnaise
1 large sweet onion, diced
2 carrots, chopped finely
2 stalks celery, chopped finely
1 teaspoon Dijon mustard
1 tablespoon fresh dill, finely chopped
salt and pepper, to taste

Steps:

  • Wash and peel the new potatoes than cut into cubes. Add potatoes and eggs to a dutch oven or large pot and over medium high heat cook until potatoes are just fork tender, approximately 20 minutes. (Do not let the potatoes get over cooked because they will turn to mush when making the salad.) Cook pasta according to package directions.
  • Drain pasta well and place in a large mixing bowl. When potatoes and eggs are ready drain well and set eggs in a bowl of ice water to cool. Add potatoes to mixing bowl with pasta and add remaining ingredients. Peel and chop eggs, add to bowl. Gently fold everything together, taste, and season with salt and pepper.
  • Place in refrigerator until chilled or overnight for best flavor. More mayonnaise and yogurt can be added if creamier texture is desired.

7 large potatoes
1 dozen hardboiled egg
1/4 sweet onion, chopped
1 cup salad dressing (Miracle Whip type)
2 tablespoons yellow mustard
1 1/3 tablespoons apple cider vinegar
1/2 lb macaroni, cooked

Steps:

  • Put in the Microwave the 7 potatoes and cook until done.
  • In a small mixing bowl combine yellow mustard, sweet onion, vinegar, and salad dressing.
  • Chop eggs.
  • Take potatoes out of microwave and peel and cut up.
  • Add all ingredients into a larger mixing bowl and toss.
  • Put in refrigerator for about an hour then serve.

1/2 lb macaroni, uncooked
8 eggs, hard boiled
3 red potatoes, cooked and cubed
1 tablespoon salt
1 tablespoon vinegar
2 cups mayonnaise
1/2 teaspoon ground allspice
1/2 teaspoon pepper
1 (10 ounce) package frozen peas, thawed and drained

Steps:

  • Cook macaroni according to package directions; drain.
  • Separate egg yolk from egg whites. In a small bowl, mash yolks and chill. Chop egg whites; put into a large bowl with macaroni and potatoes. Stir in salt and vinegar; chill overnight.
  • Add egg yolks and remaining ingredients; gently mix into macaroni mixture. Chill.

1 (16 ounce) box elbow macaroni, prepared, cooled
3 -4 hard-boiled eggs
1 -1 1/2 cup chopped celery
onion powder
garlic powder
ground mustard
salt
pepper
parsley flakes
1 cup Miracle Whip
vinegar

Steps:

  • Put macaroni in large serving bowl.
  • Mix in 2 tablespoons vinegar and place in fridge to cool.
  • Once macaroni is cool, add chopped celery and chopped hard boiled eggs.
  • Sprinkle the following ingredients over the top of the macaroni: onion powder, garlic powder, ground mustard, salt, pepper and parsley flakes.
  • Add 1 cup miracle whip (or miracle whip light).
  • Stir until evenly mixed.
  • Add extra of the spices to your liking. I find a thin layer of each over the top was fine.

1 teaspoon cider vinegar

1 hard-boiled large egg, chopped

This is one of my aunt's recipes and one of my favorite dishes. I love the way this dish is easy to make and is a different twist to pasta.

1 lb elbow macaroni (I prefer Ronzoni by any brand is as good as the next one)
8 -10 eggs (2 whole, rest only whites)
2 small onions (finely chopped)
3 green chilies
1/2 teaspoon ginger-garlic paste
4 -6 quarts water
2 1/2 teaspoons salt
9 teaspoons olive oil
1/2 teaspoon margarine or 1/2 teaspoon butter
1 teaspoon mustard
1 teaspoon Urad Dal
1 teaspoon channa dal
1/2 teaspoon turmeric powder

Steps:

  • In a large pot, bring water to a rolling boil. Add 1.5 tsp of salt and 2 tsp of oil.
  • Add elbows and stir. Without reducing flame or covering cook for about 8-9 minutes. COOK FOR NO MORE THAN 9 MINS!
  • Drain the pasta and add butter/margarine and set aside.
  • In another pan, heat remaining oil. When hot, add mustard and let it burst. Then add urad dal and channa dal.
  • When urad dal and channa dal are browned, add onions and sautee till translucent. Add green chillies, turmeric powder, ginger-garlic paste and rest of salt.
  • Add eggs and keep stirring to make eggs scrambled.
  • Now, add the eggs to the pasta and mix well. Serve hot!
  • Tips: The pasta doesn't necessarily have to be elbows- other kinds of pasta can be used. Preferably not angel hair or noodles. If you want to use more egg yolks you can- if you do, you can reduce the amount of Turmeric powder.
