Fast and E-Z. My mother gave the recipe to me a long time ago. you may subtitute any fresh canned fruit, including mixed fruit! Great for the Hollidays or anytime.

Steps:
- In a 9 x 13 pan, melt butter.
- add 1 can peaches, juice and all.
- in a med bowl mix remaining ingredients,
- pour contents evenly over peaches.
- bake @ 350 for 30 to 40 minutes or until brown on top.
- Serve hot or cold, Hmmm Fantastic!

This is so simple to make, but so delicious. I almost feel guilty when people ask me for the recipe, because it is so easy to make.

- Preheat the oven to 350 degrees. Melt the 1 1/2 sticks of margarine in a 9 x 13 pan.
- Meanwhile, combine the flour, (1 1/2 cups) sugar, baking powder and salt. Add the milk to the dry ingredients and stir until not lumpy. Pour the batter over the melted margarine. Drain the can of peaches (save the juice) and then place the peaches randomly over the batter. Then pour the peach juice over all. Then sprinkle the 1 cup sugar evenly on top. Bake , uncovered, at 350 degrees for one hour, or until bubbly and beginning to brown.

- Drain peaches, reserving 1/2 cup syrup for the sauce. In a large bowl, combine peaches, brown sugar, tapioca, cinnamon if desired, lemon juice and vanilla. Transfer to an ungreased 11x7-in. baking dish. Let stand for 15 minutes., In a large bowl, combine the flour, sugar, baking powder and salt; cut in butter until mixture resembles coarse crumbs. Stir in eggs. Drop by spoonfuls onto peach mixture; spread evenly. Bake at 350° until filling is bubbly and a toothpick inserted in topping comes out clean, 50-55 minutes. Cool for 10 minutes., For butterscotch sauce, in a small saucepan, combine the brown sugar, flour, salt, butter and reserved peach syrup. Bring to a boil over medium heat; cook and stir until thickened, 1 minute. Remove from the heat; add lemon juice. If desired, serve cobbler with ice cream.

In our classic southern-style peach cobbler, we layer the fruit on top of the batter before baking. - For the filling: Put the peaches, sugar, cinnamon, salt and lemon juice in a medium saucepan. Place over medium heat and cook, stirring occasionally, until the sugar is dissolved and the peach juices begin to boil. Lower to a simmer and continue to cook for 5 minutes. Remove from the heat.
- For the batter: Put the butter in a 2-quart baking dish and place it in the oven while it preheats. Preheat the oven to 350 degrees F.
- Whisk together the flour, sugar, baking powder and salt in a medium bowl. Stir the vanilla into the milk in a liquid measuring cup. Slowly pour the wet ingredients into the dry ingredients while whisking until well combined.
- Remove the baking dish from the oven and pour the batter in an even layer over the melted butter. Spoon the peaches along with their juices evenly over the top of the batter. Bake until the cobbler is golden brown on top and the peach juices are bubbling, 35 to 45 minutes.
- Let cool to room temperature before serving.
