Steps:
- Preheat oven to 350 degrees F.
- Lightly grease a 9x13-inch baking dish with non-stick cooking spray.
- Combine rice, soups, and water in baking dish and mix together until combined.
- Place chicken on top of rice and season with salt and pepper.
- Cover the dish with aluminum foil and seal tightly.
- Bake for 1 hour and 30 minutes, or until rice has absorbed all liquid.
- No peeking! Keep the dish covered while baking. I know it's tempting but I promise it's worth it.

Steps:
- Preheat oven to 350 degrees.
- Empty contents of Uncle Ben's Original Long-Grain Wild Rice into an 8 x 8" glass baking dish.
- Mix mushroom soup, 1/2 cup water, mushrooms (undrained), onion and Italian seasoning with rice.
- Place chicken breasts on top of rice mixture and sprinkle with more Italian Seasoning.
- Bake in preheated oven until chicken is cooked through and rice is tender.
- Allow chicken to cool. Remove skin and discard. Tear chicken into bite-sized pieces and mix into rice mixture.
- Enjoy!

- Combine water and wild rice in a saucepan, and bring to a boil. Reduce heat, cover, and simmer for 50 minutes, or until tender.
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, toss together the cooked rice, chicken, cream of celery soup, pimentos, onion, green beans, mayonnaise, water chestnuts, salt, and pepper. Transfer to a 3 quart casserole dish.
- Bake in the preheated oven for 25 to 30 minutes, or until heated through.

CHICKEN AND WILD RICE CASSEROLE
I got this recipe from a work luncheon. I used Kraft mayo because I like the taste of Kraft over Hellman's. Use the one you like because you can taste the mayo a little bit. This makes great leftovers to take for lunch the next day...one of the few leftover dishes my husband will eat! Often I will cook this on a Sunday evening so when I come home from work on Monday dinner is ready.

CHICKEN SPECTACULAR
When I had a baby 12 years ago a lady at my church brought me this dish. It was so good I asked for the recipe. I've seen the recipe in The Cotton Country Collection and several other cookbook but have not seen it on Recipezaar. I like to cook the rice in the water saved from cooking the chicken. I think it adds to the flavor of the dish.

- Preheat oven to 350 degrees F.
- Cook rice according to package directions, adding the chopped onion in to the pot during the last few minutes of cooking time.
- In a buttered 13 x 9 inch baking dish, stir together the rice & onion mixture, the chicken, mushrooms, chestnuts, soup, beans, pimiento, pepper, parsley, lemon juice, mayonnaise, and sliced almonds.
- Spoon the topping mixture evenly over the casserole.
- Bake uncovered at 350 degrees for 35 to 45 minutes, until hot and bubbly.
- Note: Also good using 1 1/2 cups shredded sharp cheddar cheese as a topping (in place of the stuffing mixture), add the cheese during the last 15 minutes of baking.

E Z COMPANY CHICKEN CASSEROLE WITH UNCLE BEN'S
When I had my last child in '94, a friend made a chicken casserole using Uncle Ben's Long Grain Wild Rice with Herb Seasonings. Although I didnt get her recipe, I created one similar and so we enjoy thise easy recipe at least once a month.

- 1. In a 11 X 8 casserole dish, spray with Pam. Sprinkle the Wild Rice evenly in the dish. Mix together the can of cream of chicken soup, water, and herb seasonings packet in medium size bowl. Spoon 3/4ths of soup mixture evenly over wild rice. Place the 4 chicken breasts in the casserole on top of the rice and soup mixture. Spoon the rest of the soup mixture on top of the chicken breasts.. Next, sprinkle pepper, powdered onion, powdered garlic, and paprika on each chicken breast. Cover with aluminum foil and bake on 350 for 1 hour to 1 hr and 10 minutes. Remove cover and let set 5 minutes before serving.
